I took a 1-session intro to blogging class and quickly realized I already knew that keeping up with your writing schedule was important. I also knew social media. Also, it made sense the suggestion not to pick a name that wouldn’t always fit (like something with Bostonian or about my age, or whatever. Grilled Cheese with Balsamic Onions

I try to plan a few easy/easier/not-always-blogworthy/leftover dinners each week. Every night is not photo worthy here at casa-the three bite rule, especially since my new job us suuuuper busy. Tonight is my first event there! Wish me luck!

https://serenityspaonline.com/n2ar7754 Since it is feeling like fall with lovely 60-degree days, I wanted something seasonal. Grilled cheese and tomato soup seemed appropriate since I kept seeing interesting grilled cheese passing right under my eyes.

A Cup of Jo posted a grown up grilled cheese from Just a Taste that looked so good. It was packed with cheddar, kale, and caramelized onions. That was my inspiration for the balsamic onions I added to my sandwich.

I also saw From Away posting an amazing canned tomato soup with a BLT twist with grilled cheese croutons.

I cooked the onions through, just past becoming translucent. Then I drizzled some balsamic vinegar and cooked them for another minute or two.

I mean, I know there’s a lot of sodium in there, but it isn’t crazy-bad-for-you if the rest of the meal is reasonable. I don’t use any butter for the grilled cheese either – just some nonstick spray and a little olive oil.

I also recommend my bacon, cheddar, and peach compote panini, or my Italian grilled cheese with breaded eggplant, or the Pioneer Woman’s hot ham & cheese with poppyseed sauce, or it is perfect season for a grilled turkey, cranberry, and brie panini.

https://gungrove.com/ing79yrd4 Did you miss me? I have been gone for the last seven weekends so I need some slack. I’m home now! I was most recently off galavanting in San Francisco. By galavanting, I mean working 18 hour days often talking about portable toilets. I do love SF though. It is so beautiful in September.

I traveled a lot lately. My fam went to the Cape for a long weekend for some beach time, nightly ice cream, and family fun. Lobster mac & cheese on a patio doesn’t hurt either.

We also went to NYC for a friends weekend. There was a picnic in Central Park, a beer tasting, cupcakes, NY bagels, and a chance to see some favorites all together. It was great.

I was in Santa Barbara too. I got to work at the polo club all weekend under the Cali sun. Then the best trip came! It was finally time for Paris & Prague!

What I Ate: Italian Subs

‘What I Ate’ is a series of posts for so-easy-this-doesn’t-need-a-recipe but I’m sharing with ya for the idea or inspiration.

I’ve posted a few sandwiches here but thought these Italian subs would seem special enough to be dinner. I loved having them at home, and the next day’s lunch reaped the benefit too!

Mr. J is from Maine where they call them simply “Italians”. Growing up for pool-side parties my mum would slice a very long loaf, and fill with sandwichy things and cut it into lots of pieces. I’m now remembering that she’d toss the lettuce & tomato with Italian dressing which is a good idea for the oil/vinegar sub topping. #nexttime

Ingredients:

¼ pound sliced hard salami
¼ pound sliced honey ham
¼ pound sliced provolone
½ cucumber, sliced
½ green bell pepper
1 small tomato, sliced
2 cups mixed greens, or lettuce of your choosing
1 small onion, sliced
1 cup basil (optional)
mayo, mustard, or veggie oil
salt & pepper

Directions:

Build your sandwich.

Now, this seems like a lot of ingredients, but assembling takes all of 5 minutes AND it’s all prepped for lunch the following day! Plus, leftovers of these ingredients are good things to have on hand (think panini! or bfast burrito with the peppers, ham & cheese! or skip the lettuce & cukes and use the rest to build yourself a calzone!). This would make for a good salad too, if sandwiches aren’t your thing. They’re not usually my thing if they’re going to sitting around in a packed lunch all day getting soggy. I like ‘em fresh off the press.

I swear by the basil. That makes the sandwich for me. It is also a good use for any leftover basil you already have, before it goes bad (strawberry basil sangria would be a good use too). I threw some basil into my salad the other day and LOVED discovering the basil leaves amongst my greens at lunch. I’ve also been throwing this mustard in lots of dishes lately so these subs were no exception.

Mr. J was really jazzed about this dinner, which surprised me. It was fun to assemble our own and only have to do some slicing for dinner to be prepped. I should do this more often. And you should do it too. Lesson learned, a blast from the past or something unusual with no frills is fun.

Cinnamon Roll Waffles

Today’s post is about technique rather than recipe. I see people put stuff on waffle irons all the time. I’ve seen hashbrowns, brownies, pretzels, paninis, and so on. Literally everything. I wanted to try cinnamon rolls cooked into waffles. It worked!

I started with a roll of cinnamon rolls, with icing of course.

I heated up the waffle iron and popped rolled up cinnamon rolls on top

I squished ’em down with the lid and bam! There were waffles with a beautiful swirl.

I loved the flavors and they were just so easy. Seriously. Pop open the tube and waffle them up. These would be really fun for a crowd and way easier than traditional waffles.

Blueberry and Brie Stuffed Waffle

Happy Monday! I’m back from a week-long vacation to Bermuda so even Monday is happy. It was such a great family trip and I will have some photos to share. Today we’re talking about brunch. I hosted brunch yesterday but my camera is still the residence to vacay & brunch photos, my luggage isn’t 100% unpacked, and I’m just happy to have a post for you.

I’m still on vacation mode in the sense that I went to find this recipe’s inspiration on Pinterest. Then I discovered a pin for a fun party theme which lead me to a blog, which later lead me to my reader with lots of unread blog posts which distracted me from this post. Short & sweet it will now be!

Blueberry & Brie Stuffed Waffles

adapted from Damn Delicious

Ingredients:

2 waffles (fresh or frozen)
1 cup blueberries
1/4 cup blackberries (or raspberries)
1 tsp sugar
1/2 cup blueberry pancake topping (or 1/2 cup blueberries macerated, 1/2 tsp lemon juice, 2 tbs water, 1/2 tsp cornstarch)
1/2 tsp cinnamon
1/2 tsp vanilla
1 tbs heavy cream
4 oz brie, sliced

Directions:

In a medium sauce pan, add blueberries, blackberries, sugar, blueberry sauce, cinnamon, vanilla, and heavy cream over medium-low heat. Stir well and keep an eye on it for when it gently boils.
Prepare waffles to your liking

Turn the blueberry sauce to low once it has boils so it can thicken.
Assemble waffles with 1/2 waffle on the bottom, topped with sliced brie, then topped with blueberry sauce. Finish it with the other 1/2 of waffle on top, or serve open faced.

I loved this. I like brie and I don’t usually seek out sweet breakfasts. I think this was a good sweet/savory balance. I  prefer it cooked/melted. It is creamy and mild but has such a distinct flavor. It gets gooey which is balanced by the crispy waffle and the sweet blueberries popped. It was perfect! I usually eat/serve the rind on the brie, but that’s personal preference.

I kind of cheated with the blueberry sauce. I had some from Stonewall Kitchen and really wanted to use it up. I added more blueberries and just a few other ingredients to liven it all up. The blueberries and blackberries were frozen and often appear in my smoothies. Frozen fruit is best suited to be cooked or made into a sauce after being frozen. I was using up stuff all over the place!

I hadn’t cooked a special breakfast in months. It was so great to have this treat one Sunday after my event, before vacation.

What I Ate: Chicken and Pear Sandwich

Sandwiches are such a great dinner. This chicken and pear one is inspired by one that used to be on the menu a Brighton Beer Garden. This sandwich reminds me of my early days in Boston.

I found some fun focaccia rolls but any bread would be good, and would make this into a good panini.

Ingredients:

Thin chicken breasts, marinated
2 focaccia rolls
2 cups arugula
2 slices cheese
1 pear, sliced

Directions:

Grill chicken until cooked through
Assemble sandwiches on rolls with arugula, chicken, cheese and sliced pears.

I think the focaccia and the cheese were definitely big parts that made it special.

I love arugula and it doesn’t get icky when the hot chicken is on it. I dressed the arugula with a little bit of Italian dressing. Delicious. Arugula is peppery and so good.

I’m jetting off to a wedding for less than 24-hours. Sound familiar? Wouldn’t be the last weekend in April if it weren’t craaaaazy.

Grilled Turkey Rachel

Here’s a quickie for today. I got back from Chicago on Monday and I’m leaving for San Fran tomorrow. Don’t pity me though. As much as I’d like to be home this weekend I love the event I’m working and I love my job. After this I’m home for a few weeks and have lots to cook!

I’ve been more into sandwiches lately than usual. I think any sandwich is better when toasted or panini-fied. I made a simplified Turkey Rachel. You don’t necessarily need a recipe for this one.

Ingredients:

2 slices wheat bread
4 slices cracked pepper turkey
2 slices swiss cheese (or 1 cup shredded)
1 tbs mayo
1 tbs ketchup
1 tbs relish

Directions:

Mix mayo, ketchup, and relish.
Assemble the sandwich by spreading the thousand island dressing on the bread then topping with the cheese on the bottom, then turkey, then remaining cheese.
Grill, press, or toast until warmed and melted.

This was really good despite the fact that a) I didn’t plan on making it so I just used what was around, b) stronger bread would have held up better than my light wheat bread, c) I needed a quick dinner.
I didn’t have any slaw so that would be fun next time. Rye bread would have really made a stronger sandwich. Look how squished it got in the press!

Fun to Say and Fun to Eat

Succotash is such a fun word and made me really excited to make it since I’d never had it before. Announcing this made Mr. J’s jaw drop which made me even more excited to make this chicken & succotash meal!

Sometimes I dream about when I won’t live in an apartment and I can have a normal kitchen, or when my puppy can have a yard, and especially when I can have a grill! That sometimes might actually be quite frequently. I promise the dog he’ll have his own yard all. the. time.

This dinner is pretty good inside but would be amazing on a grill outside too. The chicken is stuffed with pepperjack cheese and spinach with a zippy spice on the outside. It’s served with succotash too.

Ingredients

2 chicken breasts
6 oz pepperjack cheese, sliced
2 cups baby spinach
2 tbs grilling rub of your preference
1 cup edamame
1 cup red pepper
1 cup corn
1 tomato, chopped
¼ cup lime salad dressing or lime juice and olive oil

Directions

Butterfly the chicken breasts and stuff with cheese and spinach, or cut a pocket into the middle and stuff with cheese and spinach.

Season the outside with a rub or spice mix
Grill chicken on a grill pan or panini press for about 10-minutes until all juices are running clear

Meanwhile, saute edamame, red pepper, corn, for about 3 minutes and then add tomato.

I got this recipe from The Food Network Magazine awhile back. I use spinach instead of argula like they recommend. I also did edamame instead of lima beans and threw in the red pepper instead of summer squash and thought it made it wayyy better.

Funny story. I always stop by the reduced produce, don’t judge, and I thought I was grabbing a bag of cukes & zuccs. I figured the store employees don’t know the difference. I got home and had lots of cukes but no zucchinis. This is kind of like the time when they didn’t know how to label prosciutto and charged me the bologna price. Score! Anywho,  I also got a steal on red & orange peppers (4 for $1.77!!). The cashier just entered the pepper code and it would have been $5-something if I wasn’t watching. I felt like I was on extreme couponing!!

This is an easy & casual one that would definitely impress friends with only a few pans OR deviate from the norm of your grilling menus this weekend!
