January 2023 Recap

0

https://therepairstore.ca/5x28m8pt I enjoy January for the freshness and re-set since I don’t get a post-holiday letdown I know others feel. Once the holidays pass I love to usher in the snowy decor and prep for our guy’s birthday!

This is the ultimate breakfast sandwich is on Texas toast with maple bacon aioli and gooey cheese.

Treats don’t have to end come January so we had some Snickerdoodle Muddy Buddies.

The Three Bite Rule - Forager Flatbread

We had fun going to the pool and ice skating and we definitely are awaiting real snow. We are outside less and wishing for more daylight. I’m very over the colds we seem to pass along. I love the snacks of the superbowl ahead and maybe we’ll create some pink Valentine’s day dessert.

His birthday was so fun. We had a family dinner party and he had some friends meet him at the trampoline park. I love seeing his friendships blossom. Of course we had pasta and caesar salad. He is very into How to Train your Dragon and transformers. He’s taking an Animals around the World class after school and he’ll play baseball in the spring. He’s interested in the football playoffs and superbowl.

https://mmopage.com/news/8nhnaespmy4 Somehow work got pretty nutty in May so it feels like a bit of a blur. I had a good month in the kitchen for blogged foods. Weeknight foods I’ve been really minimal to allow us to get outside after work, before dinner.

One of my favs was this really amazing breakfast sandwich with roasted tomatoes. I loved this as a stretch beyond the norm.
The Three Bite Rule - Breakfast Brioche Sandwich

I made some broccoli & cheddar puff pastry pinwheels that couldn’t have been easier.

June is the end of the fiscal year at work so it’ll be 100 mph. June is also Mr. J’s birthday which means: birthday burger!! Here was last year’s birthday burger and the rundown of previous ones. I’ve flagged 2 that I’ll decide between. Also flag day is coming up. Such a strange holiday but our town LOVES flag day. The parade is huge and goes right down the end of our street.

The Baby Girl:

She’s 9 months old! She tried shrimp and loved it – pancakes, green beans, and blueberries are also favs. She is suddenly not as into bottles so hopefully that doesn’t continue to be a thing. I love seeing her eat all the things. She’s close to 17 pounds and ohh-so-happy. Baby girl is surfing around and will take about a step without holding on. Splashing in the tub is her fav so we think she’ll love the pool.

The Little Boy:

Buy Soma Online Usa He looooves soccer. We missed the town soccer timing so he’s at a community one and it has been great. I only hoped he’d participate and he definitely does! It is mostly skills and that’s good for them since they each have a ball. I love how much he can talk about. He’s sweetly reflective and has an impressive memory. We have been reading a ton and finding some really fun library ones. He’s had a really fantastic time at daycare and doing so well behaved. I’m proud of him.

What I’m watching: We didn’t watch many movies and will be very sad when we finish Schitt’s Creek.

Everything Bagel Seasoning

0

https://www.prehistoricsoul.com/5asoof53 I looooove everything bagels and am so glad Everything Bagel Seasoning is having a moment. I make it myself so I can have some for a few servings, or make a bunch to have around. It is so easy and customizable – go heavier on the flavors you like best! I use it on eggs, rice, toast, and anything breakfast! Just the other day I made a breakfast sandwich on an croissant with eggs, cheese, tomato, and sprinkled some everything bagel seasoning. SO good.

Everything Bagel Seasoning

Ingredients (for ~2 tablespoons of seasoning):

1 teaspoon poppy seeds
1 teaspoon sesame seeds
1 teaspoon dried minced onion
1 teaspoon dried fennel seeds (optional)
1/2 teaspoon cracked black pepper
1/2 teaspoon kosher salt
1/2 teaspoon garlic powder

Directions:

The Three Bite Rule - Everything Bagel Seasoning
Cook for 2-4 minutes, stirring regularly to ensure nothing burns.
Let cool and enjoy!

https://www.justoffbase.co.uk/uncategorized/ctqcjgd4kb I like a mostly even ratio for the poppy/sesame/onion/fennel and half ratio for the salt/pepper/garlic powder. The toasty flavor is 100% necessary. The crunch it adds is also unparalleled.

https://equinlab.com/2024/01/18/fntvh7jxm1g Everything Bagel Seasoning is so breakfast, but is an ideal combo for anything. I’d totally top popcorn with it too! The dried minced onion & sesame seeds are what I keep an eye on in the pan to ensure nothing burns.

This seasoning MADE this breakfast-inspired risotto and it took avocado toast with a poached egg to a whole other level.

Turkey & Pear Grilled Cheese #grilledcheeseplease

https://manabernardes.com/2024/v4wcy4wnp 0

I got a suggestion to do a grilled cheese series after my Toasted Tuesday series in the summer. You don’t have to tell me twice! I’ve planned a month of not-your-average grilled cheeses. #grilledcheeseplease Good bread + multiple cheeses are the keys to a better sandwich.

This one is perfect for a weekend lunch or a sandwich this special can definitely be dinner…just add a side! I’m featuring turkey, sharp cheese, pear, and maple dijon spread. The dijon spread was on repeat from my fall breakfast sandwich. It is like your fav black shirt…it goes with everything.!
The Three Bite Rule -

Turkey & Pear Grilled Cheese

Ingredients:

1/2 teaspoon dijon
1/2 teaspoon mayo
1/2 teaspoon maple syrup
2 slices sourdough bread
2 slices sharp white cheddar
1 slice white American cheese
1/2 pear, sliced
1 cup baby spinach
1 tablespoon butter

Directions:

The Three Bite Rule - Maple Sausage & Apple Breakfast Sandwich
Spread a teaspoon of the maple-dijon onto each slice of bread.
Assemble with half of each cheese, turkey, spinach, pear, and the rest of the cheese.
The Three Bite Rule - Turkey & Pear Grilled Cheese
Top with the other bread and spread a little butter on the very top. Put that side down into the pan and grill for ~3 minutes. Then spread a little butter onto the other side while in the pan, and carefully flip. Cook for another ~3 minutes. Cover for the last minute.
Slice & enjoy!
The Three Bite Rule - Turkey & Pear Grilled Cheese
I loved light dijon flavor with the turkey and pear. The cheddar gives the flavor and the American provides the melty-gooey-ness. Good bread is a key here – that buttery crunch? Ohh yes!

October 2017 Recap

1

Happy Halloween!! Eat all the orange foods and then pass on over all the pb cups you find. Sounds like balance to me! October was a biggie for me. I wrapped up my former job and am settling into the new one. I didn’t take much time between since I had justtt gone on vacay but it was good to have a few weekdays with the little one. November was always the busiest of the year in my previous role, so I honestly have never looked forward to November as much as right now! The fall is glorious and I couldn’t be happier.

First things first, we had a yard sale. It’s a great feeling to let go of things. Also, I’m psyched to take the little one trick-or-treating! We bought a tool-belt toy since every stick we find outside is a pretend tool. I’m hoping November can include a day-date hike with Mr. J now that Zion has us prepared for all terrain. I also have a fun fall theme that was suggested to me to blog annnnd I have lots of fall food inspiration to come – definitely including flavors like cider, butternut squash, pork, sage, & pears.

This fall inspired breakfast sandwich is definitely me living my best life. A local everything bagel, maple sausage, egg & sharp cheddar, apple, and maple dijon spread. It cannot be topped.
The Three Bite Rule - Maple Sausage & Apple Breakfast Sandwich
This Butternut Squash Mac & Cheese had us feeling is this, or isn’t this healthy? Take your own stance, but the squash gives that pop of orange with minimal cheese. I had some leftover sauce and froze it…it sounds ideal before trick or treating!
The Three Bite Rule - Butternut Mac & Cheese
There is also plenty of time for more Salted Caramel Apple Smoothies.

The Little One:

I can’t get over what he can remember! He’ll make connections to a book we haven’t read 1-million times, or something we saw 1 time and it takes me a second to get there. He just told Mr. J about a his best friend at daycare. I didn’t know he knew that concept -it was really sweet! When he sees 2 of something he counts it as one for him and one for his cousin Nate. Food wise, this month he’s been wanting bagels, though his love for waffles hasn’t gone anywhere. He hasn’t gravitated to meat as much lately but I was thrilled to see him eat chili. Sometimes he hasn’t been into foods cooked all together, even when he likes the components – think: chili, pot pie, baked pasta. All fruits and all veggies are still a-go. He liked getting edamame out of the pods too. In October he ate at a few more restaurants than usual and other diners commenting on the volume he can put-away!

2017 Goals:

Year of the seasonal decor: I am stocked for Halloween and fall so I used October to prep for Thanksgiving to grab this cure Thankful sign. Thus, no photo yet.
do more dinner prep more in advance: Yup! The crockpot got some action with chili!
read more (and always carry my book on me): I am mid-way through 2 books. Stay tuned for a big November recap! I’m super excited for a pajama storytime I’m taking the little one to!
watch more movies: we watched The House which was funny – Amy Poehler is so amazing.
cook more fish: ummm, nope
focus on clothes that I really like: I have purchased so many work pieces, though I’ve been good about returning anything I’m not 100% into…which included 2 blazers & a sweater. I should be good for work clothes until after I’ve done holiday shopping!

Food Traditions

I saw that Dinner: A Love Story came out with a new book about How to Celebrate Everything which is such a fun concept. It got me thinking about food traditions and I was feeling like by not really hosting the big family holidays at my house that I don’t have that many food traditions and then it hit me: https://gungrove.com/8wkv0wgdr Friday-Takeout-DVR is totally a food tradition for my little family!

For years now…at least 5 years, possibly longer, on Friday nights Mr. J and I order take-out and catch up on some DVR. It started back when there was a chance of us going out but instead we chose to stay in, ordered delivery to our 3rd flood apartment, and watched some DVR from the week. Fast-forward to now where we plan, and more specifically, look forward to this tradition. The little one will think we’re dinosaurs when we describe that back in the day we sometimes would go pick up burritos, then pick out a movie at a movie place called Blockbuster. Ancient concept I tell ya. We schedule meals Monday – Thursday and Friday is our standing tradition.

::in my head I’m singing Tra-dition! Tradition!! a la Fiddler on the roof::

I think the combo of time for just the two of us together + the treat + the convenience of somebody arriving at our home with a sack of some deliciousness all wrapped up + DVR = now time-honored and just so special to us. The little guy goes to bed anywhere from 7:30-8 and falls asleep quickly so by then we’ve sat with him for his dinner, maybe played outside a little bit, got him into jammies and ordered food all timed so it’ll arrive once he’s in bed. I looooove family dinners when we either all eat together but this one night a week, adult dinners are set on the coffee table with the remote between. It is so fun for us home-bodies.

My fav parts:
1) the take-out selection:
A complex algorithm Sometimes this involves figuring who ate what for lunch so we don’t order the same category for dinner. Sometimes we narrow down by a few ideas texted with emojis. Sometimes we look towards the weekend to determine if we want leftovers for Saturday lunch. There’s only one place I can get a good Buffalo Chicken Wrap, so, there’s that.

2) the anticipation of food’s arrival
We peek out the windows, rationalize that it has to come soon, and judge the slow cars as possibilities. One person signs for it and this also includes somebody playing defense to keep the doggies away from door so they/Bailee doesn’t bark her head-off waking the little one.

3) Barely-any clean up. Enough said.

4) Amazing Race/Cutthroat Kitchen/Treehouse Masters/etc on DVR. Mutually agree-ed upon shows…no Bachelorette or River Monsters. It is a mindless few hours before seeing if I can stay awake for Dateline…also known as, the only show we ever watch-live.

I love the evolution of this. It started when we were young, was much appreciated while I was pregnant, and is equally cherished after putting the little guy to bed. What’s not to love?

https://equinlab.com/2024/01/18/vr4kqkbph I have a few food traditions in mind:
Father’s Day: the little one to picks out a fancy dessert for Father’s Day + a card/homemade card, in lieu of gifts
Mother’s Day: is it approved that I should ask for a breakfast sandwich + card/homemade card, in lieu of gifts?
First Day of School: sugary cereal that isn’t normally an option
Birthdays: Individually selected personal-treat-stash isn’t normally an option
Summer surprise night of going out for ice cream sundaes for dinner when it is just. too. hot.

Hmm. I might need a doughnut birthday cake for the weekend-day closest to my birthday. You know, I live for birthdays.

Bacon Cheddar Biscuits

This is all I need in life for breakfast. Well, maybe this biscuit with a runny-yolked egg as well. The bacon, cheddar cheese, and chives are so great in a fluffy buttery biscuit instead of just being on a biscuit as a bfast sandwich.
The Three Bite Rule - Bacon Cheddar Biscuits
Yum. These would be so great with an egg. Or as a breakfast sandwich, or on the go. Seriously so good any way you eat them. I was so impressed how fluffy and puffy the biscuits got. I froze some others before they got stale so I’ll have to report back how they are out of the freezer.

Ingredients:

biscuit mix, prepared according to the package
2 strips of bacon
1 cup of shredded cheddar
2 tbs chives, chopped (or green onions)

Directions:

Fry the bacon until crisp and let excess fat drain. Then chop it into small pieces.
Mix up the biscuits according to your package, adding in the cheese, bacon, and chives.
The Three Bite Rule - Bacon Cheddar Biscuits
Flour the counter with biscuit mix, and need them a few times. Flatten the dough out to 1/2 inch thick and cut out the biscuits with a biscuit cutter, a jar lid, a juice glass, etc.
The Three Bite Rule - Bacon Cheddar Biscuits
Bake according to your mix.
Right at the end, brush with some melted butter.
Serve & enjoy!

The Three Bite Rule - Bacon Cheddar Biscuits
You can thank me later. I couldn’t get over how fluffy these are! They were so quick to mix and bake. I had everything cleaned up before they were out of the oven and then I fell in love….probably smart that I did the dishes first because once I ate these I was really loving them. So good!

August 2014 Recap

August was a month full of fun dining experiences and outings an less about actual cooking. I find readership being very lopsided in the dead of summer. I think September will bring a good variety…I already have seafood, a twist on pizza, more grilled foods, and I even have a giveaway planned!

I had the best breakfast sandwich…of. my. life. On our trip to NH. They crossed a bagel with a croissant. It doesn’t get much better than that.

In other adventures, I tried Barcelona Wine Bar and loved everything we ordered. I met up with other bloggers for a fun afternoon of walking, salads, and cupcakes. I wasn’t into the salad I got but loved the cupcakes.

The best thing I cooked all month were these Steakhouse Flatbread Pizzas. Mine had buttery mushrooms and Mr. J’s had grilled steak. They were really good and so quick to prep by using naan bread. I loved these and would eat it again in a second.
Steakhouse Flatbread Pizza - The Three Bite Rule
I did a roasted beet, sweet potato, and potato side dish that was really good, but more time consuming than I usually spend on sides.
Roasted Beets & Potatoes - The Three Bite Rule
I decided a Greek Pita Pizza deserved a re-do and it was a good excuse to unload some zucchini onto.
The Three Bite Rule - Greek Pita Pizza
Bump Update:
In the last month the baby has grown to the size of a turnip, a sweet potato, a mango, and a banana. My hunger has evened out a bit. I was introduced to donut peaches from the CSA delivered to work and they’re so amazing. Whenever I’ve gotten a whiff of my nectarines or somebody’s peaches at work I’m all about it. It is getting a bit harder to get up after being on all fours talking to the pups and harder to go from laying to sitting. I’m feeling it a bit more and I’ve officially popped. Getting dressed requires a bit more creativity with the few maternity items and whatever I find that I fit into.

Enjoy labor day & a long weekend and see ya in September!

What I Ate: NH Getaway

What I Ate’ is a series of posts for so-easy-this-doesn’t-need-a-recipe but I’m sharing with you for the idea or inspiration.

Mr. J’s bday present was a little getaway to New Hampshire. I’m so thankful not to travel for work anymore and I’m loving being home all summer. It is amazing. Being home has actually involved a few trips to Maine, a few days to Cape Cod, and possibly one more jaunt. I wasn’t sure NH was going to fit in. I bought it for Mr. J’s bday in June then didn’t schedule it for-ev-er. We explored nature and ate lots of good stuff.

We stayed in Jackson, NH which is a little town near North Conway, but without the insane traffic. The inn was cute and had a phenomenal porch.
Inn at Thorn Hill
On our way up to New Hampsire we figured we stop somewhere for lunch and it just so happened we’d pass one of the many locations of Portland Pie Company. My favorite pizza! Though, their service is pretty terrible, all the time the pizza was really good. We got one of their seasonal pies: chicken caesar salad pizza!
nh_pizza
After checking in and poking around the inn, we explored the town and the area.
nh_river
We got dinner at the Red Fox Pub. We were really tired by then and were very hungry. I got lobster mac & cheese. There was an impressive amount of lobster and I couldn’t come close to finishing it! Mr. J had wood grilled meatloaf so he was as happy as can be. That was only Friday!
nh_lobstermac
Saturday we enjoyed breakfast on the porch of the inn and then checked out a tented art show, then we did a mini hike to some falls. It was breathtaking…also getting back up to the parking left me winded, so literally breathtaking. Mr. J adventured to some insane spots all in the name of photography. Luckily he didn’t end up in the drink!
nh_falls
We also popped into the LL Bean Outlet there where we found upright adirondack chairs. On sale. With an extra 30% off. Also using several LL Bean credits from our credit card. Scoooooore! We got two for less than the price of 1 normally. It was so meant to be! We didn’t have the pups so we got our new chairs into the car all assembled and never looked back. Just wait till I show you our beautiful yard projects with these snazzy new chairs by the firepit.

Dinner was part of our package to each have 3 courses at the inn. I started with clam chowder since it was 60-something degrees that day! For my entree, I chose duck over mushroom risotto with a chambord glaze. The duck and sauce were so good. The glaze was pretty sweet to it paired nicely with the salty risotto.
nh_duck
I didn’t exactly have room for dessert, but when on vacay! I had a chocolate hazelnut tart that was just amazing.
nh_dessert
Sunday morning we decided to venture out for bagels. We had passed a little bagel joint the day before with a sign boasting home of the boissant croissant/bagel hybrid. Hands down, best breakfast sandwich I’ve ever had. I wish I brought boissants home. I was thinking it would be more like a bagel or more like a croissant, but I love both so I figured I’d bet set. It was such a wonderful mix of the two.
nh_broissant
It was a nice little getaway. We wished it was warm enough to swim since the pool at the inn was cute but I’m still thankful for cool days. They were nice for walking around a lot. I hadn’t known if there’d be a lot for us to see/do but we had a great time wandering and not being at full pace.

Easter Brunch Ideas

Spring is in the air and Easter is on the calendar. Here’s a quickie round-up of make-and-take brunch ideas or ideas if you are hosting your own Easter festivities.

The first rule of brunch, is not to make everything more complicated than it needs to be. Each thing you serve cannot be the most special thing ever. It is hard to make eggs, and waffles, and hashbrowns, and toast…unless you are in a diner. If you’re making something eggy, or pancake-y then do something easy with it like fruit you’ve prepped in advance, or muffins that are already made, or bagels with spreads that are ready to serve.

Quiche is a great brunch item that you’ll make in advance. Voila! Brunch is served! I made quiche lorraine recently and loved it. bacon + swiss cheese = delicious. Ms. L makes a killer tomato, basil, goat cheese quiche.
The Three Bite Rule - Quiche Lorraine
Going somewhere? Make your own granola and serve it with yogurt. I loved this maple peanut butter granola over coffee Greek yogurt, or vanilla, or coconut. It is very pack-able.

this is the easiest way to serve a crowd and everyone will get what they want. It makes it fun and easily customizable for all ages.

https://manabernardes.com/2024/ojvere45j18 build your own BLT bar:
bacon vs. canadian bacon? 2 lettuces, tomatoes, different breads, different spreads, avaocados, sprouts? you name it. It’s the perfect between breakfast & lunch. Maybe there are fried eggs to lean towards breakfast? Maybe there are cheeses? you. name. it.

https://www.prehistoricsoul.com/o5pawwanr Salad bar:
this takes the every-day side to a whole new level. Warm up a honey-baked ham, grab some good rolls, and spread out a salad bar and you’re done! Edemame, chickpeas, hardboiled eggs, cheese, and lots of veggies make it fresh and a meal in its own. Plan a salad bar as part of your meal or for those get the evening munchies hours after brunch.
The 3 Bite Rule - Salad Bar
https://modaypadel.com/zz47wwu3ln8 Build your own grilled cheese:
give some bread options, a few cheeses, and then a few other add-ins will please all palates. I love a good grilled cheese. American cheese and cheddar have me easily won over on a grilled cheese. Prep some bacon, tomato slices, mustards, caramelized onions, ham, or whatever you love. You need a grill pan ready or a panini press.

https://fireheartmusic.com/zpq6ekq0dho Build your own breakfast sandwich would be like my dream come true:
bagels, croissants, biscuits with cheese options, and a panful of eggs sounds like my idea of a good time. My fav bagel place does breakfast sandwiches with slices of egg and cheese omelets. That’s an easy way to make a bunch for a crowd. Offer bacon, sausage, ham, arugula, and tomato slices. Add some tortillas, black beans, and salsa for breakfast burritos.

Whip up a blender-ful of creamsicle smoothies. This is my favorite smoothie and I think everyone would love it. Add some champagne for a twist on a mimosa, or a splash of vanilla vodka for a spiked brunch bevvie
The Three Bite Rule - Creamsicle Smoothie
Lastly, the hands-down easiest festive breakfast is a cereal bar. Some milks and everyone brings a cereal and you have an instant cereal party. It is a fun pot-luck with no-cooking required.
