September 2018 Recap

0

https://mmopage.com/news/yla620l7jg September went by in a blur. The babe is 6 weeks old and we’re getting our footing a bit. A bit. I cooked a few things but my priority was hitting all the food groups for everyone and not worrying if meals weren’t my most exciting or inventive. I’m giving myself some grace and always striving for some advanced dinner prep while I’m home for maternity leave, especially since dinner time got wayyy crazier with a baby who hates 4pm-9pm and a toddler who is ready to play.

Some of my go-tos lately have been: sesame noodles & edamame; grain bowls (farro/sausage/zucchini); meatball sliders; eggs/breakfast; and salad bar. I’m 100% still obsessed with a pb&j smoothie I made non-stop while pregnant. I owe you the healthier reboot I took on this smoothie but it is saved on my insta-stories highlights for now. I have a new smoothie to share next month as well as the cutest seasonal appetizer ever.

I made this protein-packed salad as a twist on the Italian tuna and white bean salad.

Anyone Order Xanax Online Because they’re so easy and ohh-so-good, I made these chicken, bacon, cheddar, and ranch turnovers with crescent rolls. After these, the little guy and I made pizza ones with sauce, mozzarella, and pepperoni but we didn’t blog it.

Lastly, dessert is necessary in life and this cheesecake mousse parfait is perfectly packable to bring somewhere or was great mixed to order as you need a little sweet treat.

The Little Guy

https://modaypadel.com/7r1p6ta I’m thanking our lucky stars that we’ve squeaked out this long (3.5 years and counting) of him in a crib. With the new baby I’m ever so thankful he’s happy in his bed/crib for now. I have a feeling the toddler bed in is in our future but I’m hoping he can hang on until baby sister sleeps through the night. One thing at a time, right? He is such a good big brother. He loves the baby and doesn’t mind that sometimes we divide and conquer. He has confirmed the only deli meat he’s into is salami. All grains are good- this month he really loved farro which I haven’t made in awhile. We’re all still popping cherry tomatoes from our plants as often as we can. He has especially loved pineapple and raw bell peppers this month.

The Baby Girl

https://therepairstore.ca/m01kipu 1month
She’s about 6 weeks old now. Just like her big brother did, she struggles in the early evening. Around 4ish she can’t sleep and by 6 she wants nothing to do with anything. Nothing helps soothe her until 8 or 9pm when she’ll eat and then sleep. Apparently this is a thing- like sundowning. Our pediatrician says most work themselves out of it at 6 weeks-12 weeks. Here’s hoping it is any day now! It is emotionally draining, very tiring, and so sad. We’re also trying to give the little guy attention and love (as well as dinner & a bath) after his day at preschool so her screaming makes this timeframe even more exciting. Daytime she’s so happy and starting to smile! She eats every 3 hours and I cannot wait until I don’t have to wake her to eat. Ditto for evenings, we’re waking her every 4-5 hours to eat. Since she wasn’t gaining weight we’re not really at liberty to dismiss her doctor’s advice for eating.

Tuna and White Bean Protein-Packed Salad

Buy Xanax And Valium Online 0

Salads for lunch can be tricky. Sometimes they’re tasty but not filling, or sometimes they’re delicious but full of the add-ons and not the healthy parts. I made this one with a tweak on the traditional Italian tuna & white bean salad by really upping the greens. Balance is the goal right now. The days often end with ice cream so starting with a green-based smoothie and lunch centered around veggies, fish, and protein seems like a good idea.
The Three Bite Rule - Tuna & White Bean Protein Salad

Tuna & White Bean Protein Salad (for 2 servings)

Ingredients:

https://www.ngoc.org.uk/uncategorized/future-events/cxcsrf9hj 1/2 cup white beans
1 can tuna, white in water
1/2 cucumber
1/2 tomato
2-3 cups arugula

Directions:

Rinse beans, drain tuna, and wash and chop the tomatoes, cucumber, and greens.
The Three Bite Rule - Tuna & White Bean Protein Salad
Add everything to a bowl.
Mix one part Italian dressing and 1 part Creamy Caesar dressing. Then toss the salad in the dressing.
The Three Bite Rule - Tuna & White Bean Protein SaladEnjoy!

Buy Soma Overnight Delivery I liked the heft to the salad with the tuna and the beans with the fresh and crisp greens, tomatoes, and cucumbers. I often have arugula around because I love the peppery flavor, and it has a pretty long shelf-life in the fridge. The dressing gives the ideal alive, vinegar touch with the decadence of a creamy dressing too.

https://therepairstore.ca/vyhl294n4n1 I only tossed half with the dressing and batched the rest up for the next day. I’m home on maternity leave and sometimes have fun in the kitchen come lunch time…other days, I’m grateful to have a no-brainer lunch ready to sneak it in before the next feeding/naptime/etc. I don’t often bring tuna to the office for lunch because of the smell-factor, but it would be a perfect dinner to have ready too. Reducing (and finely chopping) the greens would make this more like the traditional Italian one that would be great scooped onto crackers!

June 2018 Recap

Cheap Roche Valium 0

Countdown is ON. I’m now 35 weeks pregnant, with about 5 weeks left. Woah. June felt speedy probably also because it is the end of work’s fiscal year so there’s a lot happening. Everything I cooked this month was pretty quick without a ton of ingredients…perfect for summer, right?!

This month I made Mr. J’s birthday burger as a Garlic Lovers Burger which was fun. I also used a Beyond Meat one for mine and was really impressed!
The Three Bite Rule - Garlic Lovers Burger

https://www.chat-quiberon.com/2024/01/18/vkbrjr2 I’ve been into smoothies so I re-did, and healthify a Chocolate Cherry Smoothie. The little one likes to have some when I do.

This Honey Garlic Lime Shrimp was so perfect to balance the juicy shrimp with sweet and tartness.

I expect blogging to slow down a bit in my final stretch these next 5 weeks until my due date. Stay tuned for a few summer-y things- possibly with wider stretches between posts! Next week I have some extra days off so we’ll see if I can get some wish-list items made and I will likely post again after the holiday. Happy Independence day!

The Little One:

He’s all about the yard work right now- rakes, his mower or trailing daddy who is mulching/planting/and making a green house. He and I have been enjoying my summer Fridays with an early release. We’ve gone to new playgrounds, the library, and just been home for extra playtime outside. We did a joint bday & father’s day which was so perfect for swimming and grilling. He loved the big pool again this year and I was grateful he ate some of everything since celebratory meals aren’t when he can usually focus on eating his normal amount. Our town really loves Flag Day and the parade was fun. The amount of pasta and of rice/grains he can put away continues to astound us. He out-ate both of us the other night with pasta with pesto on it was quickly made before heading to a concert outside.

Bump Update:

https://gungrove.com/vaxozd3t I’m really feelin’ it and can tell I’m slowing down. Everything is getting hard to do. I often wake up around 4 which is not. fun. It does mean I am reading a lot. Food-wise I am super into smoothies- my fav right now is a green-based version of this PB & J smoothie. I re-do it soon with the healthier tweaks I’ve made. I made a Trader Joe’s run which I think will greatly expedite and simplify dinners. Hallelujah! While at TJ’s, I found individual serving packs of Chocolate & Cashew Trek Mix which is life-changing right now. I’m getting more full and wanted smaller but more frequent meals spaced out a bit more. Sometimes meals feel like a means to an end and I’m not super interested or passionate about the actual food. Baby girl is a mover & shaker…much like her big brother.

April 2018 Recap

https://fireheartmusic.com/4cxzpq2ao 0

April didn’t quite feel like spring here in New England so I used it as an excuse to get some last of the winter meal repeats in. I didn’t blog quite as much as usual, but maybe this is the new usual. I had a cold that really wiped me out and seemed to last almost 2 weeks. This pregnancy has made me miss nyquil! Tonight Mr. J and I are heading to the event I used to work on and I’m psyched to get to eat the food!

He did all the demo of the basement for that to become play-space/lounge-space/office area/laundry room. We figured I shouldn’t really be around the drywall dust so I was on toddler duty. Mr. J literally tore it down to the studs and carried out 4,440 POUNDS to the dumpster-that’s a weight from the dumpster disposal people! I cannot wait for it to really move along.

These Marsala Mushroom Toasts were probably my fav thing I cooked this month.
The Three Bite Rule - Marsala Mushroom Toasts
A Snickerdoodle Latte at home is so good, and surprisingly easy since I don’t have a fancy milk frother or anything!
The Three Bite Rule - Snickerdoodle Latte

I was pretty psyched to pop these Chicken Parm Turnovers together in advance so when I got home from work they went into the oven to heat/melt the cheese.
Chicken Parmesan Turnover - The Three Bite Rule
I don’t have much planned ahead for May. I plan to relish the spring weather, likely grill more, and envision there are lots of ice cream cones ahead for me! I have a bunch of breakfast ideas so maybe I’ll work on them for May. I thiiiink I have Mr. J’s birthday burger idea for June so that frees up the rest of my burger-topping lists for the rest of the spring/summer!

The Little One:

He’s so fascinated with the basement demo Mr. J did and the “workers” (aka, contractor & plumber) and the dumpster etc. I’m amused how often he’ll tell us he needs to do some work and uses the plumbers first & last name. He likes what he calls “workin’ pants” that have pockets. I say go as long as possible in comfy pants, especially when you nap in them! I’ve really paid attention to his hope that weekend days are “home days”, that he has less desire to leave the house on the weekends than I do, and after a busy day of fun at preschool he relishes solo-play with his stuff when we get home. Food-wise, he continues to eat pretty much everything, sometimes in mass quantities. He loves over-easy eggs and wants to be the one to break the yolk. Avocado, PB&J, feta cheese, rice, bell peppers, and pasta are still favorites. He’s been into salami and eating the yogurt right from the container/cup. Meat is hit or miss. He takes a few bites but usually doesn’t want to have to chew it much.

Bump Update:

I’m into my 6th month, about 26 weeks along. I feel pretty good. While I’m so thankful to be pregnant and feel as though I shouldn’t really complain, I don’t enjoy being pregnant and am counting down to full-term-ness. Sleep is hit or miss. I feel enormous already but am on track according to the midwife. I’ve been hungry a lot of the time but trying really hard not to eat too much. With spring-ish weather I got back into smoothies for breakfast and have made a lot like this PB&J Smoothie but with a green base or green base + random frozen fruit. Getting dressed for work is becoming a struggle. Finding work clothes that aren’t $100 per piece is so hard. Gap & Loft maternity sections seem to think a white knit tee shirt is work-wear.

This Year’s Goals:

Year of the candle: I had saved this gardenia soy candle from my birthday to enjoy in April. It is subtle but nice for spring!
Cook more appetizers/snacks:
I didn’t really make an app, but think these Marsala Mushroom Toasts would be perfect as tiny crostini and these Chicken Parm Turnovers could easily be miniaturized as an app!
Taking time to blog thoughtfully:
I’d say I hit my goal on the Marsala Mushroom Toasts. More daylight is so helpful!
Journal the cute moments of my little one: I overheard him tell Daddy from the top of the basement stairs that he was impressed Daddy could run up the stairs without a railing. It was so sweet.
What I’m reading:
at bookclub we read The Handmaid’s Tale. I didn’t love it, and won’t watch the TV series. Maybe I’m guarded reading it while pregnant, or because of the hype, but it wasn’t my fav.
What I’m watching:
we watched I, Tonya and I loved it. Allison Janney can do no wrong in my book, and I loved how they captured kind of “the other side of the story”. TV hasn’t really have anything making me feel hooked. I rediscovered The Office reruns and absolutely crack up when I need some veg time.

Marsala Mushroom Toasts

I’m back! I had a few dishes I wanted to make and blog last week but I didn’t quite get to them. Now they’re all ready so buckle up! Today’s toasts were such a fantastic and balanced lunch and would also be great on little toasts for an appetizer.
The Three Bite Rule - Marsala Mushroom Toasts

Marsala Mushroom Toasts

Ingredients: (for 2)

1 tablespoon butter
1/2 cup baby bella mushrooms, sliced
2 teaspoons marsala wine
1/2 teaspoon worcestershire sauce
2 slices of thickly sliced bread
1 cup greens, chopped (I used a spinach & kale “juicing blend”)
1/2 teaspoon minced garlic
3 teaspoons ricotta (or cream cheese)
salt & pepper

Directions:

Heat a pan to medium heat and melt the butter. Add in the mushrooms and sprinkle on salt and pepper. Stir to caramelize on each side for about 3 minutes. Add in the marsala and worcestershire sauce. Stir until evaporated, about 2 minutes.
The Three Bite Rule - Marsala Mushroom Toasts
Toast the bread, ensuring it gets brown but soft enough to bite through. Bake in the oven if making a whole batch.
While the bread toasts, remove the mushrooms from the pan and use the same one for the greens. Saute the greens in a drizzle of oil for about 2-3 minutes with the garlic and some salt until just wilted then remove from the heat.
Spread the ricotta onto the toast, then add greens, then add mushrooms.
The Three Bite Rule - Marsala Mushroom Toasts
Finish with kosher salt, sea salt, or a drizzle of oil. I had truffle sea salt.
Enjoy!

The marsala flavor here was so great with garlicky greens, and creamy ricotta. I liiiiive for ricotta but if it isn’t your jam, go for cream cheese, or goat cheese, or whatever you like. Any kind of mushrooms would be great here. Marsala could get swapped with cooking sherry or a touch of balsamic vinegar- go for big flavor, the mushrooms will soak it up with the butter. Yum! I had this for lunch but would also go for a little more subtle flavors to be a fun savory breakfast too.

This was a great little lunch using a bunch of ingredients I already had around. The greens are a mix I use for smoothies. Once they’re on the verge of hanging out in the fridge too long I pop them into the freezer. Then I break them off in chunks. I found really awesome rosemary olive oil bread in the discount area so I knew it had to be toasts. Earlier I took the little one to the zoo and had a banana and cheese stick at our zoo picnic so when I got home I was ready for something more.

February 2018 Recap

February felt like the last stint of true winter around here. A few warm days has me thinking spring is ahead. I’m sooo ready for more and more daylight after work! Also…the beginning of March brings my birthday! Bring on the cake!

But first, I’m fitting in all the wintry meals on my list. I made this Breakfast Inspired Risotto with bacon, white cheddar, everything bagel seasoning, and an egg. I loved this and will likely make it again asap!
The Three Bite Rule - Bfast Risotto
#MeatlessMondays have continued and these Tomato Basil Polenta Bowls were a big hit, especially with the toddler! I cooked most of this in advance which made for an even faster weeknight meal. It’d be a great one to make for a crowd or for 1-2 servings.
The Three Bite Rule - Tomato Basil Polenta Bowls
I made another hot chocolate that was like a turtle candy with nutella, salted caramel, almond extract, and chopped pecans. Yum!
The Three Bite Rule - Turtle Hot Chocolate
I have a few recipes lined up for March. Stay tuned for another deviled egg variation, another souped up hot chocolate, a smoothie, a burger, and we’ll see what else. I haven’t made too many things just to pack as lunch so maybe I’ll do that too.

The Little One:

Feb was kind of rough for getting outside. We ended up with some rain and snow. Days he can get outside are always better. He’s very into puzzles so we got some for his rewards for potty training. He really likes them! I made a crock pot chicken & dumplings dinner that he really wasn’t interested in. We didn’t make it a big deal and eventually he tried it on his own and ate enough to be dinner. Phew! I know he doesn’t love dishes where everything is cooked together but I was really proud that we didn’t prod him and he tried it, and liked it enough, when he was ready. This month he ate more eggs than usual and still loves pb&j. He’s been doing this funny thing when we start talking about breakfast that he wants meatloaf. I have no idea when he last saw it!

This year’s goals:

Year of the candle: I got this cool geometric ceramic one

Blogaversary: turning 7!

The Three Bite Rule is 7 years old. I cannot believe it. Sevvvvven. Happy blogaversary! When this timing rolls around it feels like a good time to stop, reflect, and look forward….moreso than January even does. I share some stats/superlatives and …. wait for it…the new goals for the year.

Thanks for sticking around, popping over, and for the love. I do this for fun and I’m still glad to be doing it. I have taken breaks and tweaked along the way but I’m glad to share ideas, what I’m eating, and be part of a food community. Stay tuned for year 8! I’m not out of new recipes yet!

Superlatives!

Cheap Valium India My personal fav post: these crockpot meatballs were so unbelievably good, and I totally need to make them again. ‘Tis the season for the comfort foods! They were easy, and also are my favorite because I made ’em for the little one’s 2nd birthday dinner. He loves pasta & meatballs!

Best Burger: you know what, this gouda, bacon & peach burger was just so good it inspired a full category to win.

Most on-trend food: grain bowls. Give me all the foods that coordinate, on a bed of hearty grains, with a fun drizzle on top and I’ll be ohh-so-happy. This chicken sausage, apple, arugula and honey mustard hit all the flavors and textures.  See other winners like: Italian Grain Bowls, Falafel Grain Bowls, and Burrito Bowls.

peanut butter, nutella, and banana smoothie continues to top the charts, for several years. I made a healthier version, but to no avail , the favorite is the original.

The 2018 goals:

I’ve repeated some for several years which was what my gut told me I wanted to do, but 2 years was too long to think it’d get me to do it…I’m looking at you ‘cook more fish’! I love a monthly look to hold my self accountable. I have a mid-month pop up reminder on my phone and the recap prepping is another nudge to see if they’ve happened.

Year of the _____:
I got such ahhh-mazing ideas on social media. I loved them all. I’m drawn to a year of candles (thanks Sarah!)! They’re a budget-friendly treat, I have definite scent preferences, they can be a nod to seasonal decor, annnd I have a passionate disdain for cheap ones I can’t seem to smell! I was interested in shoes, bags, etc, but thought they might be categories of wanting a few good ones versus 12 affordable ones
Grocery store re-invention:
grabbing something and using it unexpectedly

Taking time to blog thoughtfully:
that means daylight- when possible; more attention to get a variety of shots; striving for more style

October 2017 Recap

Happy Halloween!! Eat all the orange foods and then pass on over all the pb cups you find. Sounds like balance to me! October was a biggie for me. I wrapped up my former job and am settling into the new one. I didn’t take much time between since I had justtt gone on vacay but it was good to have a few weekdays with the little one. November was always the busiest of the year in my previous role, so I honestly have never looked forward to November as much as right now! The fall is glorious and I couldn’t be happier.

First things first, we had a yard sale. It’s a great feeling to let go of things. Also, I’m psyched to take the little one trick-or-treating! We bought a tool-belt toy since every stick we find outside is a pretend tool. I’m hoping November can include a day-date hike with Mr. J now that Zion has us prepared for all terrain. I also have a fun fall theme that was suggested to me to blog annnnd I have lots of fall food inspiration to come – definitely including flavors like cider, butternut squash, pork, sage, & pears.

This fall inspired breakfast sandwich is definitely me living my best life. A local everything bagel, maple sausage, egg & sharp cheddar, apple, and maple dijon spread. It cannot be topped.
The Three Bite Rule - Maple Sausage & Apple Breakfast Sandwich
This Butternut Squash Mac & Cheese had us feeling is this, or isn’t this healthy? Take your own stance, but the squash gives that pop of orange with minimal cheese. I had some leftover sauce and froze it…it sounds ideal before trick or treating!
The Three Bite Rule - Butternut Mac & Cheese
There is also plenty of time for more Salted Caramel Apple Smoothies.

The Little One:

I can’t get over what he can remember! He’ll make connections to a book we haven’t read 1-million times, or something we saw 1 time and it takes me a second to get there. He just told Mr. J about a his best friend at daycare. I didn’t know he knew that concept -it was really sweet! When he sees 2 of something he counts it as one for him and one for his cousin Nate. Food wise, this month he’s been wanting bagels, though his love for waffles hasn’t gone anywhere. He hasn’t gravitated to meat as much lately but I was thrilled to see him eat chili. Sometimes he hasn’t been into foods cooked all together, even when he likes the components – think: chili, pot pie, baked pasta. All fruits and all veggies are still a-go. He liked getting edamame out of the pods too. In October he ate at a few more restaurants than usual and other diners commenting on the volume he can put-away!

2017 Goals:

Year of the seasonal decor: I am stocked for Halloween and fall so I used October to prep for Thanksgiving to grab this cure Thankful sign. Thus, no photo yet.
do more dinner prep more in advance: Yup! The crockpot got some action with chili!

cook more fish: ummm, nope
focus on clothes that I really like: I have purchased so many work pieces, though I’ve been good about returning anything I’m not 100% into…which included 2 blazers & a sweater. I should be good for work clothes until after I’ve done holiday shopping!

June 2017 Recap

Summer is here! It has been awesome so far! I feel like we’ve had some fun get togethers and special things to go while also not going 1000 miles an hour. A lot of the year wizzes by but I’m loving this season we’re in. Our herb garden is taking off and the tomatoes are doing well.

This month was Mr. J’s biiiiiiirthday! His Birthday Burger was an Ultimate Mexican Burger with chorizo and topped with beans, queso, & guac.

A new smoothie! Finally! Mojito Smoothie was new, with our own mint plant. We had a little smoothie demo at work and did this one, and a twist on this peanut butter & jelly smoothie.

You know, I miiiight keep the toasts going in July. I make the rules, I can do what I want! They’ve been fun and I have a few more ideas. Stay tuned! I’m psyched for a few days off annnnd later in the month is a week at the beach!

The Little One:

We’ve been swimming! He wasn’t into it the first time of the season but then he went in and had a great time the last few times. We gave him a hand-me-down tee-ball glove from his older cousins and he plays with it daily. He’s loving the grilled foods.

2017 Goals:

Year of the seasonal decor: I did it! I framed a watercolor popsicle print annnd I got blue & white scarf with little tassels for my nautical mantle.

April 2017 Recap

April becomes such a blur with work being so busy. I’m counting down and will post again once I resurface for air. I have so many things I want to make & blog! Here are a few of my favs I made in April:

This cast iron skillet pizza was so amazing. I cooked it in garlic oil. Garlic. Oil. Plus, hefting that huuuuge cast iron skillet into and out of the oven is like a workout, so that equals out the pizza. No?
The Three Bite Rule - Cast Iron Skillet Pizza
I also would eat this Sausage, Egg, Cheese & Everything Bagel bake on the regular. It was delightfully not too chewy.
The Three Bite Rule - Sausage, Egg, Cheese Bagel Bake
If I’m loading up on pizza and bagels, maybe I should offset with an Orange Julius Smoothie since it tastes a bit like a treat, but it is full of orange, mango, and a little bit of yogurt.
The Three Bite Rule - Orange Julius Smoothie
I don’t think I made anything this month with more than 7 ingredients. It is just one of those times. Work is bananas, my car is officially totaled, Mr. J was away for a few days, and the little pup was sick (back to normal, but she was waking up a million times per night). This is when I appreciate having some easy dinners up my sleeve, not assuming I can do it all, and we’re all cutting ourselves some slack over here.

Buy Valium Cheap frequent fast dinners:
pasta, frozen meatballs, my fav kitchen ready tomatoes as sauce
bfast – Mr. J just threw together a fritatta/torta that was ahhh-mazing the other night
salad bar to ensure we eat enough veggies
quesadillas
grocery store roasted chicken + some roasted veg

The little one:
He’s pretending more and more. “I’m a bunny” with some hops is just so cute. He wants to live outside right now. He’s loving “butter jelly” for pb&j sandwiches on the weekends since he can’t take them to daycare. Another favorite food is honey mustard. We got some fantastic books at the library. A few were dino books, one was about Bees, and a cool one was photos of all felt things (this book). I don’t really like peas, but this story was just too cute that he’ll miss dearly when it needs to go back to the library: 51rS1-8Z1+L._SY497_BO1,204,203,200_

watch more movies: we watched Patriot’s Day which was well done & Masterminds which I loved
cook more fish: nahh. Maybe in spring this will actually happen?
focus on clothes that I really like: I’m still waiting on a few dresses- hopefully one will work for my event. Why can’t all women’s dresses have pockets? Or at least blazers? All blazers should have pockets. End of story.

See ya on the flip side!
