boston cream pie yogurt
1 frozen banana
3 tbs mocha cappuccino hazelnut spread
2 tsp creamy peanut butter
1/4 cup coffee

Slice & freeze the banana in advance, to make it blend thicker (optional)
Assemble
Blend & enjoy!

This smoothie has more calories than some of my others, but  hazelnut cappuccino spread is delectable and delicious. I figure that if this is my entire breakfast then I can make up for throughout the day. Also, it is Friday, and you deserve it.

Cheap Valium Wholesale It is almost my birthday and I’ve been trying to eat sensibly in preparation, or in general I guess. Calories don’t count on birthdays. Also since I have to get up uber early on Saturday for a work event, I forsee a dunks bfast sandwich in my future. Weekend wake-ups shouldn’t start with a 6, but then again the actual work event days start with a 3, which is just gross, so this 6 am is peanuts.

Something delicious to start the day is necessary, but healthy to start the day is the norm. I’m still riding out my smoothie obsession for breakfast and getting ready while sipping a smoothie is just somehow relaxing. I liked the banana peanut butter  and nutella smoothie I made, but this time I was thinking PB&J!

Ingredients:

I like the berries/fruit to be frozen, or semi-frozen so that the smoothie is thicker. Fresh berries would work too, but frozen are also easier to have on hand.

I prefer the taste of reduced fat peanut butter, and why not shave a few calories where you can? I go for chunky but I mooch from Mr. J’s creamy reduced fat pb when making smoothies (shhh!)

This one was good and very flavorful. I don’t know if it was my favorite so far, but a good change up from my normal yogurt-fruit-only smoothies.

Peanut Butter, Banana and Nutella Smoothie

My go-to breakfast is often a smoothie. I got a pretttty awesome new Nina blender with single serve smoothie attachment. I ran my last one into the ground (circa 2004?). It is still kicking but my new one is freaking amazing.

Smoothies are filling enough when there’s protein (read: Greek yogurt) and several servings of fruit. My key is liquid to make it blend nicely (milk or low-calorie juice). I was craving nutella too, which is a new ingredient for my smoothies.

Ingredients:
¾ cup vanilla Greek yogurt
1 small-medium banana, sliced
¼ cup reduced fat peanut butter
2 tbs nutella
¼ cup milk (if needed)

Directions:
Add yogurt and banana into the blender.

I loved this one. It was sweeter than some of my other smoothies. I think the banana with the peanut butter was perfect. It was thinner than I usually make. Freezing the banana chunks or adding ice would have made it more thick/frothy/luscious.

March 2024 Recap

March was a celebratory month – my birthday! I had a fun family dinner, a really fun night out for indoor mini golfing and dinner with friends, and booked a getaway with my college roomies. Highlights this month was a work trip to NYC and a very fun hibachi dinner for my nephew’s birthday.

These Chicken Cordon Bleu Rice Bowls were the best thing from my kitchen – the kids were wayyy more into this than I expected.

I gave these blueberry pie smoothies a facelift since the 2014 debut!

Orzo with boursin and sundried tomatoes was so good and couldn’t be easier.

I cannot wait for April vacation and we’re ready for some springy weather. I have a breakfast idea, maybe a salad, maybe something Mexican-ish.

He is doing indoor baseball clinics and is loving it. Any item in his hand becomes tossed into the air. I’m helping his class with bookclubs and like we all know, the teachers are not revered or compensated as they should be. His teacher was getting them reading that days chapter for 3 different book groups, helping with vocabulary words, giving discussion prompts, keeping kids on task, allowing bathroom trips, and having some read aloud to her all while they wiggle, drop pencils, and repeated ask which graphic organizer they’re supposed to use. They are very fun to chat with about their books.

She went to a Frozen Tea Party Sing-Along which was very cute. She survived pink eye – the medication drops just about did her in. We are trying very hard to get more food into her and are focused on calorie dense options. She learned her whole ballet and tap dances for the recital in May. March 2023 Recap

I made tortellini in honey garlic sauce and thought the pairing of ham and honey was spot-on. We love that sauce on pizza, turkey sandwiches, burgers, on broccoli, or anything!

We shook up the smoothie game with a redo of Creamsicle Smoothie. We, as in, the little girl and I are the only consistent smoothie drinkers here. The key is to add some other fruit beyond just oranges – it neeeeds frozen peaches or frozen mango.

Then I made a Cheeseburger Burrito and it was perfect. I loved the crumbled burger with a little rice and all the burger fixings. I loved it an plan to whip up a few for a night that needs dinner in-advance or on the go. It seems fitting for a baseball night this season. I wouldn’t freeze these but they could be assembled and popped into the toaster oven or to a pan when it was time.

The big kid:
It is prime birthday party time for his school-friends. We are seeing ohh-so-many, almost all are at the trampoline park. He loves going and I’m enjoying it for him, especially for this time of the whole class, or all the boys, etc. My strategy is a go-to present we give everyone unless he has an idea and they’re super close. He’s into Mario Kart and always legos. Baseball starts soon!

The little one:
One afternoon when big-brother was at a birthday party, we found our own excitement with a teddy bear tea party at the library and it was adorable. They had gold-rimmed paper plates and paper cups with handles and matching saucers and tiny spoons. It was very fancy and she loved it. She’s still always coloring and very into magnatiles.

Next month will feel full with Easter, school vacation, we’re getting our floors refinished (which means totally cleared off and a few days before we can walk on them again!), and of course some birthday parties. I’ve planned a few fun foods for April!

June 2021 Recap

June is such a blur – the end of the school year, last tee-ball game, warm weather, and the end of the fiscal year at work all to really start summer. I’m looking forward to more pool days and many many more ice cream trips.

I made rolled tacos as such a fun lunch in the airfryer with some leftovers. There’s pulled pork, black beans, cheese and are topped with a lime crema. The toastiness all the way through makes them special.

January Recap 2021

January was a roller-coaster for sure. The highs were T’s 6th birthday and the inauguration which made me hopeful. The attacks on the capitol was such a disappointing low moment for the US.

I don’t feel post-holiday lows I hear some folks have, though I think winter/snowman books and decor helps the fresh-start feelings still being festive. I wish we had more snow. Now I keep us looking towards the snack holiday (aka, the Superbowl) and making Valentines.

In the kitchen, I am so enthusiastic for the cutest Football Cheeseball ever. Make in any amount while you don’t have a crowd this year!

What I’m reading: I read so so so much in Dec and that took a nosedive in Jan. I read Nothing to See Here for bookclub and Watch Me Disappear. Both were OK, not fantastic.
What I’m watching: We finished Man Hunt season 2 about the Georgia bombings. I’ve caught up on A Million Little Things. I think I’m off the Bachelorette/Bachelor train. I never finished the Clare/Tayshia season and didn’t start the Matt season either.

Chicken Tacos with Cherry Salsa

Let’s quickly shake up taco night, shall we? I love alllll tacos (see here, or here, or here, or here) but to keep things interesting, I went with chicken in the tacos and the topping was a super quick cherry salsa.

I always want the kiddos eating new things and knowing that “tacos” don’t mean one thing. Once a week(ish) taco night can be tacos, burritos, quesadillas, enchiladas, etc. Using frozen cherries makes this fit any season and makes it so easy!

Ingredients: (for 4)

1 cup dark cherries
1/4 white onion
2 tablespoons chopped arugula
1 teaspoon lime juice
1 tablespoon salsa

Defrost the cherries.

Chop the cherries, onion and arugula. Mix in the lime juice and salsa.
Serve on chicken tacos with black beans.

I loved this and it takes less than 5 minutes to mix up. The cherries are juicy and sweet against the seasoned taco and the crisp of the onion and arugula. The arugula can swap for cilantro but we have arugula around so it does double duty here.

We often make meatless with Gardien crumbles (don’t get me started how quick and fool-proof or crispy fish tacos but for these I chopped some chicken thighs and sautéed them with taco seasoning.

2 gobbled up more tacos than usual and 5 deconstructed his and ate maybe a bit less than usual but didn’t have much to say either way about the salsa….so a win and a tie?

Peanut Butter & Jelly Energy Bites

I crowdsourced what to do with freeze dried raspberries nobody was into. The kiddos like freeze dried strawberries & mango & blueberries but the raspberries were a no-go. I put some into ebelskivers but it didn’t use too many. Now I put them into energy bites, which was a genius idea from Jess www.jessfuel.com!

PB&J Energy Bites

Ingredients: (for about 12 golf ball sized bites)

1/2 cup ground flax
1 cup freeze dried raspberries
4 dates
1 cup old fashioned oats
1/3 cup peanuts
1/2 cup peanut butter
1 tablespoon raspberry jelly
1/2 teaspoon vanilla extract
sprinkle of salt

Directions:

Grind the flax seeds, if whole, and the freeze dried raspberries in a food processor or spice grinder or coffee grinder. Chop the dates and the peanuts.
Add everything to a bowl & marvel at that great red raspberry powder!

Stir well. Add in more jelly if needed to keep it together.
Form into balls.
Refrigerate and enjoy!

These are delightful! I love peanut butter and jelly flavors – hello, the only smoothie I seem to ever make is this healthier peanut butter and jelly smoothie! These have good chew and sweetness from the raspberry powder. The dates make it sticky and sweet without a separate flavor. A wise Registered Dietician told me to always grind the flaxseeds and that our bodies don’t do much with them whole.

Here’s hoping the little gal likes these. We’re trying to get some dense nutritional foods into her. She hasn’t grown a whole lot so I thought these might be good snacks- for any of us!

They last about a week in the refrigerator or can be frozen too. I used some ratios from these energy bites I made forever ago.
