Kale Mac & Cheese

Mac and cheese becomes healthy if there’s a leafy green ingredient. Right? I love mac & cheese. It is one of my favorite wintry comfort foods. We Are Not Martha posted a great adult-flavored mac & cheese a few weeks ago. I figured mac and cheese was a great use for some of my leftover cheese fondue.

Ingredients:

1 cup cheese sauce (or leftover cheese fondue)
1 cup chicken or veggie stock
1/2 cup heavy cream
1 cup shredded cheese (I used swiss)
1 egg yolk
1/2 pound pasta (I used mini rigatoni)
1/4 cup butter, melted
1/2 cup of crackers, crumbled
2 tbs grated parmesan
salt & pepper

Directions:

Preheat oven to 350-degrees.
Boil salted water for the pasta.
In a medium saucepan, warm cheese sauce over medium-low heat.
Add the pasta to the boiling water. Cook until al dente, being careful not to overcook.
Add in the broth and heavy cream, mixing well.
Tear the kale off the center stocks by pulling from the base towards the other end. Then chop the leafy parts, discarding the stocks.
Drain the pasta and mix into the cheese sauce.
The Three Bite Rule - Kale Mac & Cheese
Sprinkle in the kale and mix well.
The Three Bite Rule - Kale Mac & Cheese
Spray a baking dish with nonstick spray.
Mix in the egg yolk and shredded cheese to the pasta mixture and transfer to the baking dish.
The Three Bite Rule - Kale Mac & Cheese
Bake for 10 minutes.
While mac and cheese is baking, mix together melted butter, cracker crumbs, and parmesan.
Sprinkle topping onto the mac and cheese and bake for another 15 minutes.

Enjoy!

I loooved this. It was a great use of some leftover fondue. It’s been such a cold year and this was exactly what I needed. The kale was earthy against the cheesiness. The egg yolk is a secret ingredient that adds a velvet texture like carbonara.

Mojito Shrimp

It was another his/hers night here at the Chilton household…I’m seriously on a quest to get more deer out of the freezer. I was planning something with shrimp and Mr. J was forced to eat some venison. He braised it. It smelled to-die-for but my 3 ingredient shrimp was so amazing and such a reminder how easy shrimp is to throw together. Also, my shrimp had taken up some permanent residence in the freezer so I was also a culprit of freezer real estate taken over by food we’re not using.

I often cook shrimp in lemon and garlic but wanted to think about what else goes well with the flavor of shrimp. Not lemon this time, but lime! Perfect! Fresh herbs were on sale so I didn’t feel as bad shelling out big bucks for an herb I had 1 plan to use. I did get a fancy herb keeper for xmas so there’s hope that the mint can find another use. I’d be all about mojitos if it weren’t 4-degrees outside.
The Three Bite Rule - Mojito Shrimp

I made shaved brussels sprouts as a side dish but thought it’d be a perfect bed for my little shrimp. Trader Joe’s sells them shaved, which is awesome, or you can chop up whole ones, discarding the base. Jasper’s Corner Tap in San Fran does a side dish of brussels sprout petals which is also an amazing way to use them.

Mojito Shrimp over Shaved Brussels Sprouts

Ingredients:

~5 large shrimp
10 mint leaves
3 tbs lime juice
2 tbs melted butter
3 tbs bread/cracker crumbs (optional)
2 slices of bacon (optional)
10 oz bag of shaved brussels sprouts, or 1 pound fresh brussels sprouts

Directions:

Preheat the oven to 350-degrees.
Defrost, peal, devein the shrimp (as needed).
Chop the mint.
Toss together shrimp, lime juice, butter, and shrimp in a small baking dish.
The Three Bite Rule - Mojito Shrimp
Sprinkle with salt & pepper and bake for 5-7 minutes (my shrimp was fully cooked already).
Heat a large pan to medium high heat.
Fry the bacon until crisp and 75% cooked.
While bacon is cooking, chop brussels sprouts if using whole ones.
Add in the shaved brussels sprouts, salt, and pepper.
The Three Bite Rule - Mojito Shrimp
After the shrimp has cooked for the 5-7 minutes, stir, then top with breadcrumbs or cracker crumbs (optional) and bake another 5 minutes.
The Three Bite Rule - Mojito Shrimp
Toss the brussels sprouts letting them caramelize a little bit.
Lay a bed of brussels sprouts onto the center of the plate.
The Three Bite Rule - Mojito Shrimp
Top with shrimp and drizzle a spoonful of the liquid on top of the shrimp.
The Three Bite Rule - Mojito Shrimp
I went a little overboard with the lime juice so I toned it back for your quantities, and increased the butter a bit so your liquids have better balance than mine did initially. The lime was quite strong so I added the breadcrumbs to it. It would be fine without those…just use my lime/butter quantities as a reference.

This was really good. The mojito (aka lime & mint) flavors would be great with chicken, or pork, or other fish…such a great way to have fresh flavor in the dead of winter! The shrimp would be great on a grill, or even indoors on a grill pan. I popped mine into the toaster oven, since they were fully cooked I was just looking to get them warmed and the flavors incorporated.

Roasted Butternut Squash Pizza

I love all veggies roasted. Seriously, roasting is the best. all. the. time. I made pizza last year with butternut squash, bacon, and gouda but this time I kept the roasted squash in chunks and I used ricotta as “sauce”. While I haven’t seen it in person, the menu at Otto has a pizza with butternut squash, ricotta, and cranberry. I wonder how theirs is so I started with just those ingredients….somewhat. It was so good.

The Three Bite Rule - Butternut Squash Cranberry Pizza

I really loved the slightly rehydrated dried berries. I was trying with contain myself and not go overboard (umm unlike when I made this salad) actually wished I had more! I also unearthed a million partial bags of dried cranberries. I guess I need to use them more often. I used dried cranberries that were infused with blueberry juice. They taste like blueberries but are actually cranberries. Whatever. They’re cranberries pretending to be blueberries.
The Three Bite Rule - Roasted Butternut Squash Cranberry Pizza

Ingredients:

Pizza dough
1 1/2 cup ricotta
1 1/2 cup shredded mozzarella
1/2 butternut squash, cubed
1/3 cup dried cranberries, blueberries, raisins, cherries
2 tbs butter
1 tsp garlic, minced

Directions:

Preheat the oven and pizza stone (if using one) to 400-degrees.
Roast the butternut squash drizzled with olive oil and sprinkled with salt and pepper. Roast for 20 minutes, flipping once while cooking the dough.
The Three Bite Rule - Roasted Butternut Squash Cranberry Pizza
Spread the pizza dough out and poke a few holes into the dough.
Cook the dough for 10-15 minutes until lightly cooked.
Remove from the oven and spread ricotta onto the dough. Sprinkle shredded cheese on top.
The Three Bite Rule - Butternut Squash and Cranberry Pizza
Spoon roasted squash onto the pizza.
Return to the oven for 10 minutes, until the cheese melts and the crust browns a bit.
In a small pot, melt butter and garlic over medium heat.
When it starts to gently bubble, add in the dried berries. Cook for 5 minutes over low heat.
The Three Bite Rule - Butternut Squash and Cranberry Pizza

Once the pizza is cooked, remove from the oven and spoon the butter/garlic/berry sauce over the top.
Let sit about 2 minutes before slicing.

I loved this. I think the garlicky, buttery, and fruity flavors were perfectly contrasted against the nutty and salty squash.
The Three Bite Rule - Roasted Butternut Squash Cranberry Pizza
This pizza would be great if you were making a few pizzas. It might not be everyone’s first choice for pizzas but I swear, try the garlic/butter/rehydrated berries on the pizza before you knock it.

Suggested adaptations:
roasted butternut squash pizza + caramelized onions + toasted walnuts = super topped pizza
roasted butternut squash pizza – ricotta + other cheeses (fontina, gouda, swiss) – dried berries = more flavor if dried fruit isn’t your thing
roasted butternut squash pizza + sliced chicken sausage or chopped prosciutto = non-vegetarian pizza

Creamy Tomato Basil Pasta

The in-between of Christmas and New Years is kind of a weird time. Kiddos are off from school, travel wraps up, house guests leave, there’s still a holiday coming up, and there’s some more work in between. I also think there’s so much pressure for New Year’s Eve and resolutions. It is just a weird time.

I was on a quick-dinner-kick before the holidays and have just one more that I wanted to share for a keep-in-your-back pocket pantry. It also works for a great #meatlessmonday and a break from extravagant or elaborate holiday dinners.
The Three Bite Rule - Creamy Tomato Basil Pasta

2 tbs cream cheese

Heat a flat pan to medium-low heat, adding tomatoes to the pan.
Boil pasta until undercooked and almost al dente.
Reduce the temperature to low and add the cream cheese
The Three Bite Rule - Creamy Tomato Basil Pasta

The Three Bite Rule - Creamy Tomato Basil Pasta
Sprinkle with Parmesan and more basil to serve!
The Three Bite Rule - Creamy Tomato Basil Pasta
It is super easy and delightfully comforting. This pasta is just so fast yet it still seems like not the same-old same-old.

Any resolutions coming up? I tend to make them on my blogaversary but I’m thinking I might set a year-of challenge for myself. I have a few ideas brewing so stay tuned!

Stuffed Acorn Squash

A while ago I was at the grocery store and I asked a guy working the produce area if they had any tomatillos. He pointed me towards squash and said the “weird vegetables” are over there. By weird he pointed me to acorn and spaghetti squash. Not weird at all to me, but I decided to take his answer as “I don’t know”.

Anywho, I’ve been thinking about acorn squash lately and thought it would actually make a super simple weeknight dinner. It has some really great flavors and was so easy. I didn’t know if it would seem like too much of one thing but we liked it. It was like hitting all the food groups in one meal.
The Three Bite Rule - Stuffed Acorn Squash

Ingredients (for 2 people):

1 acorn squash
2 sausage links
1 cup brown rice
1/4 cup onion, chopped
2 tbs garlic, chopped
1/4 cup red wine
1/4 cup wheat germ/breadcrumbs
1/3 cup dried cranberries or dried cherries

Directions:

Preheat the oven to 350 degrees.
Cut squash in half and scoop out the middle (I saved the seeds).
acorn_stuffed_empty_590_390
Roast face down in a baking dish for 20-30 minutes (or until tender when pricked with a fork).
While squash is roasting, remove the sausage from the casing and brown over medium heat with the onions.
Spoon out any grease/fat.
After 5 minutes or when the sausage is almost fully cooked, add in the rice, garlic, salt, pepper, and wheatgerm/breadcrumbs.

When fully cooked, add in the dried cranberries and stir well to incorporate the cranberries.
Remove the squash from the oven and flip the squash halves onto their skin. Spoon the filling into them.

Return to the oven for 10 minutes.
Optional: while squash are cooking rinse any seeds you saved away from the stringy part and toast in the oven.
Serve squash halves with some toasted seeds on top.

I loved this. It is so easy and quick. It felt very fall to me. The cranberries honestly make it. I think it needs the sweet/tart to contrast the savory sausage and the soft squash. I used a cup of single-serve brown rice that just needed to be microwaved. This would also be a good use for any leftover rice you wanted to use up.
