Sweet Corn Risotto with Arugula

HAP-py New Year! I didn’t exactly make it to midnight. I kept dozing, Mr. J dutifully would gently wake me and I was drowsy/cranky/confused. Dec 30th (a “school-night”) and Jan 1 I had no trouble at all getting to being awake at midnight. Ohh well. Christmas is packed away and the little one now points and says “oooo” at the snowmen I pop into place where Santas once stood. 2016 is going to be fun & tasty, I can feel it.

Ohhmygosh. I’m so excited. I got a pressure cooker for Christmas and I broke it out the other night for risotto. I know, I too thought they were only helpful for big pieces of meat until talk at lunch enlightened me. Risotto in 6 minutes? Sign me up! Spoiler: it was awesome…slightly longer than 6 minutes, but I pretty much dumped it in and let it do the work. Sweet Corn Risotto with Arugula (serves ~4)

Ingredients:

2 tbs butter 1 tbs garlic, smashed or chopped 2 cups arborio rice 2 cups chicken broth (or vegetable broth) 3 cups water (or sub white wine) 1/2 cup grated Parmesan 1-2 cups Arugula, chopped 1-2 cups corn

Directions:

In a pressure cooker (see below for stovetop directions*), saute the garlic in the butter for 1-2 minutes. Add in the rice and stir well, cooking for about 2 minutes until the rice gets a bit more opaque than white. Add in the broth and water and season with salt and pepper. Cover and cook on high pressure for 6 minutes. While rice is cooking, cook the corn and chop the arugula. Release the pressure. The Three Bite Rule - Pressure Cooker Risotto Enjoy! *For stovetop risotto: In a medium pot warm the broth and water over low heat. Melt the butter and cook the garlic over medium heat. Add in the rice and cook for a few minutes- until the rice gets opaque versus white. Add in the liquid 1 cup at a time. Wait for it to absorb and then add another cup. Repeat for all the liquid – likely 30 minutes.

I loved this. It was cooked PERFECTLY. It was creamy but not mush. The corn was living in my freezer but had been cut off the cobb awhile back. The chunks still connected make me smile…like finding a double Cheez-it! I chopped the arugula really well partly because the baby was going to eat it too, and partly because I love using it like an herb! I’d use wayyy more next time.

The baby loved the risotto! He ate quite a lot. Mr. J and I did a his/hers entree and shared risotto. He had grilled steak and I had grilled salmon with some dijon/lemon/garlic/salt/pepper. Poof. Insta-dinner.

Mexican Street Corn

Ok folks. You haaaave to make this. I’ve had Mexican street corn, Elotes, and wanted to try making some myself. It is normally on the cob but now that we’re out of that season, I wanted to make some as a side dish. It is such great flavor of sweet corn, salty cheese, lime juice, and a creaminess that is ohh so good. We ate this as a side dish for a fiesta dinner but it’d be fun as a dip too. Or in tacos! (or by the spoonful).

I skipped the jalapeno not wanting this to be too spicy for my crowd. I don’t know that it needs it, so do as you wish!
The Three Bite Rule - Mexican Street Corn
Ingredients:
12 oz white & golden corn
1/2 lime
1 tsp crushed garlic
1/4 cup mayonnaise
1/2 cup cotija cheese or feta (I don’t have cotija at my grocery store so I used feta)
1/2-1 teaspoon chili powder
1/2 jalapeno pepper (optional)

Directions:
Cook the corn according to the package. (I used frozen corn).
Mix together the lime juice, mayo, garlic, chili powder, and some lime zest.

Add a splash of milk if it seems to thick, or mix it with the corn and then add if necessary.

Mix the dressing with the corn and cheese.

I really loved this. So did the whole fam! It had a great flavor and texture. It was really great alongside our tacos. I admit I scooped with chips but with salsa and guacamole, I’d still keep this as a side dish. It was a winner and so quick. I’ll totally make this again…asap.

Honey Chipotle Baked Beans

Mr. J had BIG grilling plans so I felt like I needed to at least make something. He bought ribs and cooked them very low and slow for a few hours with rub he got from a Kansas City vendor he worked with for a few days. It was a feast, and absolutely unbelievably ahh-mazing. My honey chipotle beans were less than amazing unless you have a serious tolerance for heat.

My instant sangria was a really great addition to go with the best ribs I’ve ever had and the spiciest beans I’ve ever had. Wooo-eee. They were spicy. I alllllmost diluted them by half, but sometimes you just have to call it quits. If I kept adding to the spicy beans it might have made them better, but it also would have doubled the quantity. If it didn’t fix the spice level, then we’d just have tons of mediocre beans. See what I mean? I would have mellowed them out if I had guests, but we just dealt and ended up not finishing them. It was fine.

Ingredients:

1 shallot
1/2 onion
1 can white navy beans
2-3 chipotle peppers in adobo (maybe just use 1?)
1/2 cup honey
1/4 cup molasses
1/4 cup red wine vinegar
1/2 cup brown sugar
1/4 cup tomato sauce

Directions:

Dice shallot and onion. Add to a heavy pot over medium heat with a drizzle of olive oil. Cook a few minutes, until translucent (about 5 minutes).

In a blender or food processor, mix chipotle peppers, honey, molasses, and vinegar.

Add in the beans, undrained, and the chipotle sauce mixture with 1/4 cup of water.

Bring to a low boil for 10-15 minutes, then reduce heat to low for 30 minutes.

Watermelon and Feta Salad with Arugula

Guys. I’m so jazzed about this salad. It was so good. I was just so excited and actually “cut the line” in the ole blog que. This 2 posts a week has been a good schedule for me and lately I’ve had enough posts ahead of time that I don’t have to be all that timely in getting the pics from my camera onto the blog with some words. This one skipped ahead of a few other goodies because I just loved it so.

It just might make another appearance in my meal roation soon since a) I have an entire watermelon and b) I made more dressing than I needed. This dressing has lots of possibilities for other salads too. Bam. 2 dressings this month. #winning

Watermelon & Feta Salad with Arugula (serves 2)

adapted from Ina Garten’s recipe

Ingredients:

1/8 watermelon
~4 oz feta cheese (a block cut into cubes, or crumbles)
arugula
3 tbs fruit juice (I used V8 Golden Goodness juice)
1 tsp lime juice
3 tbs olive oil
1 tsp apple cider vinegar
1 tsp honey
~4 fresh mint leaves
kosher salt & cracked pepper

Directions:

Chop the watermelon & feta into smaller-than-bite-sized cubes.
Lay the arugula into a bowl and top with the feta & watermelon.
In a jar, shake together the juices, oil, vinegar, honey, mint, salt & pepper.

Drizzle a little dressing onto the salad. Toss and then add more if needed. The watermelon adds some moisture so a little dressing might be enough.

I seriously loved the pepper-y arugula with the sweet & cool watermelon with the crumbly salty feta. This salad is the perfect combination of sweet and salty and peppery. It also takes 10 minutes to shake up the dressing and cut the ingredients. Just 10 minutes to something interesting, different, and fresh.

This was part of a crazy salad dinner we had. I wasn’t sure it was going to 100% be Mr. J’s kind of thing. I like the stronger flavored arugula than he does and watermelon isn’t is favorite. I made this one annnnd panzanella salad the same night with sausages on the grill. The two salads weren’t 100% complimentary but I’ll share that one soon. Maybe just don’t make ’em both the same night.

Risotto with Grilled Asparagus

For my restaurant recreation this month, I was inspired by a lobster & asparagus risotto dish at Davio’s but I wanted to make it at home. It also served as a reminder that risotto doesn’t only have to be winter food. With Mr. J’s new grill, this still allowed him to fill his grilling quota with the asparagus. Seriously, he wants to grill bfast/lunch/din.

I made this as a his/hers dinner that he had with steak and I had with lobster. The lobster wasn’t real so it was perfect to use in a cooked dish. I think I’ll use the remainder into some lobster mac & cheese.

The Three Bite Rule - Grilled Asparagus Risotto

Ingredients:

1/2 white onion, chopped
1 cup arborio rice
1 cup water
1 cup broth
1 cup white wine
1 tsp dijon mustard
3 tbs grated Parmesan
1 bunch asparagus
lobster or steak

Directions:

In a large saucepan, saute the onion in some olive oil over medium heat until they are translucent, about 5 minutes.
Add in the rice and stir regularly for a few minutes to toast it, then reduce heat to medium low.
In a medium saucepan, heat the water, broth, wine, and mustard to low heat.
Add a ladle of liquid to the rice until absorbed. Continue adding, stirring, and simmering until absorbed. Then adding the next ladle-ful in.

Grill the asparagus.

Chop into 1-inch sections.
Cook the lobster in butter and/or grill the steak.
Gently fold in the asparagus and Parmesan into the risotto.

Gently fold in the lobster meat.

I liked the charred bits of the asparagus and I was careful to not overmix the asparagus. I didn’t want the pieces to be decimated or to lose all the grill marks into a blackened risotto!

The risotto was creamy and perfect. I think cooking it over medium-low heat is the ticket. If it is at a higher temp it really gets sticky versus creamy. It takes just a bit of patience, and about 25 min of cook time, but if somebody wants to keep an eye on it while the asparagus is grilling, it works out just fine. Or grill the asparagus first and let it hang out while cooking the risotto.

I could substitute grilled shrimp, or even salmon flaked apart, or grilled sausage…endless possibilities without even turning on the oven!
