Mexican Street Corn

Street corn has become one of our most repeated side dish so it deserves a photo refresh. We make this on the regular and have it alongside tacos or burritos. It is such great flavor of sweet corn, salty cheese, lime juice, and a creaminess that is ohh so good.

I skipped the jalapeno not wanting this to be too spicy for my crowd. I don’t know that it needs it, so do as you wish!

Mexican Street Corn
Ingredients:

12 oz white & golden corn
1/2 lime (or 2 tablespoons lime juice)
1/4 cup mayonnaise
1/2 cup cotija cheese or feta (cotija is hit or miss so I tend to use feta)
1/2-1 teaspoon chili powder
1/2 jalapeno pepper (optional)

Directions:
Cook the corn and allow to cool.
Add in the lime juice, mayo, chili powder, mayo, cheese and some lime zest if using.

Stir well
Refrigerate for at least 30 minutes before serving.
Enjoy!

We really love this – maybe 3 out of 4 of us love it (and the 4th eats some), so that’s mostly a win. It had a great flavor and texture and I appreciate how quick it is to make ahead!
