Breakfast sandwiches are my fav and let’s get into 2021 with my take on a McGriddle. McDs describes these as griddle cakes with flavors of maple syrup. I have no idea what a griddle cake is but seems like maybe I would if I were in the south? Mine is a twist on a pancake and to become a sandwich with a folded egg, a slice of American cheese, and a sausage patty.

Ingredients: (for 2)

1 cup pancake mix
3 tablespoons cornmeal
1 tablespoon cinnamon chips (or butterscotch chips)
2 teaspoons maple syrup
1/4 cup cold water (or as the mix instructs)
2 sausage patties
2 eggs
2 slices of American Cheese

Directions:
Mix together the pancake mix, cornmeal, maple syrup, and add water. Then stir to combine but not over mixing. Cook small pancakes (think of the egg size and the sausage patty size) and add the chips before flipping.

Crack the eggs and whisk to scramble. Cook in a medium pan so the very thin egg can be folded into a square.

Assemble the pancakes as the bread with a light brush of maple syrup, the sausage, the egg & cheese, and the other pancake.

I used a few butterscotch chips I had around but cinnamon would be wayy better. They are also great in pumpkin or banana bread for all the leftovers you’d have!

Ingredients: (for 2)

The brioche rolls are soft, puffy, and bordering on sweet- the French version of challah. The roasted tomato might be my new favorite breakfast element! I normally would head to a bacon, egg, and cheese, but this I loved as a stretch for myself.

Epic Breakfast Sandwiches

Ingredients:

4 hash brown patties
1 tablespoon dijon mustard
1 tablespoon mayo
1 teaspoon maple syrup
2 eggs
2 slices sharp cheddar

Directions:

Preheat the oven to 375-degrees. Set up a baking sheet (one that has edges) topped with a cooling rack. Spray with non-stick spray and lay the bacon onto the cooling rack. Bake for 7-10 minutes, until crisp.
When the bacon is crisp, remove and let drain on paper towel.
Careful (it is hot!) remove the cooling rack, and pop the hash brown patties onto the baking sheet and bake according to the package – flipping partway through. Mine took about 18 minutes to get very crispy.
While the hash browns are cooking, mix together the mustard, mayo, and maple syrup.

When the hash browns are crispy on both sides, pan fry the eggs. Flip and add the sliced cheese on top.
(Some sauteed spinach or greens would be nice here too – mine had gone too far so I had to skip it).
While the eggs cook, smear some maple-dijon sauce onto the bottom hash brown (then greens if you’re using).

Yum. I loved these. They were a tiny bit tricky to pick up…more of a fork-and-knife dish. I really wanted some garlicy wilted greens inside here, but my greens were slimy. No thank you.

I love texture and nuttiness of different grains and had leftover farro from a lunch I packed. The beauty of this breakfast bowl is the base could be any leftover grain.

Drain the bacon grease from the pan and saute the greens for 3-5 minutes with a tiny bit remaining in the pan.

I looooved this. It has some of my thinking of a bacon, egg and seasoning breakfast grain bowl, but was sooo much better because of the greens and the runny yolk. You are winning your day if you eat something green before 9am.

I’ll totally want to get a sausage, egg, and cheese with everything bagel seasoning variation going because that’s my go-to bfast sandwich choice.

This time I made it as a panini and it was so good. I like to think the panini made it more dinner-ish but that might just be me. Bfast for dinner is so fast and I only used one pan and the panini press to whip all this up!

My local bagel joint makes their sandwiches with egg cooked like this…more like an omelet than a fried egg. Cheese on either side of the bread holds everything together, and the egg stays together more than scrambled would. My other favorite breakfast sandwich spot chops the bacon instead of leaving long strips which is genius. You get some in every bite!

Chicken Bacon Ranch Wraps, aka Everything Good In a Sandwich

We don’t eat a ton of sandwiches at our house but I’m working on changing that. I know, I know, I’ve said I don’t love sandwiches. I actually love them when they’re made-to-order. I adore breakfast sandwiches too. I only dislike sandwiches that have been sitting around sogging all day inside a high school locker or if I can’t tell what’s inside the sandwich.

I had a lengthy discussion at work about hummus on a sandwich…or hummus in general. Did you know the USA has a dried bean and lentil council? This is my worklife. Anywho, back to the sandwich subject at hand.

I made Chicken Bacon Ranch Wraps and they were really tasty.

Ingredients:

2 chicken breasts cut into bite-size pieces
1 cup milk
¼ cup ranch dressing
1 tbs dried ranch dressing powder mix
1/3 cup panko & 1/3 cup breadcrumbs
1 egg + 1 tbs water, whisked
Wheat tortillas
Lettuce
Tomato
Shredded cheddar
¼ cup ranch dressing
4 strips of bacon

Directions:

Marinate the chicken in the milk, ¼ cup of the ranch dressing, and dried ranch powder for a few hours.

Remove from the marinade and dredge in eggwash then breadcrumbs and bake at 400 degrees for 20 minutes.

Cook the bacon, then crumble it.
Assemble the wraps with lettuce, tomato, chicken, bacon, cheddar, and ranch.

You don’t really need a recipe for this but I thought the marinade and breading was spot-on so I wanted to share it. I liked that these were filling and fresh but not fried. I have an aversion to frying foods. The wheat wrap and real lettuce (iceburg = not real) make this slightly healthier than your local pizza place’s version of the same thing since my chicken isn’t fried either.

Like most things I cook, the chicken could be prepped in advance and popped in to speed up the dinner, or prepped and frozen for next time.

If you’re lucky like me, when your sis comes to have these for dinner she’ll also bring treats from her favorite bakery!
