My fav thing to come out of the kitchen this month was this loaded Cobb Salad Turned Panini. So fun. I’ve not confirmed the difference between a cobb salad and a chef’s salad!

I roast garlic even just in the toaster oven and mixing with honey, olive oil, and butter. This sauce is to-die-for. We put it on a white pizza quite often or it is great on roasted veggies or on a panini or it freezes well too!

May 2020 Recap

I’d say we are somewhere between doing-well and surviving. Mostly we’d point towards well, though, honestly there are moments each day that we’re ready to tap-out. I think our rhythms are serving us well and we have enough ideas to keep us all on our toes. On weekdays, I create themes to give us some focus or for the days to feel different. Some good ones this month were: Thomas’ fav things day; cat day; and color days. We’ve been keeping our Friday night take out & DVR tradition after the kiddos go to bed and we often get take out another night. I love breaking up the week to have things to look forward to- and to supporting our local favs.

Cooking wise, we’ve been grilling a lot and I blogged with a focus on sauces since nobody is shopping extra and I’m never sure how accessible everything is.

I loved all of these! This reminded me to add garlic to the grocery list to make some more! I hope a sauce can mix up your next panini, burger, roasted veggies or pizza!

The Pre-K Guy:

He loves the routines more than anyone else here. He loves the sandbox Mr. J made them. He’ll gladly play with tools and scraps while Mr. J builds all the things. The daily themes are of interest, but he’s resistant to some of the worksheets/projects. Once he gets going, he can totally do them all. He’s super into eating a whole raw carrot. Avocado toast with everything bagel seasoning was a hit for lunch a few times. Somehow we got into a routine of having us guess, with our eyes closed, what book it’ll be.

The Toddler Girl:

She’s pretty happy with the current situation. She loooves stroller rides and the Cozy Coupe car- those are her auto-responses when we chat about our favorite parts of the day at dinner. She eats SO much at lunch and breakfast and dinner are so-so. Oatmeal and yogurt are her fav breakfasts. She loves pb&j and turkey & cheese sandwiches. Little girl can put away a whole sandwich plus whatever else! I love seeing her drink out of (and say) water bottle.

This Year’s Goals:

Year of beauty/selfcare – I didn’t grab anything. Do my resistance bands for workouts count?
Prep intentional sides and veggies: Ehh. Nope
Eat more fish: Salmon- again!
Blog some series: Nope.
Focus decluttering/organizing to an area: A pantry shelf got a complete clean-out when we found some ants. Eeek! I also did a major org of kids clothes and passed along a bunch of too-small ones.
Share more books on instagram: I’ve shared the collections I pull for the kids and what I’m into.
Prioritize workouts: I got into a Barre Blend one that has been good, and a serious reminder that I’m not my teenage self in ballet class. We are taking a lot of walks and I’ve gone running about once a week or so.
What I’m reading: I read The Seven Husbands of Evelyn Hugo which might be my fav of the year. I tried The Followers but couldn’t get too far into it.  I’m partway into The Most Fun We Ever Had.  
What I’m listening to: 
only the occasional podcast – Be There in 5 did a series on influencers that was so captivating.
What I’m watching: Supermarket Stakeout has been fun.

Honey Garlic Sauce on Pizza with Chicken

Back when we could go places, Mr. J and I had a date night to our now-fav local winery, Debevino for a wine tasting and then got dinner at Tavolino. We had a pizza we fell in love with. It had crispy chicken, bacon, smokes gouda, mozzarella and a roasted garlic-honey drizzle. I loooved it and actually asked if they sold the sauce- they don’t.

My pizza was a bit different than the restaurant version, but this sauce- ohh this sauce -is to die for. I plan to whip up some more sauce asap. We would love this sauce spread on a panini, as a bread dip, on a burger, or drizzled on pasta or over roasted veggies. For 2 seconds I felt bad that the sauce will take you 45 minutes. But seriously, when else will you have this much time?? Also, B, you’re just popping the garlic into the oven and setting a timer. I roasted it in the toaster oven for 40 minutes and mixed up the sauce. Then it chilled in the fridge until dinner time!

Honey Garlic Sauce Sauce on Pizza

Ingredients:

1 bulb of garlic
3 tablespoons olive oil
3 teaspoons honey
1 teaspoon butter
1/4 teaspoon garlic powder
salt & pepper
pizza dough
3/4 cup mozzarella
1/2 cup shredded, roasted chicken
2 cups arugula
drizzle of olive oil, vinegar, or Italian dressing

Directions:

Slice 1/4 inch off the top off the garlic bulb, drizzle a tablespoon of olive oil and wrap in foil. Roast at 400-degrees for 40 minutes. (It should be super soft, add another 10 minutes if needed). This can be done in advance too.
Poke or scoop each garlic clove out into a small food processor or a bowl to beat with a hand mixer. Add in remaining olive oil, honey, butter, garlic powder, and a sprinkle of salt & pepper.

Blend until smooth. Chill until using.

Preheat a pizza stone, the oven, or grill – however you’re cooking your pizza.
Spread the sauce onto the crust then top with cheese and chicken.

Bake until the crust crisps and the cheese melts.

Top with arugula dressed in olive oil and vinegar or Italian dressing.

We seriously swooned over this one. The chicken was from a rotisserie chicken that I had frozen. Pizzas are a great way to spread a small amount of the protein for topping! The sauce was flavorful, rich, and sweet. I love the raw crunch of the greens on a melty pizza. Some chopped parsley for some freshness and greens would be a great alternative.

Pulled Pork with Balsamic Fig Dressing on Ciabatta

A pork shoulder in the crockpot is like the gift that keeps on giving. I’d say definitively that pulled pork is the best of any leftovers, hands down. I make it once in the crockpot and have about 6 servings. We had some as tacos and then I wanted to give it another spin with a bottle of fig and balsamic dressing from a Trader Joe’s haul. A little fig jam + a little balsamic vinegar would reach the same flavors without that exact dressing too!

I like the sweet but vinegary yet smoky pork on crusty ciabatta but any roll will do! My preschooler got a slider bun since that’s sometimes a better size for him and he’d be more likely to eat all the bread skipping the pork unless sized well. I made some sweet potato tots and called it dinner. Here’s the Balsamic & Fig dressing I used but I’m including a quick fix for just a single use without buying it!

Balsamic + Fig Pork Sandwiches

Ingredients (for ~4)

1 1/2 – 2 cups pulled pork (~8oz, cooked)
1/2 cup Balsamic & Fig Dressing (or 1/4 cup balsamic vinegar, 1/4 cup olive oil, 2 tablespoons fig jam whisked together)
4 rolls
2 cups arugula
1-2 teaspoons olive oil

Directions:

Preheat the oven to 300-degrees.
Mix the pork and some of the balsamic & fig dressing together gently. Taste and add more if needed.

Warm the pork either in the microwave, or in a skillet.
Toast the rolls in the oven for about 5 minutes, until warmed through and just lightly toasted.
Toss the arugula in the olive oil until dressed and lay onto the bottom buns.
Top with pork and a drizzle of dressing more.
Enjoy!

I liked this for a different twist on pork! If you buy fig jam, it is fantastic with a salty cheese (thus why it is sometimes sold near the cheeses) but it is also great for a Fig & Prosciutto Panini, or on pizza!

Trader Joe’s Becoming Balanced Meals

Every influencer can show you their Trader Joe’s haul, but it is easy to leave Trader Joe’s with fun things that don’t really get you closer to a complete meal. I don’t pretend anyone can/should do all their grocery shopping there, but Trader Joe’s is suchhh a lifesavor at this stage of my life for meal starters or a hands-off main dish! These shortcuts to getting varied dinners on the table is a huge asset to me. If I’m not strategic shopping at Trader Joe’s, then I do leave with fun things that have me scratching my head of how we’ll eat them or did I just spend $50 on things that don’t go together and I’m still not ready for dinner?

Here are a few of my favs, and what I do with them:

Orange Chicken + Edamame in the shells + brown rice:

I usually make the rice that morning, or the night before, to speed us up. The package comes with 2 packets of sauce so making half is an easy option. The breaded chicken is baked then gets tossed into a sticky sweet sauce. This is a true fav of ours so we make the whole thing for 2 adults, 1 preschooler who eats like a teenager, and a leftover serving for lunch. He looooves popping edamame out of the pods too so it is fun to eat a veggie in a different way.

Cauliflower Gnocchi + Pesto:

TJ pesto is the best out there- of any brand. It freezes well too if you don’t want it too often when opened. The frozen cauliflower gnocchi is such a hit for TJ fans. It does taste like cauliflower but the true trick is that it shouldn’t be prepared according to the package! Saute in a pan with just a tiny bit of water. Get it some toasted/golden sides and toss in pesto for big enough flavor to lean towards gnocchi instead of cauliflower. Make 2 packages if serving more than 2 people. For 2 adults and a little kid, 2 bags are really necessary. This is a 10 minute dinner in 1 pan. Done.

Eggplant Cutlets + pasta + sauce:

I love plain kitchen ready tomatoes instead of regular sauce but Trader Joe’s has some good sauces too! Their pasta there is always super cheap but I had some on hand. More importantly, the eggplant. It is the best, and one of the only places to find it! I love it to be eggplant parm, eggplant parm subs, on pizza, in calzones, in grilled cheese even, and it is great as a stack with cheese, sauce, and the above pesto! Because it is frozen it is easy to pop a few into the oven or toaster oven!

Veggie Fried Rice + Dumplings + other mix & match Asian-inspired goodies

The veggie fried rice only takes a few minutes to cook in a pan and while we love it, I think it needs a little drizzle of soy sauce or teriyaki sauce. The pork potstickers are great and easy to make just a few. There are always other fun Asian inspired frozen foods to mix & match like bao buns, spring rolls, etc. I also like to cook a few pot stickers alongside sesame noodles. These freezer goodies really make dinners feel different. Roasting some broccoli then topping with a sprinkle of black sesame seeds is a simple side. I’ve also tossed cucumber in sesame oil & rice vinegar for a 2 second side!

Roasted Corn + Chicken & Cheese Tamales:

The roasted corn is so fun and a great side to tacos or inside burritos. We probably have something Mexican once a week so I like having this around. It is great in Mexican Street Corn. Tacos + roasted corn + a few chips makes for a fun dinner. I love the tamales and Mr. J and I liked mini chicken tacos but the little one wasn’t as into those. I should try again though. This corn is often a side and I open up some black beans to go into the tacos or on the side too.

Sauces & Pantry items:

These can be a bit seasonal – I was shocked to find Marsala sauce a second time, but the Trader Joe’s bottled items are really fantastic and great time savors. When I had just a little leftover marsala sauce, I added some veggie broth, mushrooms, and marsala wine to stretch the leftover sauce a bit. I was inspired by a balsamic & fig dressing and can definitely put this Island Soyaki to work. I grabbed Chili Lime seasoning and the umami seasoning to try them out. I make my own Everything But the Bagel but that is a fantastic one too! Having a sauce on hand can really make basic dinner items come together quickly. Adding any of these sauces to some turkey meatballs over rice or egg noodles would make for efficient meal with salad or veggie of your choice. Or using a sauce with chicken to become a sandwich or panini would be delicious.

Their bakery items are also great- the focaccini rolls are super soft and a fun way to elevate a sandwich or the pretzel buns with sausage & peppers is so good. I always grab some snacks. The sesame sticks are a constant and I like their trail mix variations into portioned packs. I can’t ever get over how economical their cheeses are! I sometimes grab frozen fish and the refrigerated pastas are helpful to be quick dinners too!

Game Day Snacks

I’m mostly into the Superbowl for the snacks and commercials so my home team playing is just a perk. I did watch to see who would go to the superbowl! If you haven’t planned your snacks, get on it! I have quite a list and need to narrow down a bit! We aren’t having a crowd so I’m still assessing what snack food we want to have. Our preschooler looooves when we have snacky dinner- as in, not a traditional meal. Maybe we’ll have something with him and then more when kiddos are asleep an hour into the game!

Nachos seem like a must-have so loaded waffle fries is a definite way to kick it up:

Bacon Ranch Deviled Eggs will be gone before you know it, and are a good snack to make ahead of time or to bring since they don’t need reheating! Seriously, people chuckle when they see deviled eggs yet they’re always gone before I know it whenever I bring them somewhere. I’m sure I’ll make some since they are easy to just make a few of.

Skip the veggies with hummus and put this Greek Dip together- no cooking required! Layer hummus on the bottom, top with chopped cukes, tomato, feta, and Italian dressing and pita chips or wheat thins to dip. It is a crowd pleaser and couldn’t be easier. Packing tip: bring the hummus, chopped veggies & feta, and dressing all separate and assemble in 1 minute when you arrive at your viewing party.

I’m thinking about pigs in blankets (after finding mini chicken sausages! score!) and a dip seems necessary. What else, well, only time will tell!

A whole bunch of flatbread-ish pizzas on naan are great for a crowd. Build-your-own anything is fun- build your own sandwich/panini would be a festive option. I’d love to do build your own nachos with queso in a crock pot if I were hosting a group! Happy snacking!

Ham & Cheddar Pizza with Mustard Drizzle

Fastest pizza/flatbread ever! I thought about a panini but then wanted it to be a pizza. Wheat naan make the fastest pizza crust ever and I love the individual servings. The really good quality cheddar cheese makes this, and of course the caramelized onions don’t hurt either.

Ingredients: (for 4)

4 naan
1 small white onion, cut into slices
2 tablespoons cream cheese
1 tablespoon dijon mustard
~2 cups shredded sharp white cheddar
2 slices spiral cut ham, diced
4 tablespoons honey mustard dressing

Directions:

Preheat the oven (and pizza stone if using one) to 400 degrees.
In a small pan, cook the onion in butter or olive oil over low heat for about 20 minutes, or until gently caramelized.
Mix together the “sauce” of cream cheese and dijon.

Spread it onto the naan.
Sprinkle cheese on top, then add the ham and onions.

Bake for 15-20 minutes, until the cheese melts and the naan starts to crisp. The naan stays mostly soft but the edges crisp a little.

Let cool for about 2 minutes out of the oven, then drizzle with honey mustard dressing.

I loved this! Outside the box pizza toppings are some of my favorites and this was the ideal leftover for some holiday ham slices that made their way into our freezer. Our pre-schooler is obsessed with honey mustard so it was my nod to him too. He ate about 1/3 of one, which I thought was a pretty solid quantity since he often likes his foods separate and meat isn’t always his go-to! It was a reminder too that 2 slices of ham went a very far way when chopped up to become 4 individualized pizzas!

This could be a fun brunch one too since topping it with a fried egg also sounds delicious!

Capsule Meal Planning

Capsule wardrobes are definitely a thing so why isn’t capsule meal planning a thing? I’m doing it! Capsule wardrobes are a smaller selection to mix and match to make choosing easier. Meal planning needs some of those same principles! Starting a meal plan for the week can feel daunting but having a plan, getting the ingredients, maybe doing some prep in advance, and sharing the plan with those eating it are all keys to success. I always meal plan factoring in weather, speed/ease of prep, and what we have going on but why not add in a few more guidelines?

The Three Bite Rule - Pesto Flatbread
I tried it out a few weeks. I can honestly say it makes creating a meal plan so much easier. I haven’t quite set our themes we’ll do every week, but I’d guess during this busy season of our lives, I’ll keep: pasta/anything goes/takeout and that leaves 2 other weeknights to get creative or do whatever we’re in the mood for. Tacos/Mexican seems like a likely theme we may have most weeks too. Even 3 weeknights covered with a starting point seems helpful!

Packing Lunch

I had a really awesome perk of lunch provided at my last job so I’ve re-entered the lunch packing world in this new role. Plus, the little one eats more and more for lunch now so here’s a round up of our favs. My lunches always seem to be some-assembly-required. I need more ideas. What am I missing?

Mexican-ish lunches- rice, corn, salsa, half an avocado, quesadillas are always things I look forward to mid-day. Trader Joe’s tamales & 60-second grain packs make easy-to-pack lunches.

I’ve stashed these soups as a handy back up and then pack up hummus & crackers, a biscuit, etc.

Quiche is pretty handy for a few days worth. I haven’t made one in a while, but need to!

We found these Bento-ish boxes on Amazon that have made packing lunch easier. He eats it all cold so it all gets packed together. We were surprised & impressed by the quality.

He often has leftovers of a few things…quite similar to his dinner plate.

Sandwiches of salami/turkey or cream cheese & jelly or pita with hummus or a quesadilla. Or a bunch of things maybe some leftovers, some beans, with a cheese stick or yogurt put into a pouch

Plus a veg like tomato/carrots/tomato/edamame/broccoli and fruit like apples/strawberries/blueberries/clementines etc.

He can’t have peanut butter so that is his lunch of choice on the weekends at home. Wednesday is Pizza Day at daycare and is a wonderful mid-week break from packing up.

Mr. J is on his own for lunch but has his own pizza-day from his fav food truck.
