BBQ Chicken Pasta

Did you remember my smokey kielbasa pasta I made a few months ago? It was a one-dish-wonder and it had me thinking about variations. I was thinking about making it with a Mexican slant, or Italian, or BBQ. I thought BBQ was perfect to bridge the New England gap of a chilly night while being almost spring.

Ingredients:

2 chicken breasts, chopped
1 pound box short pasta
1 cup milk
1 cups chicken broth
1, 16-oz can crushed tomatoes
1 clove garlic, chopped
1 1/2 cup BBQ sauce
2 tbs liquid smoke
2 cups red and green peppers
2 cups fresh spinach
1 cup shredded cheddar cheese

Directions:

In a large pan (with sides) saute chicken until almost cooked through (it will keep cooking).
Add tomatoes, chicken broth, milk, garlic, and 1 cup of BBQ sauce to a medium boil in the pan with the chicken.
Once boiling, add pasta, and peppers stirring and covering for about 8 minutes.

Pasta will still be a bit firm. Turn to low and add spinach and cover again for 3-5 more minutes. The liquid will have reduced and the pasta will finish cooking.
Drizzle remaining BBQ sauce over the top and sprinkle with cheese before serving.

I like how easy it is. There’s a great sweet and smokey flavor and it is a great alternative to a traditional tomato based pasta. It would be good without the chicken too. We just can’t get enough of the Campanelle pasta. #winning

Grilled Chicken Caesar Salad Wrap

My event is over. Phew. I’m still just so tired. My head is spinning. There is a lot of stress, pressure, and info swirling but I’m happy. I’m happy how it went. I’m happy how our team did, annnnd I’m happy I don’t have to do it again this weekend already.

Now I’m detoxing. We work so hard and so long that eating and sleeping aren’t top priorities. Now I need to eat real food. I love organizing our meals but feeding that many people, with enough options, is exhausting. Every meal we were at I was thinking of if the next needed confirmations, to be picked up, or paid for. Now I’ll slowly get back to real life.

Ingredients:

1 large chicken breast (or 2 small, or 3 tenders)
1/2 cup creamy caesar dressing
2 tbs Italian dressing
1 head romaine lettuce
1/4 cup Parmesan cheese
1 cup croutons
1 tomato
1/4 cucumber
2 tortilla wraps

Directions:

Marinade chicken in 1/2 of the caesar dressing and Italian dressings overnight or for at least 4 hours.
Grill chicken until cooked through completely.
Chop/slice lettuce, tomatoes, and cucumber while chicken cooks.
Toss lettuce, Parmesan, and remaining dressing.

Cut cooked chicken into bite size pieces.
Assemble wraps drizzling with extra caesar dressing.

It was really good. I used tomato basil wraps and they have a nice sweetness to contrast the dressing. The chicken was really good off the grill.

Sandwiches are such a quick dinner. The quantity of chicken for this is so small, but is the perfect amount for a wrap. It is definitely an economical way to include some protein.

Totally unrelated. Here’s the pup Windsor. He was feeling ashamed after being told to get his head out of the dishwasher. He’d love to be a pre-wash if not told to stop…but isn’t that face so cute??

Teriyaki Chicken with Pineapple Salsa

Quick and easy. That’s the mode I’m in right now. My head whirls for the months of April/May. Buckle up, my mind is scattered and dinner is so important right now. Dinner is my stability.

Ingredients:

2 chicken breasts
1/4 cup teriyaki sauce
3 tbs honey
1 tsp garlic
1 cup pineapple, chopped
1 cup salsa
1/4 cup black beans
1/2 cup green onion

Directions:

Marinate the chicken in teriyaki sauce, honey, garlic, salt and pepper for at least 3 hours.
Grill chicken until cooked through.
Mix pineapple, green onions, black beans and salsa together.

Serve chicken over rice, topped with pineapple salsa.

This is so easy and most can be prepped in advance. The chicken could marinate all day while I’m working and I didn’t make the salsa from scratch…I just added to it. What a quick fix?!

I had a hankering for pineapple, but mango would be fresh too. I chopped a few tomatoes into the salsa too just so the pineapple pieces didn’t seem like the only big chunks. The cool fresh salsa is so good over smoky tangy chicken.

What I Ate: Chicken and Pear Sandwich

Sandwiches are such a great dinner. This chicken and pear one is inspired by one that used to be on the menu a Brighton Beer Garden. This sandwich reminds me of my early days in Boston.

I found some fun focaccia rolls but any bread would be good, and would make this into a good panini.

Ingredients:

Thin chicken breasts, marinated
2 focaccia rolls
2 cups arugula
2 slices cheese
1 pear, sliced

Directions:

Grill chicken until cooked through
Assemble sandwiches on rolls with arugula, chicken, cheese and sliced pears.

I think the focaccia and the cheese were definitely big parts that made it special.

I love arugula and it doesn’t get icky when the hot chicken is on it. I dressed the arugula with a little bit of Italian dressing. Delicious. Arugula is peppery and so good.

I’m jetting off to a wedding for less than 24-hours. Sound familiar? Wouldn’t be the last weekend in April if it weren’t craaaaazy.

Southern Chicken & Biscuits

I’m not into the Superbowl, but I like the snacks and the commercials. This would be a fun and easy game time food.

I was feeling especially southern when I planned this meal. I made a top-your-own crispy chicken sandwiches on biscuits. I went all-American on mine with ranch, lettuce, tomato, and cheese.

They were good, but tough to keep together to eat. I’d recommend making smaller biscuits than I did!

Ingredients:

Crispy chicken breasts or tenders
biscuits
veggies: lettuce, tomato, onion
sauces: ranch, honey mustard, bbq, mayo
cheeses: cheddar, Swiss, American

Directions

Bake biscuits according to package.
Bake chicken until heated through or until cooked through.
Prep toppings and let eaters top-their-own.
