This burrito got a fancy twist! It has chicken, rice, tomatoes, pesto, and balsamic. It is warm and melty with bright bold flavors.

Bruschetta Chicken Burritos
Ingredients: (serves 2)
2 tortillas
1/2 cup rice
1/2 cup chicken, shredded
1/2 cup cheddar cheese, shredded
2 tablespoons pesto
1 – 1 1/2 tomatoes, chopped
1 tablespoon balsamic glaze

Directions:
Warm the chicken, rice, and the tortillas so they’re pliable.
On the tortillas, layer the burritos with a smear of pesto, then rice, then cheese, then chicken, then tomatoes, then top with balsamic glaze.

Heat a skillet to medium heat.
Roll/wrap the burritos by folding the “sides” in and then roll away from you, tucking the sides in as you go.
Cook a little on each side to melt the cheese and crisp the tortilla just a bit.
Slice and enjoy!

These are so good. It takes so little chicken making it a perfect use for some leftovers. If the tomatoes aren’t too juicy, make it ahead and pan fry or warm when you’re ready to eat!
