Pickle Lemonade

I love pickle flavored anything and am very into all the pickle snacks around lately! This drink was inspired by Popeye’s pickle extravaganza (possibly named something different) with so many pickle flavored foods and a frozen pickle lemonade. This drink has lemon and pickles plus some cucumber and sugar to cut the extreme sour. Spike it with some lemon vodka if desired!

The rest of my fam isn’t as into pickles so making a single serve option was my method. I’ve confirmed my preferred chips (Utz pickle ones are best, Aunt Vicky’s are spicy pickle and in 2nd but hard to find, Doritos pickle ones are 3rd, Pringles pickle chips are 4th).

Pickle Lemonade
Ingredients: (for 1)
8 oz lemonade
2 slices lemon
3 slices cucumber
1 teaspoon white sugar
4 pickle chips or 1 spear, chopped
2 tablespoons pickle juice

Directions:
Add lemon, cucumber, and sugar to a glass or shaker and muddle it to get it crushed, mixed, and all the flavors out.

Add in the lemonade, pickle juice, pickle slices, and vodka – if using. Shake or stir well.
Add ice and a pickle garnish. Enjoy!

I loved it. The cucumber adds some nice freshness against the strong pickle and lemon. This would be great to offer as an option to spike or not per drink. It wouldn’t be everyone’s pick(le) but I loved it and will totally repeat as a fun treat…a drink with a pickle garnish to snack on is the best!

Strawberry Lemonade Smoothie

This is a crowd pleaser smoothie if I ever made one! This was an oldie that needed a refresh and it was so good. I poured some leftovers to be freeze-pops! The lemonade is refreshing and the frozen strawberries make it icy and thick.

There are lots of ways to customize it – swapping the yogurt can increase the protein, adding more lemon will give it a more lemon flavor, and adding greens or banana or other add-ins can help it be more of what you want.

Strawberry Lemonade Smoothie:
Ingredients: (serves ~2)

2 cups frozen strawberries (must be frozen)
1 cup vanilla yogurt
16 oz lemonade
2 tablespoons ground flaxseed

Directions:
Add strawberries, yogurt, and ground flax to the blender.
Start with half the lemonade and blend. Add more if you prefer it more sip-able, or leave as it for more spoon-able.

I love this one and hadn’t made it in awhile. I almost exclusively make the peanut butter and jelly smoothie though I’m due for a mojito smoothie.

Honey Cinnamon Chai Latte

Cheers to the new year! This was such a special beverage for an afternoon treat. The sweetness and spices are so good with thick foam.

Honey Cinnamon Chai Latte
Ingredients: (for 2 servings)

1 chai teabag
1/2 cup heavy cream
2 tablespoons honey
2 teaspoons cinnamon or cinnamon sugar

Directions:
Brew the tea.
While the tea is steeping, add a teaspoon of honey to the milk and froth the milk with a frother, or warm just enough to take the chill off and shake in a jar, or make whipped cream!
Stir some cinnamon or cinnamon sugar into the tea and top with the honey foam.
Enjoy!

Cherry Lime Refresher

Bottoms up – cherry season is short so let’s have them every way possible – drinks included! I didn’t spike this one but go for it! This was a perfect mid-afternoon drink to sip while getting some stuff done. I can see this being ideal by the pool or for happy hour.

This one features some lime juice & simple syrup (or limeade), dark cherries, and topped with a few bubbles.

Cherry Lime Refresher
Ingredients: (for 2 drinks)

~3/4 cup cherries, pitted (fresh or frozen)
1 lime, juiced
2 teaspoons simple syrup
1 1/2 cup ice
1/2 cup bubbles (tonic, soda water, sparkling water, sprite, or soda)

Directions:
Chop the cherries and add to a glass with the lime juice & simple syrup and stir.

I loved this. The cherries are great and so sweet so the lime fits perfectly.

The cherry pitting trick is to push the pit through with a metal straw or a wooden skewer or a chopstick since I never want to track down a 1-task tool. I find dark cherries in the freezer section too.
