Chicken Enchilada Casserole

Have you ever used corn tortillas? I guess I don’t know how to use them! I had an enchilada mishap I figured I’d share with you. Not that any of my meals are pefect but I think everyone needs a reminder that not everything goes to plan. The meals that do go to plan are just more fun to blog about.

They were super crumbly. I tried soaking them in water but they still cracked.

Then I threw in the towel. I shredded the tortillas and made it casserole style.

We ate it anyway. Ohh well.

  1. Way to roll with the punches! It looks delicious despite your tortilla troubles. Sometimes what works is to put them in the microwave and heat up for a 5-10 seconds at a time.

  2. I’m Mexican. You have to warm up the tortillas first. We have an actual tortilla warmer thing we use, but you can probably just put them in the microwave. Also, I am way too lazy to make enchiladas because they take a long time, so I kinda do the casserole thing, but i don’t shred them, i just lay them down, put in the filling, then lay down more tortillas on top and cover it with sauce. super easy and no one can ever tell
