Way to roll with the punches! It looks delicious despite your tortilla troubles. Sometimes what works is to put them in the microwave and heat up for a 5-10 seconds at a time.

We have an actual tortilla warmer thing we use, but you can probably just put them in the microwave. Also, I am way too lazy to make enchiladas because they take a long time, so I kinda do the casserole thing, but i don’t shred them, i just lay them down, put in the filling, then lay down more tortillas on top and cover it with sauce. super easy and no one can ever tell
