Chicken Meatball Alfredo with Cranberries

About a month ago, Mr. J and I left the little one at home with the most qualified babysitters (his grandparents) and we went on a date! It was our first time out without him and boy were we rusty on date planning. I had been eyeing a pub-ish restaurant with fun burgers and a great beer menu. Turns out, it is closed. womp. womp. We then went through 2 more options and set out for a 3rd spot. On a whim, we checked in at Isabella Restaurant (which was our 4th restaurant idea, where the wait can be an hour on a TUESDAY) and they just had a table for two open up. Perfect!

It is sooo dark in there so there’s never a chance for a photo but the menu is always creative, pretty seasonal, the portions are substantial, and everything they make is excellent. I wish it were a bit more affordable, but this splurge was fun to celebrate our first date out. I got Turducken Meatballs that were turkey/chicken/duck meatballs with dried cranberries, spinach and red onions in a parmesan cream sauce. The meatballs were ah-mazing and I knew I wanted to recreate it at home, but I simplified it. Don’t get scared off by the cranberries. They’re such a great addition and this pasta dish wouldn’t be the same without them. Ditto for the red onion.

I used frozen chicken meatballs and ready-made alfredo sauce to turn my #restaurantrecreation into a speedy weeknight dinner. Everything cooks quickly so I had to move fast and keep an eye on it to not overcook anything. The meatballs I used were fully cooked and I didn’t want to obliterate the kale, onions, or cranberries so they were very lightly cooked.

Ingredients:

chicken/turkey meatballs (about 2-3 per person, I used frozen caramelized onion chicken meatballs)
1 15-oz jar alfredo sauce
refrigerated pasta (I used a 9 oz pkg of linguine)
1 tbs chopped garlic
2 cups chopped kale
1/4 cup red onion, sliced fine
1/4 cup dried cranberries

Directions:

Bring salted water to a boil for the pasta.
While the water heats, defrost the meatballs (if frozen) and chop the kale and onion.
Add the alfredo sauce to a large pan and add in the meatballs, garlic, onions, and kale over medium low heat. Cook for about 3-5 minutes, to warm everything and to cook the kale a bit.

Stir, and add in the cranberries to cook for another 2 minutes.

Cook the pasta according to the package. My fresh pasta only needed about 2 minutes. When al dente, add it to the pan with the sauce to cook just another minute or two.

The fresh pasta makes a huuuge difference and is a great touch for a special treat. I like that the onions add a bite with the cranberries providing a tang and touch of sweetness. Spinach or arugula would be good in here too instead of the kale. If I were going all out, I’d make the sauce (and meatballs) myself but throwing this together was just so easy but became different flavors for us. I doubt I’d think to use red onion.

Fun fact: if red onion is too strong or overwhelming, or if you’re using it raw, you can soak it in cold water for 3-5 minutes. It’ll tone it down a bit while still giving some flavor.

Chicken Taco Pizza

This pizza was almost something entirely different. One of my toppings spoiled before I got to it so that pizza will just have to hit on my to-make list until I get to it next. I tossed the slimed produce and then thought: what in this fridge can become pizza? The answer: everything! I had chicken and then I spotted our favorite bean dip that got me thinking Mexican pizza! I’ve made Taco Pizza on a Tortilla Crust and Taco Pizza Topped with Salad but this one is different because it sports this unbelievable bean thing. It’s not quite a dip, not quite a salad. We eat it as a side dish or dip tortilla chips into it. So good.

Ingredients:

1 large chicken breast (or 2 small), cut into cubes
1-2 tbs taco seasoning
1/2 ball pizza dough
1/2 cup salsa
1/2 cup tomato sauce
6 oz shredded mozzarella/cheddar/jack cheese
1 cup 3 Bean Fiesta dip/salad
3 green onions, chopped
1 avocado or guacamole

Directions:

(make the 3 Bean Fiesta dip/salad in advance)
Cook the chicken in the taco seasoning until cooked through.
Preheat the oven and pizza stone if using one, to 400-degrees.
Roll the dough out to be a thin flat circle, or as close to that as you can get. Immediately place onto the pizza stone to cook slightly and to stop it from shrinking back to a ball. Poke a few holes into the dough.
Bake 15 minutes until lightly cooked and starting to brown. Then remove from the oven.
Top with tomato sauce & half of the salsa, cheese, chicken, and 3 bean fiesta. Then return it to the oven.

Bake 15-20 minutes until the cheese melts and the crust browns. Remove from the oven and let sit for 5 minutes before slicing. Top with green onion & remaining salsa.

I liked this pizza. The tang of the 3 Bean Fiesta is really the wow factor. The sweet/acidic bite to it takes it from being just beans on a pizza to a whole different flavor. Plus, it has corn, green pepper, and onion to make it really taco-ish. I love it but 3 cans of corn, plus the other veggies, means you really need a few people eating it, or some solid plans for the leftovers. I use the leftovers on salad, on tacos/burritos/quesadillas, as a side dish, or still as dip. It is best a few hours after making it but everyone loves it and I can’t say enough good things about it.

Buffalo Chicken Pizza

Something I really missed while pregnant was blue cheese dressing. It wasn’t even a banned food I have all the time but I was definitely ready for it. (This one from the refrigerated produce area is my fav). I used some for this super quick buffalo chicken pizza as lunch one day. Blue Cheese dressing became part of the sauce and some drizzled on top. Pita bread as the dough is, hands down, the easiest way to whip up a pizza. Plus, it works perfectly when making pizza for one. Since there’d be zero nutritional value, I was glad this was a single serving.

Ingredients:

1-2 breaded chicken fingers
1 Wheat pita bread pocket
1/4 cup blue cheese dressing
4 tbs hot sauce/buffalo sauce
1/2 cup shredded mozzarella

Directions:

Bake the chicken according to the package.
Mix together most of the hot sauce and most of the blue cheese dressing for the sauce. Taste it and add dressing or hot sauce to taste for your preferred spice level.

Cut the chicken into chunks and toss with some hot sauce.
Spread the buffalo blue sauce onto the pita.

Then top with cheese, then with chicken. Drizzle any extra sauce over the top.

Bake for 10 minutes at 375 degrees until the cheese melts and the pita crisps a bit. I used the toaster oven.

My chicken chunks are somewhat massive for the size of my pizza but I didn’t care. I was loving the buffalo and blue cheese together, plus each getting to shine on their own too. The chicken is crispy and the pizza hit the spot. You could always add celery, if you’re into that…I’m not a celery fan. I used wheat pitas because why not pretend there’s one healthy thing happening here?

Mr. J doesn’t like spice but these little pita pizzas are perfect to customize easily. They also freeze well if you wanted to make & freeze them, or prep them with just sauce and cheese to add toppings before eating sometime. I love good pizza crust but not messing with dough is pretty sweet as well.

Chicken and Kale Enchiladas

I haven’t made enchiladas in a while but I also had some kale I was hoping to sneak into something. Enchiladas seemed perfect. To tell the truth, I’m not a fan of raw kale but it is a good veggie to tuck into other foods. I know, I feel like anyone with a food blog is supposed to loooove kale. The health benefits are amazing but I find it so tough. Chard & spinach often score higher than kale anyway and I like them better. Greens, like kale, work well to dice up and treat like an herb. I didn’t highlight it, but it has a good place here.
Chicken & Kale Enchiladas - The Three Bite Rule
This was a perfect make-ahead meal. I made the filling while I was making my lunch (see my taco salad with avocado lime dressing). Basically I ate pretty similar lunch and dinners on the same day, but I’ll take Mexican meals any day.

Ingredients:

4 chicken tenderloin pieces (or 2 breasts)
2 tbs taco seasoning
10 oz black beans (3/4 of a can)
4 cups kale, with ribs removed
6 oz shredded cheddar
8 wheat tortillas
1 1/2 cups enchilada sauce

Directions:

Dice the chicken into chunks and sauté with the taco seasoning until cooked through.
While chicken is cooking, remove the ribs from the kale and chop. Steam the kale for 3-5 minutes to partially cook.
Mix together the kale, black beans, and chicken.

Assemble the enchiladas with tortillas, filling, a sprinkle of cheese. (save some cheese for the top)

Then roll them up and place with the seam-side down into a baking dish sprayed with non-stick spray.

Pour enchilada sauce over the top and bake for 30 minutes.

Top with cheese and bake for another 5 minutes until cheese melts. Or refrigerate until you’re ready to bake. Or freeze for future use. I made 2 pans, each with 4 enchiladas. I baked one and froze the other.

These were really good. The sauce has some zip to it and the wheat tortillas, kale, and beans, make them a bit more nutritious. The filling really could be anything. Mine was heavier on kale and beans than chicken.

If you have any leftover filling save it and add some brown rice for a lunch burrito bowl!

Chicken & Wild Rice Soup

I don’t make soup often enough and this was one I made in stages. It was really good practice to cook in shifts of however long the little one was napping. I baked the chicken when I had the oven on for dinner one night and I made the rice the next morning when I had a few minutes. This soup was so easy and one I’ll definitely make again.

Ingredients: (makes ~4 servings)

4 chicken thighs
wild rice
1 1/2 cups chicken broth
1/2 cup water
5 carrots (approx. 2 cups)
1/2 cup milk or cream (I used 1% milk)
1/2 tsp dried thyme

Directions:

Bake chicken until cooked through. (I used a few boneless, skinless thighs and a few drumsticks and then made some broth from the drumstick bones). Cut the chicken into spoon-sized chunks. Prepare rice according to the package directions. (I used Near East Long Grain & Wild Rice Mix which definitely added to the soup flavor).
In a large pot, add the chicken, rice, and broth over low heat.

Cut up the carrots into coins (steam/boil/cook first if eating the soup upon completion, or let raw carrot pieces cook in the soup if you’ll let it simmer longer).
Add the carrots, thyme, & water to the pot.

Cook for 20 minutes then add the milk/cream. (Cook longer if the carrots are raw).

Taste and season with salt & pepper as needed. I didn’t add any salt because the rice mix had a flavor packet that seemed like plenty.

I loved this. I went heavy on the carrots but you could add celery, onions, or whatever veggies you have. The thyme is what makes me think warm, comfort food like stuffing or pot pie.

Add more water when warming any leftovers.
