Apple Cider Muffins

I hesitate to drop the word donut – but these are like apple cider donuts. It would be idyllic to be in an orchard with the crispy edge, but these are easy and add just a touch of whimsy to a regular morning on the go.

Apple Cider Muffins
Ingredients (for ~15 muffins or 12 muffins and 1 mini loaf)

2 cups flour
1 1/2 cup sugar
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1 1/4 cup apple cider
1 egg
2 tablespoons butter
1 tablespoon vanilla extract

topping:
4 tablespoons cider
1/4 cup sugar + 1 tablespoon
1/2 teaspoon cinnamon
1 tablespoon finishing sugar or turbinado sugar

Directions:
Preheat oven to 350-degrees.
Mix together flour, sugar, baking powder, cinnamon, ant salt.
Mix together apple cider, egg, melted butter, and vanilla.
Stir the wet and dry together.

Pour into muffin cups and mini loaf to 3/4 full.
Bake 35 minutes, until a toothpick comes out cleanly.

Allow to cool for 5 minutes.
Mix together the topping syrup of cider, cinnamon, and sugar.
Brush over the top.

Sprinkle with finishing sugar and cinnamon.
Enjoy!
