Chicken Curry Burrito

Will it burrito? Say it: yes. it. will! Chicken and peppers with red curry sauce easily formats to a burrito to be hand-held! If you know anything about curry – you can head elsewhere now. This is purely for fun and not authentic, by any perspective.

Chicken Curry Burritos
Ingredients: (serves 2)

2 tortillas
1 chicken breast, shredded
~ 1 cup bell peppers, any colors
1 cup rice
1/4 cup red curry sauce
cilantro or parsley or greens, chopped

Directions:
Toss the chicken in a tablespoon or two of sauce.
Chop and sautée the peppers.
Assemble the burritos with a smear of sauce onto each tortilla, then rice, then herbs/greens – mine was arugula, then chicken, then peppers, add more sauce if desired.


Heat skillet to medium heat.
Roll up the burritos by folding the sides in and rolling the closest part over and stretching it tight.
Spray with non-stick spray and grill each one, rotating to crisp the outside.

Considering we’re going for an out-of-the-box burrito, you could add some white cheddar. Right? Next time!
