Big Mac Pasta Salad

Summer sides needed some love and I took these iconic flavors, minus the burger, and added them to a pasta salad dressed in thousand island dressing.


Lettuce, tomatoes, pickles, onions, cheese, sesame seeds, and thousand island dressing come together for a really instant pasta salad.

Big Mac Pasta Salad
Ingredients: (serves ~ 6)

1/2 pound pasta
1/3 cup mayo
1/3 cup ketchup
2 tablespoons sweet relish
1 teaspoon dried onion
1 teaspoon sesame seeds
1/2 – 1/4 white onion
~1 pickle/1 cup pickle chips
1 small tomato
1/2 cup shredded cheese
1 cup shredded lettuce

Directions:
Cook the pasta and allow to fully cool.
Mix up the thousand island dressing and toss the pasta in it.
Chop the lettuce, tomato, onion, and pickles. Add everything to the pasta. Hold off on the lettuce if not serving immediately!

Mix well and enjoy!

I loved this. The kiddos were mixed- they don’t always care about pasta salad so let’s not take their verdict. We had it with some grilled chicken. The next day I had it with lots more lettuce, additional pickles, and chickpeas. It was so good as a meal!
