Breakfast Tacos with Maple Mustard Sauce

Go crunchy for these tacos with soft scrambled eggs topping them with a maple mustard sauce to take them from breakfast to brunch in the best way possible. It seems extra, but is addictive and completes them.

Crunchy Breakfast Tacos with Maple Mustard Sauce
Ingredients: (for 3-4 tacos)

4 eggs
4 strips of bacon
tomatoes/red onion/green onion/avocado
1/2 cup shredded cheese
2 tablespoons honey mustard
1 tablespoon maple syrup
1 teaspoon taco sauce/salsa
1/2 teaspoon taco seasoning/chili lime seasoning
sprinkle of everything bagel seasoning
3-4 taco shells

Directions:
Pan fry the bacon until crisp.
Warm the taco shells in the oven or toaster oven slightly…don’t let them burn.
In a cold pan, gently cook the scrambled eggs over low heat just until cooked.
Assemble the tacos with some cheese, eggs, bacon, more cheese, sprinkles of everything bagel & taco seasoning, and tomatoes/onions/toppings.

Mix up the sauce of honey mustard, maple syrup, taco sauce or salsa, and a shake of taco seasoning, then drizzle the sauce over the tacos.

These are incredible. I absolutely needed crunchy shells with the soft eggs. The toppings are endless as long as something cool and fresh make it on!

The maple-y sauce could tweak to be more aoli-like or creamy with mayo or sour cream. Dijon would add some zip swapping it for honey mustard. I liked a few drips of hot sauce on here too, or mix that into the sauce. Use some taco leftovers to elevate bfast tacos, or make these as a twist for taco night!
