Pumpkin Whoopie Pies with Maple Cream

https://serenityspaonline.com/jta93lo74b Something Pumpkin had a natural spot on on my fall list but I thought I needed to go beyond pumpkin muffins or pumpkin bread.

I made super easy pumpkin muffins but these Pumpkin Whoopie Pies with Maple Cream definitely step it up. Keep in mind, I’m not a big baker. I relied on a whoopie pie cookbook I fully recommend. I made oatmeal whoopie pies a while ago and they were amazing!

Pumpkin Whoopie Pies

Ingredients:

2 ¼ cups flour
1 tsp baking powder
½ tsp baking soda
1 tbs ground cinnamon
1 ½ tsp ground ginger
1 tsp ground allspice
1 tsp ground nutmeg
½ tsp salt
1 cup brown sugar
½ cup unsalted butter, room temperature
1 ½ cups pumpkin
1 egg
1 tsp vanilla

Directions:

Cheap Valium China Preheat oven to 350-degrees and line baking sheets with parchment or spray whoopie pan.
Mix flour, baking powder, baking soda, cinnamon, giner, allspice, nutmeg, and salt.
In a stand mixer, mix brown sugar and butter on low.

Add pumpkin, and egg, beating well.
Add vanilla and beat until combined.
Mix in flour mixture.
Scoop out equal patties and bake about 15 minutes each.

These guys were a bit cake-y for my liking. The flavor was great and they were pretty easy. If you like cake-y (versus gooey) desserts, then this one will be perfect. The pumpkin adds a textural element which I love, but think it works better as muffins.

Maple cream

Ingredients:

https://sieterevueltas.net/h14su5npxse ½ cup unsalted butter, at room temperature
2 cups confectioners’ sugar
1 tbs milk
2 tbs maple syrup

Directions:

In a mixing bowl beat butter, add sugar, milk, and syrup.
Mix 5 minutes until well mixed.

The maple cream was good but wasn’t as thick as it looks. Cream cheese frosting would be really good and might hold up to the pies better. Here’s to next time!

I tested out a veggie side using Country Crock and it was awesome! I tried my hand at a few Thanksgiving-y dinner items.

Smokey Maple Brussels Sprouts

Ingredients:

3 tbs Country Crock
4 slices of bacon
1/4 cup maple syrup
a few drips of liquid smoke (optional)
1/3 cup dried cranberries (optional)

Directions:

https://space1026.com/2024/01/9ufy43jwyq8 Steam brussels sprouts until just starting to soften (they’ll cook more in the pan)
Melt Country Crock in a saute pan.
Add brussels sprouts to Country Crock and cook for about 5-7 minutes on medium high heat, stirring occasionally.

Once sprouts have begun browning, add in maple syrup, liquid smoke, bacon and cranberries.

Cook another 2-3 minutes, stirring well, then remove from heat.

This was great. Bacon makes everything better so don’t forget that one. I added some liquid smoke to give it a touch of earthiness. The bacon adds that too, but I think liquid smoke is a great addition to anything with bacon. I put it in chili too. The Country Crock adds the perfect golden creaminess without too many calories or trans fat.

https://therepairstore.ca/apqtl7akddl I also made  stuffing cups so my Thanksgiving side wouldn’t be lonely. This wasn’t really a recipe, I just added and threw it all together. I gently cooked onions in a few tablespoons of Country Crock.

I added in two different kinds of bread, chopped with chopped apple, thyme, and a splash of white wine.

I baked it for 20 minutes in muffin cups so it would be single serve-able.

They didn’t stay together too well. Ohh well! I liked how perfect the textures played together. The apples and onions totally helped make this better than out-of-the-box. Can you believe how few ingredients it takes?!

Thanksgiving Sandwich

I have a quick post for today. I have a super long weekend and I’m psyched to get ready for our visiting family!

I randomly thought of Thanksgiving sandwiches one night for dinner when it was rainy and gross out. It was a fun one and super fast. I know nobody needs a recipe but I did want to throw the idea out there. I’ll have to make some more deli-like sandwiches soon.

One of my favorite Friends episodes features a Thanksgiving Sandwich with a Moist Maker. Sooo funny. I’ll have to try soaking bread in gravy for the middle sometime too.

We had the rest for lunch the next day. I really like the different textures and temperatures of thanksgiving sandwiches. The warm stuffing and cool cranberry makes this very special.

Multiple Christmas Dinners

We really tried not to wish Christmas away while awaiting our closing date and moving day. Christmas is a multi-day, multi-state, multi-family celebration for Mr. J and me. We coordinate our travel plans to spend time with his family in Maine and with my family in Greater Boston. It’s so fun, quite tiring, and there’s many meals. Here’s my recap of how those days were enjoyed through the meals.

At my family’s holiday, we are all about the traditional foods year after year. Apparently we cannot (or will not) break a few of these food traditions. On Christmas eve the R family has soup (clam chowder)

My dad madee an amazing antipasto salad. He’s not really the cook in our family so we were impressed!

On Christmas morning, we have coffee and a cheesecake-like coffee cake while we start gifts. It had apricot jelly and almonds on it.

During a gift break, we have brunch with this casserole assembled the night before. It has rice, ham, cheese, eggs, and asparagus. It’s creamy and delicious.

Christmas dinner was a surprise this year. Turducken! I was sooo excited to try it. We weren’t overly impressed and I think their suggested cooking time was way too much.

We weren’t sure it would feed the 7 adults attending so we had a few heftier sides like this awesome shrimp dish (just shrimp, butter, and ritz).

We had a Yule Log since it’s Dad’s favorite.

In Maine Mrs. S recreated my failed apple bacon stuffed French toast. Amazing. It was so thick, sticky, and had plenty of crunchy bacon. I loved it and I knew somebody else could do it right.

For lunch/dinner we had a cool ramen and cabbage salad. I’ve never had one with grapes and I loved it.

We had some crockpot dishes that were good for feasting throughout the afternoon. The turkey meatballs we delicious.

I wish I got a shot of the cake balls. I mean I ate enough of them there really wasn’t an excuse not to get a photo.

Christmas was really fun and we are always so grateful to make it to both families.
