Hosting at my house also means that I won’t have people complaining to me about a tee shirt. Seriously, this is my life.

I hosted a few of my fav couples for brunch. I tried not to go crazy with the menu but I was psyched to put a few new serving pieces into action. I did as much prep the night before as I could and it made for a pretty easy morning. There were 6 of us and 4 puppies and 1 toddler. It was a beautiful day and I was so thankful some of this group together for brunch before everyone had to head in different directions.

I’ve made a few breakfasts pizzas in the past. I made one bfast pizza with hashbrown crust which was better in theory than in execution. I’ve also have done one bfast pizza with egg cracked on top.  This time I went more scrambled but still don’t think I hit 100%. I topped a crust with cheese, bacon, and tomato. I baked it a bit more and then topped it with scrambled eggs, more bacon, and fresh chives. The crust needed a bit more time to get crisp. The timing was the challenge here. I had a few other items in the oven, I was getting stuff together, and I was scrambling the eggs. It was good, but not amazing. It has such potential though. The crust needed more time to get crisp and the eggs should have gone on only for a minute or two, then it should be served right away.

I cold brewed coffee for ice coffee. I also froze some coffee into cubes (but forgot to serve them!). Cold brewing is interesting. It definitely makes better iced coffee. We had some leftover and I’ve been enjoying it to no end. Mr. J said we need an iced coffee drip in the fridge!

I love brunch and think the choices need to vary sweet and savory. I was thinking about a smoothie station but thought maybe it was too much work for people to do themselves. Then I had it! Yogurt Parfait Bar. Yes! Top-your-own is the best. Everyone can customize! I served vanilla Greek yogurt with granola, cinnamon chips, walnuts, brown sugar, toasted coconut, dried cranberries, and chocolate crunchies. I put out some disposable wine cups for serving and we were good-to-go. It was an easy/low prep dish. Annnd maybe I also wanted to use this 6-dish server.

I got cool silverware holders for my birthday from my sis. These are so great!

Finally, I think food labeling is one of the easiest things a host can do. The holders were a fun antique gift. They’re supposed to be placecard holders but I don’t do sit-downs and Momma R thought they’d be perfect for my dish labels. I like people to know what it is without having to either ask, or skip it not knowing what it is.

Blueberry and Brie Stuffed Waffle

Happy Monday! I’m back from a week-long vacation to Bermuda so even Monday is happy. It was such a great family trip and I will have some photos to share. Today we’re talking about brunch. I hosted brunch yesterday but my camera is still the residence to vacay & brunch photos, my luggage isn’t 100% unpacked, and I’m just happy to have a post for you.

Then I discovered a pin for a fun party theme which lead me to a blog, which later lead me to my reader with lots of unread blog posts which distracted me from this post. Short & sweet it will now be!

Blueberry & Brie Stuffed Waffles

Ingredients:

1 cup blueberries
1/4 cup blackberries (or raspberries)
1 tsp sugar
1/2 cup blueberry pancake topping (or 1/2 cup blueberries macerated, 1/2 tsp lemon juice, 2 tbs water, 1/2 tsp cornstarch)
1/2 tsp cinnamon
1/2 tsp vanilla
1 tbs heavy cream
4 oz brie, sliced

Directions:

Buy Diazepam Online Cheap In a medium sauce pan, add blueberries, blackberries, sugar, blueberry sauce, cinnamon, vanilla, and heavy cream over medium-low heat. Stir well and keep an eye on it for when it gently boils.
Prepare waffles to your liking

Turn the blueberry sauce to low once it has boils so it can thicken.
Assemble waffles with 1/2 waffle on the bottom, topped with sliced brie, then topped with blueberry sauce. Finish it with the other 1/2 of waffle on top, or serve open faced.

I loved this. I like brie and I don’t usually seek out sweet breakfasts. I think this was a good sweet/savory balance. I  prefer it cooked/melted. It is creamy and mild but has such a distinct flavor. It gets gooey which is balanced by the crispy waffle and the sweet blueberries popped. It was perfect! I usually eat/serve the rind on the brie, but that’s personal preference.

I kind of cheated with the blueberry sauce. I had some from Stonewall Kitchen and really wanted to use it up. I added more blueberries and just a few other ingredients to liven it all up. The blueberries and blackberries were frozen and often appear in my smoothies. Frozen fruit is best suited to be cooked or made into a sauce after being frozen. I was using up stuff all over the place!

I hadn’t cooked a special breakfast in months. It was so great to have this treat one Sunday after my event, before vacation.

April Recap

Hooooooly crap. It is May. HOW did that happen. I’m stunned  I suddenly have what feels like zero days until my event happens. My entire year’s worth of stress happens all at once…and let me tell ya, I’m not a pretty picture right now. April was a good month with some good dinners. I hope May leaves me still with enough energy to  get a bit more creative.

March Recap

How is it April already? March is over? I’m not ready for April. Then it will be May and I’m certainly not ready for May. March is a month that is scary that it is over, but man, I don’t want to do it again. I had a doozy at work. The worst thing that could have happened, happened. As we say while working in events “it wasn’t my fault, but it is still my problem.” Ugg. I’m tired just thinking back. I think we’re on the up-and-up. I think I fixed it. This just wasn’t supposed to be the site and vendor I had to worry about. Guess ya never know.

March was a good month. My birthday was delicious and left me feeling really special. It was definitely a happy one. This cake could make anything happy, but you know what I mean

I blogged about a lot of smoothies this month. Peanut Butter & jelly smoothie was a hit on pinterest. I made an amazing Mocha Nut Smoothie with nutella and coffee #ohhmygoodness. Here are some Smoothie Tips and a Citrus Smoothie. The best smoothie I made was a Creamsicle Smoothie

I reviewed a cookbook, which I haven’t done in awhile. Breakfast for Dinner is a keeper, and according to my analytics, this was a fan favorite too!

I felt like I was due for some pizza. I made a Greek Veggie Pizza that was outstanding. It was such a great meatless fresh pizza. It reminded me that spring was coming and the freshness is worth the craziness at work.

This 1-dish-wonder Smokey Pasta with Kielbasa was one I was really happy with. I don’t make many pastas but this was spot-on. It didn’t quite get the attention I think it deserved. It also re-heated well for which I was very grateful.

This work challenge definitely means that I’ve had muuuuch more work. Expect to see some fast & easy ones and whatever crosses my mind. I’m proud that I’m keeping up because I need the constants in my life that keep me sane. It’s all happening!

April will be a whirlwind. I don’t want to blink and miss the spring. I have to hurry up and get some wintry foods done that have been kickin’ around before it is too late!

What I Ate: Easiest Banana Muffins

What I Ate is a series that might not necessarily require a recipe but these muffins are a prime example of a recipe to file away and whip it up when the time is right.

Pinterest introduced me to a shortcut banana muffin recipe just like the pumpkin muffin shortcut I loooove. Do you follow me on Pinterest? They’re so quick and really easy to make. I’m not a big baker but these came out perfectly!

I made these guys before I knew how badly I’d need warm banana goodness. Work has gone bananas…to put it mildly. Bananas I tell you. Thank goodness I had these for the week. I think my crisis is averted. I’ll be sure to shower my local co-workers with these soon to thank them for all their support. When the goings get tough, the tough get going. For sure.

Ingredients:

1 box yellow cake mix
4 very ripe bananas (small or 3 large)
2 eggs

Directions:

Mash bananas or use a mixer, or food processor.

Add in cinnamon, nuts, dried fruit, chips, or anything you like! (I added cinnamon & cinnamon chips)
Fill muffin cups or a sprayed loaf pan.

Bake 20 minutes, or until toothpick comes out cleanly.

These are suuuuper easy and are such a good use for discount bananas. I love discount produce and these bananas were a steal. Forty-three cents for 6 bananas. Forty three cents. I froze some of the least ripe bananas in chunks for future smoothies.

February has been a snowy & busy month. Mr. J and I (along with all New England residents) got about 2o” of snow in one sitting. We’ve been back and forth to Maine a few times to see the C family. I hosted our February R family dinner.

Work is bananas in February. As in, it is so frenzied that I have the “I feel like I came to class without my homework” feeling. Did that feeling paralyze you? I’ve had the pleasure of dealing with some incredible difficult personalities within my local bureaucratic permitting agencies. #EventLifeIsntSmoothSailing #CitiesHateNonprofitEvents

What else happened this month? I got hopelessly addicted to Downton Abbey. I’ve completed season 1 and I can’t wait for more. Thanks to all who haven’t ruined season 2 & 3 for me. We “adopted”/brought home/took custody of the C family dog, who got her Three Bite Rule debut here.

What I Ate: Turkey Cranberry Brie Panini

What I Ate is a series of posts that don’t exactly warrant a recipe, but hopefully are inspiring if you’re stumped for dinner ideas, or if you’re new to cooking…these guys are easy. Has this week felt like a doozy to anyone else? Easy dinners keep us all sane. Nobody is at his or her best when hungry.

Paninis are the best. I like that they totally simplify dinner, only use a few ingredients, are pretty cheap to make, and provide leftover staples. What more could you want out of dinner? I served a salad bar and paninis to a group and it was a hit. I think both are customizable and crowd-pleasing.

For this particular one, I wanted something that felt seasonal or winter appropriate. Paninis are great in the summer to avoid heating up the oven, but anywho…I digress.

Ingredients:

wheat nut bread
4 oz sliced turkey, per sandwich
3 oz brie
¼ can whole berry cranberry sauce
2 tbs strawberry jelly

Directions:

Heat a grill pan, panini press, or frying pan over medium heat sprayed with non-stick spray.
Assemble sandwiches with cranberry spread on one side, turkey slices, and brie slices.

Grill sandwiches a few minutes on each side until crisp and until cheese is melted.
Serve and enjoy!

I love brie with berries. I added some jam to the cranberry sauce so it wasn’t quite as tart. I splurged for carving board sliced turkey so it was more like real off the bird turkey breast. It was worth it. It wasn’t a very veggie-centric menu but it was fast, cheap, and flavorful.

I love my press. I use it regularly and love that it has removable plates (grill, griddle, and waffle inserts) that are dishwasher safe. It is super handy for quesadillas and opens flat to be a larger 1-sided surface. It is really helpful to multi-task or do a few at a time but a frying pan will work well too. It even lets me unhinge the top so it closes evenly and doesn’t squish the back of the panini more than the front. Genius.

I served these bad boys with some sweet potato tots for a super easy dinner to keep the nightly options varied!

Cost:
Carving board turkey breast: $6.47 (served 2.5, for $5.16 for 2 people)
Brie: $4.99 (served 4, for $2.5 for 2 people)
Cranberry sauce: $1.99 (served 8, for $0.49 for 2 people)
wheat bread: $3.49 (served 8, for $0.87 for 2 people)
total: $9.02 for 2 people, or $4.51 per person. Your fav lunch spot charges LOTS more than that.

Planning your weekly menu? Sliced chicken or ham would be good too. Don’t go buying ingredients you won’t use again! I love whole berry cranberry sauce. In fact, it’ll prob sweeten up my smoothie or be the star of my oatmeal since it isn’t just for dinner to me!

Roasted Cauliflower Soup

Spoiler alert: the soup isn’t life changing. It is good enough. Maybe yours will be better. The flavors were great, it was perfect for a chilly day- I just wish I had a better blender. If you have a good blender, whip up this soup. (literally). I was itching for soup to complete my fall list. It is a good one to celebrate Boxing Day.

Ingredients:

1 head of cauliflower
2 tbs good olive oil
1 cup milk
½ cup sour cream (or plain yogurt)
1 tbs grated parmesan cheese
1 tsp chopped garlic
salt & pepper

Directions:

Cut the florets off the head of cauliflower and roast in a 400-degree oven coated liberally in olive oil, salt and pepper.

Add milk, sour cream, Parmesan, and garlic to a blender or food processor.

Blend until smooth. (mine was less than silky textured)
Add salt and pepper to taste.

My blending was kind of a catastrophe. I tried my food processor, my smoothie machine, and an immersion blender. My smoothie machine is a Magic Bullet and has been kicking since about 2004? It was my best option here. I just couldn’t do much at a time. It does not chop or dice like advertised. It can puree really well though!

My food processor and blender is one machine and has severely let me down. The blender part doesn’t work well. It whirls and doesn’t seem to do much. The food processor has been great (for the few months I’ve had it) but was dribbling and didn’t even make it smooth.

The immersion is just an attachment to my hand mixer so I don’t expect much…rightly so.

I make frozen fruit & yogurt smoothies verrrrry often to know the liquid ratio is often important, the fill level affects it, and manually scraping the sides or stirring it can help greatly. I was very frustrated and thought it would have looked lovely if it was smoother.

It tasted good. I drizzled a little truffle oil on top since that can make anything better. I served some crunchy toasts on the side for dipping. We liked it, but I wasn’t satisfied with the consistency.

I learned that my tools were inadequate in this circumstance but that Mr. J will make the best of any dinner, despite how frustrated or disappointed I get. It was also a great reminder that roasted cauliflower is reallllly good and I should just make that sometimes. Maybe I’ll redeem myself with another soup. I love pumpkin & black bean. Loaded baked potato could be fun with toppings. Corn chowder is fun. Hmmm. The wheels are churning.

Thirsty in the Bahamas

Don’t worry…this is the end of my Bahamas vacay recap. Our last day in the Bahamas before heading back to the cruise ship seemed like the perfect time to grab a smoothie at the cutest little hut you’ve ever seen.

We soon realized that apparently it was election day. Do you know what Bahamians don’t do on election days? They don’t drink. Liquor isn’t served on election days. How interesting?! We got our smoothies sans liquor and enjoyed them just as much.

I chose mango & sis chose a mixed fruit one. I liked hers better and wondered why I didn’t go with strawberry, a seemingly obvious choice for me. Ohh well. Next time. Ohh, wait, we were in the Bahamas on the last day.

While we’re speaking of drinks on vacation, we took advantage of the 2-for-1 happy hour on the cruise one day. I thought: there are 2 of us, and we’ll pay for 1 drink. Nope. We got 4 drinks and paid for 2. It was fun to tote the 2nd along with us to dinner after a few rounds of skip-bo. I got a traditional mojito and sis got one called something like Strawberry Lava or Strawberry Fiesta or something like that. Half pina colada and half strawberry daiquiri.

Hers was too sweet for me, but it was definitely a fun cruise-y drink garnished with fresh pineapple. Mine had a great amount of mint. It wasn’t super muddled but my straw + ice cubes helped with that.
