Cuban sliders were the perfect answer to some leftover pulled pork! This was leftover from the new Blue Ribbon BBQ location near our house for my birthday! It was so good with BBQ sauce but for leftover pork, transforming it is the best. Pork is just too easy to do that with! Some went into quesadillas, some have become tacos in the past, on pizza, in a panini, and the list goes on.

Cuban Sliders

Ingredients:

~1 cup pulled pork
2 slider rolls
1/2 cup shredded swiss cheese
~6-8 pickle chips
3 tablespoons yellow mustard (I mixed yellow mustard and & sweet golden mustard BBQ sauce)
(sliced ham would make this a true cuban)

Directions:

Preheat the oven to 375-degrees. Warm the pork through.
Slice the buns, spread mustard onto the top and bottom. Layer the pickles then the pork onto the rolls.

Sprinkle the cheese on and pop them into the oven for ~5 minutes until the cheese melts.

These were so good! The mustard and pickles took it from barbecue to a Cuban sandwich. These would be fun cut into smaller pieces if using bigger, oblong rolls as an appetizer.

Veggie Calzone with Fire Roasted Tomatoes

I saw some really delicious sounding stuffed shells by How Sweet Eats and decided to turn them into a calzone. I loved the idea of fire-roasted tomatoes, caramelized onions, and veggies so I put ’em into a calzone since I haven’t made one in awhile. I’d love these in a baked pasta with penne, or on a pizza, or for a panini! There’s lots of room here for any veggies. Artichokes, mushrooms, and eggplant would be good too!

Fire Roasted Tomato & Veggie Calzone

adapted from How Sweet Eats Vegetable Stuffed Shells
Ingredients:

pizza dough, at room temperature
1/2  yellow onion
1 zucchini
1/2 teaspoon Italian Seasoning
1/2 can fire roasted tomatoes
1/4 cup ricotta
1/4 cup fontina, chopped
1/2 cup mozzarella, shredded
sprinkle of wheat germ/semolina/corn meal

Directions:

Caramelize the onions: chop and cook in a teaspoon of butter and a teaspoon of olive oil on low, for about 20-30 minutes, stirring regularly.
Preheat the oven to 400-degrees, and a pizza stone- if using one.
Chop the zucchini into 1/2-inch disks then into quarters. Roast in a pan with a drizzle of olive oil, salt, pepper, and Italian Seasoning.
Roll out the dough, or manually stretch it out between 2 hands working it into a big circle.
Sprinkle some wheat germ/semolina/corn meal onto the pizza stone or baking sheet. Next lay the dough out off center, so what will become the bottom is centered.
Assemble with shredded cheese, caramelized onions, ricotta dollops, fire roasted tomatoes, zucchini, and fontina are all spread out, then repeat. Fill it all the way getting close to the edges, and with toppings piled high.

Fold the dough that will become the top over the insides. Pinch the edge closed, or roll it under the bottom. Poke a knife into the top to create some air vents.
Bake 30 minutes and check the dough has puffed and become golden brown. Then bake 10-15 minutes more, as needed. (Parbake just until set- 20 minutes and then refrigerate or freeze until serving. Then bake remaining 20 minutes until heated through).

I loved this one. Ricotta and multiple other cheeses is right up my ally. I don’t often use fire roasted tomato sauce because I’m so obsessed with Pastene Kitchen Ready Tomatoes instead of sauce that I never even think twice, but I loved the smokey flavor in here! Canned tomatoes like my fav, and the fire roasted ones, are so great for pizza or pasta because they’re not loaded up with sugar- like jarred sauce. The tomato flavor is much better and was just like I had on pizza in Naples, Italy. The birthplace of pizza knows a thing or two! For this, I spooned out the tomato chunks so the calzone filling wouldn’t be too watery.

This was also great to prep in advance. I made the caramelized onions and roasted the zucchini first, then later I assembled and par-baked during nap time. That meant just popping it into the oven for dinner. Voila!

You need to have the pieces and see where they can go. If they aren’t in the right spot, you move it around until it clicks. It can seem daunting but you need to start somewhere.

1) Know Your Audience:
Think about who likes what, who wants leftovers available, and who will be making what throughout the week. Also who would be likely to eat what. When feeding the little one, I go for something familiar with something new, or variety. Variety is key.

2) Look at Your Schedule/Weather and Write Out Your Plan for the Week:
I literally even schedule in leftovers or “anything goes” or breakfast. Not every day needs to be the. perfect. meal. or something totally new. Write it on a scrap of paper from the recycling, or onto a calendar, or on an app, or whatever works for you. I use a marker board calendar in the kitchen. I move the meals around depending what happens but seeing them in writing helps us.

August 2016 Recap

I’m never sad for August to be over. I really love September so I’m ready, bring it on. I really had a lot of favorites this month so it was a good month in the kitchen while still keeping most meals quick, flavorful, and fresh. The babe is so active and the bewitching hours are 6-7:30 so dinner is sometimes a scramble right now.

Some of my sangrias have been hit or miss in the past but this insta-sangria really was awesome with barely any time required! I think my Quick Sangria white cranberry strawberry juice was the right sweetness with a touch of tart to then pair nicely with white wine.

I try to bring out the panini press during the hot nights that I want something quick without heating up the whole house. I made a ham & havarti melt that was perfect and just a touch more special than the average ham & cheese.

Pair that sangria with a burrata bar and poof, instant party.

Then I tried a new grain and I’m so glad I did. I made Cracked Wheat with Greek Flavors Topped with  Grilled Chicken.  It was awesome and I’ve already made more since then. It cooks quickly, similar to rice but with much more nutrients. Cracked wheat is a wheat berry “cracked” into smaller pieces for quicker cooking, bulger is the next step being par-cooked.

The Little Man:
This guy. I can’t believe how big he is. He’s crawling and standing. Craziness. Where’d my little baby go? This month more than ever I feel like he’s a little person instead of a baby. The monthly photos might go by the wayside. This one took 2 days of outtakes. He just wants to move. He’ll be on his back for .5 seconds and then he’s rolling over and up to crawl away.

He loves swimming and crawling. He’s so proud when he pulls up to standing. He eats anything we give him and is 4th tooth is on the way! Thomas LOVES straps: the adjustable straps on his highchair, his backpack for daycare, on our totebags, anywhere. He sleeps like a champ at home and less so at daycare.

I made some lobster cakes that were really good. The breading is only on the outside so the inside is all lobster!

Ham & Havarti Melt

As much as most dinners at the Three Bite Rule are grilled in the summer, I’m still always striving for them to be varied and unique. Paninis are definitely a go-to category for me when I want to be sure I’m planning some quick ones that don’t heat the whole house up. I was proud this was so quick, especially now that the little one is so active and squirming all around during dinner/dinner prep time! I meant to use some raspberry jam but forgot to add it to the grocery list. I substituted Lingonberry jam, courtesy of Ikea, as my fruity spread.

Ingredients: (per sandwich)

2 slices of sourdough bread
1-2 tbs dijon mustard
2-3 slices of honey ham
2-3 slices of havarti cheese
2 tbs jam: raspberry/strawberry/cranberry/etc

Directions:

Preheat a panini press, grill plan, or flat skillet to medium high heat.
Spread some mustard on the inside of one slice of bread. Then top with ham then cheese.

Spread jam onto the inside of the other slice of bread and close up the sandwich.

Brush the bread lightly with olive oil, then flip the sandwich cooking that side down. Brush the top slice with olive oil and close the panini press.

Grill or fry until crisp and melted. Flip regularly to avoid burning!

I loved this. The Lingonberry jam is my jam. Pardon the pun. It has a tartness that is so perfect with salty ham and gooey cheese. Uhh I could eat this all the time. There’s something about it that says breakfast to me as well. Maybe that’s the not-wanting-morning-sweets in me. Anyway you look at it, this sandwich is good. Reallll good.

You could make a ton of these and keep them warm in the oven if you have a crowd to feed. Or make just one and you don’t have crazy ingredients hanging around. I think the jam and the sharp mustard are really necessary here…don’t skip ’em!

I served this melted masterpiece with some Cape Cod Chips and some cherry tomatoes in balsamic dressing. It was my such a great summer dinner. Mr. J tolerated not grilling dinner one night. Maybe the oozing cheese had something to do with it?

April 2015 Recap

I’m so happy it is spring! Sunshine! Flowers! Gahhh! I just want to be outside all the time!!! April was a fast and furious month with my return to work just in time to kick my event planning into full gear. I was so thankful to have a week of half days for the initial return so I could practice using my brain and wearing pants that button. Mr. J was home with the little one for 2 weeks and I really loved seeing them really bond while I went back to work.

I think the twice a week blogging is here to say. It seems to be a better schedule for me to have the chance to cook some good stuff but also not feel pressured to have every meal blog-worthy. Repeating meals or cooking without photos is nice, ya know?

My salad dressing this month was early but I was so happy with my Tuna Nicoise salad. It was the winner this month as my favorite. It also was my only seafood post this month. Oops. I’ll get on that.

I really loved this chicken meatball, cranberry, kale, and onion alfredo pasta dish. So good. This was my restaurant recreation that I just adored. It was oddly fulfilling to challenge myself to take the elements of a truly special dinner and recreate it as a quick weeknight meal.

We’re so in love. He’s just a joy. That doesn’t mean every day, or every minute is rainbows & unicorns, but Baby T is happy and that spreads to us. He is smiley and coos a lot. Baby T’s hair is cracking me up. There’s so much on the back and not much on the sides right now. He’s growing so quickly! Sometimes I look at him and think he’s like a wiggly little boy rather than my baby! I imagine I’ll do that for the rest of his life, am I right?! The other day I took the babe in the stroller and brought one of the dogs on a walk. I felt like a million bucks getting the 2 out at once! Windsor is such a good dog and I was really proud of him. To show my appreciation, I was realllly careful not to bump him with the stroller.

Likes: daycare! Phew! It was an easier adjustment returning to work and starting him at daycare than I thought. They’re really sweet and he seems happy. We all did well with the transition. He loooves daddy! This month especially Baby T’s face lights up and he cracks a huge smile when he spots his Dad. It is really sweet to see. He likes grabbing at toys hanging above him and holding toys.

Dislikes: sometimes the early evening nap/snooze isn’t on the agenda for more than 15 minutes. He had a few nights where he was vocal about not getting back to this nap.

Progress on this year’s goals: 

The Year of the Earring: ehh. I got several pairs for my birthday so I still had a few to be “new” this month.  

make more salad dressings: YES! I did it! I made dijon vinaigrette for my tuna nicoise salad. Seriously so easy.

factor more time into how long every-day tasks/trips will take: 
the daycare late fee is an incredible motivator/stressor to make this happen 😉

recreate restaurant menu items: 
I recreated a much faster version of the turducken meatball alfredo pasta I had from Isabella’s. Forget pinterest…restaurant inspiration is where it’s at.

be more adventurous with my reading selections: 
I didn’t read a ton, but I read The Children Act, which wasn’t amazing. Now I’m part way through Running the Books: The Adventures of an Accidental Prison Librarian. That one is more adventurous. I was all jazzed to read a Laura Ingalls Wilder Autobiography until I realized it was annotated. Yeah. It weighed about 5 pounds and had a zillion footnotes. You can’t just read that. 

use the crockpot more: 
Nothing this month. 

seafood once a month: 
I think tuna on my salad is going to have to count. I’ll do a better job in May, also since it is grilling season.  

 

BLT Pasta

After making the BLT Panini, I had some really good bacon leftover so I wanted to make something else fun with it. I have no trouble finding uses for it but I thought about adding it into a pasta and then decided to let it have the spotlight. Sundried tomatoes and spinach rounded out the BLT-ness of this and the sauce was really minimal. The minimal is good in this scenario since the 1980s are probably trying to reach me and take the sundried tomatoes back.

BLT Pasta - The Three Bite Rule

Ingredients:

6 slices of thick cut bacon
1/2 cup sundried tomatoes, sliced
3 cups baby spinach
1/2 pound pasta
2 tbs butter
1 tbs creamed cheese
1/4 cup milk
1/4 cup parmesan cheese

Directions:

Bring salted water to a boil for the pasta.
Pan fry the bacon until crisp in a large skillet, then remove and drain on paper towels. Remove from the heat and discard half the bacon grease (keeping half in the pan).

Cook the pasta to al dente according to the package.
Chop the sundried tomato and spinach to the size of your liking. I chopped the spinach just a bit and chopped the sundried tomatoes a lot.

Drain the pasta when cooked reserving a bit of the starchy water.
In the skillet with the bacon drippings, add in the butter and the cream cheese, melting over medium low heat. Add in the milk, pasta, sundried tomatoes, parmesan, spinach, salt & pepper.

Raise heat to medium and toss well to coat for 1-2 minutes. If it seems too dry, add in a splash of the cooking water.

I liked the simplicity of this dinner. I didn’t want the spinach to disintegrate completely, just to warm a touch. I’m all about sundried tomatoes lately. Sometimes you just need to revisit something to remember what a fun tough it brings. Roasted cherry tomatoes would be good too.

Bacon, Cheddar, and Caramelized Onion Quiche

This might be my new favorite quiche. Bacon and cheddar is a happy union but the caramelized onions add some sweetness to the party. I need caramelized onions in my life more often. I bought onions and then discovered I already had a bunch. Oops. Time to make a batch of caramelized onions before mine start growing sprouts. I made a big batch and froze the rest for the next pizza that needs a topping, or omelette that needs something special, or the next panini. If you’re going to take the time/patience to caramelize one onion, you might as well caramelize a bunch.

Bacon Cheddar & Caramelized Onion Quiche - The Three Bite Rule

Ingredients:

pie crust
5 slices bacon
3 eggs
2 egg yolks
1 cup milk
1 tbs dijon mustard
1/2 tsp cream of tartar
salt & pepper
1 onion, caramelized
6 oz cheddar

Directions:

Cut onions into thick rings then in half and half again the other way. Caramelize onions in a heavy skillet over low heat and 1 tbs of olive oil.

Cook over low, stirring occasionally for 30-40 minutes until lightly browned.

Pan fry the bacon until crisp.
Preheat the oven to 350-degrees.
Whisk together the eggs, yolks, milk, mustard, cream of tartar, salt & pepper.

In the crust, add in the cheese, bacon, and onions in layers.

Pour the egg liquid mixture over the top.

I love the smoky bacon with the sweet onions, with the sharp cheddar. Pure bliss. Quiche is perfect for breakfast or lunch and I loved having some on hand. I doubled the egg mixture (thanks to eggs from the ‘rents) and made my sis a broccoli cheddar quiche at the same time. A crust pack of 2 and plenty of cheese on hand helped remind me that making 2 quiches at once was the same amount of work as making one. Try it. Double the egg mix and use the veggies you have around and gift one away. It’ll feel as good as it tastes.
