Winter Veggie Grain Bowl

Ingredients: (serves 4)

1 cup dried farro
3 cups water or broth
1/2 butternut squash, pealed
1 zucchini
~2 cups mushrooms
~2 oz of sharp white cheddar cheese
1/4 cup dried cranberries
1/4 cup honey mustard or balsamic reduction or spicy honey

Directions:

Preheat the oven to 375-degrees.
While the farro is cooking, peal and chop the butternut squash. Spread it out onto a sheet pan, drizzle with olive oil and bake.
Chop the zucchini and add to the sheet pan.
Bake for ~15 minutes, adding the mushrooms and sprinkle with salt & pepper to cook for the last five minutes.
Slice the cheese and break into crumbles.
Plate farro onto the bottom of the bowls or plates, top with veggies, then add dried cranberries and cheese.

I really loved this one. The preschooler and toddler each loved it. The chewy farro has such texture with the roasted veggies. Swap the veggies for your fav and the drizzle of your choice. To me, the must haves here are the farro + dried cranberries + cheese. If meat is a must have, sausage or shredded roasted chicken would be good.

My college roomies and I had a weekend to CT to some wineries. It was magical. The best. These ladies bring me such joy and make me a better person. It was so wonderful.

This girl is so easy-going but feisty. I can see her snag her brother’s stuff, watch him to see if he notices, and put up a fight when he tries to get it back. She totally knows what’s up. She is good with routines- when we get home she puts her own shoes away and follows brother to wash her hands. It is adorable! She loves all food and can totally put it away. We’re so impressed with her ability to use a fork.

The Baby Girl:

She has a Cabbage Patch baby and my Raggedy Ann. Apparently she “owns” the dolls at daycare- she won’t let anyone else use them. I think some teeth are bothering her so she’s been a bit more testy. Baby C eats everything. She loves avocado, cream cheese & jelly sandwiches, and meatballs. She’s being Minnie for Halloween!

The Little Boy:

I haven’t quite set our themes we’ll do every week, but I’d guess during this busy season of our lives, I’ll keep: pasta/anything goes/takeout and that leaves 2 other weeknights to get creative or do whatever we’re in the mood for. Tacos/Mexican seems like a likely theme we may have most weeks too. Even 3 weeknights covered with a starting point seems helpful!

Since the last update, the name of the game is speed and ease. The little one is more into grains, veggies, pasta, and cheese than he is into meat at the moment so meatless is never a challenge for him.

Some of my favs have been the no-brainers, because that’s helpful for speed now that I’m verrrrry pregnant. I followed a few recipes that were great! I made a Roasted Veggie Lasagna from What’s Gaby Cooking with a cream sauce and I roasted butternut squash, zucchini, and grape tomatoes as the veggies.  Another recipe we loved was Peanut Rice Noodle Bowls with Curried Peanut Sauce from Eats Well With Others.

November 2017 Recap

November was full of all the fall flavors: sweet potato; sage; thyme; maple; and dijon! It was a busy month, but also so different than Novembers had been in recent years. I’m loving my new job and have been so appreciative of the chance to do this work. It feels weird to be new and not have all the answers or know style preferences. My team has had successes and I’m so glad to be busy. November wasn’t my healthiest month – separately having strep and a stomach bug put some dampers into my weekend plans twice! I blame the dentist for the stomach bug – prob not their fault, but it was the same day and I hate going so why not?!

No fun, but he was very well behaved and we ate toddler greatest hits so I didn’t have to extend too much energy: spaghetti; quesadillas; and leftovers. He and I are each struggling with how early it gets dark, but I’m loving how much pretend play he’s into- especially with toy animals, dinosaurs, and dress up. He got to watch TV for the first time to see the Thanksgiving Day Parade! He loooved it. I never noticed how many interviews there are until I watched with a toddler who just wanted to see marching bands and balloons. Every long stick he finds outside becomes a leaf blower so that’s been a lot of our November play! We’re getting into the holiday spirit – I’m all in, 98% of my spirit is already there! It makes me smile every time he refers to “Santa Closet”.

This year’s goals: 

Year of the candle: I had some spruce/tree scented ones with a bit of life but got a cinnamon-y candle that seems festive!
Grocery store re-invention: 
Ehh. Not so much in November.

Fall Fettuccine

Fettuccine with alfredo, sage, and butternut squash. This felt like a the dinner equivalent of warm socks and a cozy blanket on a brisk evening. I roasted the butternut squash and infused the sage into the alfredo sauce.  It was so fast, and SO addicting! Psssst. It was so fast also because I roasted the squash in advance, and used jarred alfredo sauce. Both made life easier and got dinner on the table ohh-so-fast.

Ingredients:

2 cups butternut squash, chopped into small cubes
2 cups alfredo sauce (use a jar, I won’t tell)
4-6 sage leaves (3 to cook in the sauce & 2-3 chopped)
1/2 pound of fettuccine pasta

Directions:

Roast the butternut squash in a drizzle of olive oil, salt, and pepper at 400-degrees for 20 minutes, flipping once.
Bring salted water to a boil in a large pot for the pasta.
Warm the alfredo sauce in a large pot over low heat and drop in 1/2 the sage leaves. Cook for 5-10 minutes, stirring often, then remove the wilty sage.

Cook the fettuccine to al dente.
Drain the pasta and toss in the sauce.
Mix in the remaining chopped sage and the squash.

This is such a great weeknight meal. I’d totally serve this to a dinner party, my toddler, or anyone. Somehow this week was brought to you by the herb sage. I love it in small amounts but feel like it has serious flavor. Here’s a good use if you bought some for Thanksgiving and need a very different feeling meal before or after turkey day!

October 2017 Recap

Happy Halloween!! Eat all the orange foods and then pass on over all the pb cups you find. Sounds like balance to me! October was a biggie for me. I wrapped up my former job and am settling into the new one. I didn’t take much time between since I had justtt gone on vacay but it was good to have a few weekdays with the little one. November was always the busiest of the year in my previous role, so I honestly have never looked forward to November as much as right now! The fall is glorious and I couldn’t be happier.

First things first, we had a yard sale. It’s a great feeling to let go of things. Also, I’m psyched to take the little one trick-or-treating! We bought a tool-belt toy since every stick we find outside is a pretend tool. I’m hoping November can include a day-date hike with Mr. J now that Zion has us prepared for all terrain. I also have a fun fall theme that was suggested to me to blog annnnd I have lots of fall food inspiration to come – definitely including flavors like cider, butternut squash, pork, sage, & pears.

This fall inspired breakfast sandwich is definitely me living my best life. A local everything bagel, maple sausage, egg & sharp cheddar, apple, and maple dijon spread. It cannot be topped.

This Butternut Squash Mac & Cheese had us feeling is this, or isn’t this healthy? Take your own stance, but the squash gives that pop of orange with minimal cheese. I had some leftover sauce and froze it…it sounds ideal before trick or treating!

The Little One:

I can’t get over what he can remember! He’ll make connections to a book we haven’t read 1-million times, or something we saw 1 time and it takes me a second to get there. He just told Mr. J about a his best friend at daycare. I didn’t know he knew that concept -it was really sweet! When he sees 2 of something he counts it as one for him and one for his cousin Nate. Food wise, this month he’s been wanting bagels, though his love for waffles hasn’t gone anywhere. He hasn’t gravitated to meat as much lately but I was thrilled to see him eat chili. Sometimes he hasn’t been into foods cooked all together, even when he likes the components – think: chili, pot pie, baked pasta. All fruits and all veggies are still a-go. He liked getting edamame out of the pods too. In October he ate at a few more restaurants than usual and other diners commenting on the volume he can put-away!

 

2017 Goals:

Year of the seasonal decor: I am stocked for Halloween and fall so I used October to prep for Thanksgiving to grab this cure Thankful sign. Thus, no photo yet.
do more dinner prep more in advance: Yup! The crockpot got some action with chili!
read more (and always carry my book on me): I am mid-way through 2 books. Stay tuned for a big November recap! I’m super excited for a pajama storytime I’m taking the little one to!
watch more movies: we watched The House which was funny – Amy Poehler is so amazing.
cook more fish: ummm, nope
focus on clothes that I really like: I have purchased so many work pieces, though I’ve been good about returning anything I’m not 100% into…which included 2 blazers & a sweater. I should be good for work clothes until after I’ve done holiday shopping!

Lasagna Rolls

I make lasagnas at least once a year, and make enough to have it several times. This time, I made it as roll ups and loved how beautifully portioned it was! I made 1- 9×12 lasagna and 2- 9×9 pans of lasagna rolls. One dish of lasagna rolls got slated to my very awesome friend who is now a mom of infant twins with 2 bigger boys. The fam could prob could use freezer food, right?

I made my own pasta this time too! It was so easy since it only takes the rolling on my Kitchenaid, and no cutting. I cleared a ton of room on the kitchen island and spread these out. I rolled the dough on the mixer, cut them a bit, cooked them, and then let them cool enough for the filling. I’ll totally make my own again!

Here are my other lasagnas, if rolls aren’t your thing: Traditional Lasagna or Lasagna Soup or Butternut Squash Lasagna or White Lasagna w/ Chicken & Spinach.

Ingredients:

1 pound lasagna noodles, cooked (not the “no-cook” or “oven-ready” variety this time)
8 oz ricotta
1 egg
1/3 cup chopped Parsley, Oregano, Basil or Arugula
1 cup mozzarella
~1 1/2 cups ground meat (optional)
1 cup tomato sauce (I like Pastene Kitchen Ready Tomatoes + a tablespoon of tomato paste + tablespoon Italian Seasoning)
(additional sprinkle of cheese after it bakes)

Directions:

Prep the meat, cooking through and seasoning with salt & pepper if including meat. Mix together the ricotta, egg, and herbs.
Lay out the pasta and spread the ricotta & herb mixture and top with mozzarella & meat mixture. Be sure to get the filling spread pretty evenly in a thin layer.

Add on the cooked ground meat, if using any.
Gently roll up from one end to the other. Aim for each roll to be about 2 inches high, any bigger and it’ll be a massive serving. Then place into a baking dish sprayed with nonstick spray.

Top with sauce and freeze (or bake to eat right away).

When serving, bake frozen lasagna rolls for 75 minutes at 350, adding additional cheese on the top for the last 5 minutes. Or let lasagna rolls defrost over night, or for 24 hours and then bake for 45 minutes with cheese for the last 5 minutes.

The pan I’ll bring to my friend was in a disposable heavy-duty pan. I topped it with sauce and covered it in plastic wrap. It has a plastic cover where I labeled what it is with heating instructions but that flimsy plastic cover isn’t great in the freezer, thus, why I go with plastic wrap. I gave more instructions than necessary, but hey- nobody wants a baked plastic-wrap fiasco when getting dinner ready for the little ones! Here are other food ideas to bring to parents of a newborn.

I seriously love lasagna, so I was very happy with these cheesy lasagna rolls. I’m the biggest lasagna fan in the house, so I was probably more into them than anyone else. Plus, we had just had regular lasagna a few weeks prior. I tried to spread ’em out, but I also attempt to have at least 1 meal per week that is from a freezer stockpile of batch-cooking. I believe there’s also a chicken pot pie hanging out just waiting on me to call it into the line up!

Breakfast Bake with Ham, Eggs, & Cheese

It is officially time for maternity leave. “I’ll be back”. In the meantime, I have a few goodies to share out here in the blog-o-sphere until I come back. Enjoy!

Thanks to my parents’ hens, we always have a good supply of fresh eggs around. They have 4 hens who are dutifully producing about a total of 3 eggs a day, from the expected 1 egg per hen quantity. They often stop laying eggs in the winter but not these ladies. They are named: Henrietta, Helga, Helene and The Old Hag. There’s not really a way to know which is laying (or which hen is which!).

I wanted some variety in my freezer food supply so I figured there should be something breakfast-y. My ham was leftover from a spiral ham at Christmas that I chopped up and froze after we were tired of it. This is recipe is along the lines of a savory baked french toast and has infinite possibilities.

Ham, Eggs, & Cheese Breakfast Bake (serves 6)
Ingredients:
8 eggs
1 cup milk
1/2 loaf of Italian bread, or ~4 sub rolls
3 slices of spiral cut ham, chopped
1 cup cheddar, shredded
1/4 cup chives chopped

Directions:
Whisk together eggs, milk, salt & pepper.
Chop bread/rolls into 1″ chunks and mix into to the egg mixture.

Mix just to combine. The bread will be soft and have absorbed the egg/milk mixture so don’t overmix or the bread will lose shape.

Spray a baking dish (or individual ramekins or into sprayed muffin tins) with non-stick spray. Preheat the oven if serving immediately, or prep labels to freeze.
Spoon into the dish(s) and bake at 375-degrees for 30-45 minutes until set, or cover & label to freeze.

I froze mine and baked from frozen for 60 minutes. The edges will lightly brown, it will puff up, and the center will set when fully cooked.

I loved this. It is puffy and light but filling. I thought the ham was fantastic but you could easily substitute whatever you like. I went lighter on the cheese since I didn’t want it too heavy and figured we could be spared a few calories while still getting the cheesy flavor and texture.

It was a nice alternative to some of my other freezer foods (butternut squash lasagna, burritos, stuffed shells, pulled pork, etc). I made one that served 4 and a smaller/more shallow one that would serve 2. I froze them for a few weeks but think this would hold up in the freezer for quite awhile…a few months?
