Happy almost-Easter! Sis and I dyed eggs and got really into it! There were techniques and tools. Ohh my!

I cut painter’s tape to make a chevon egg.

We did some rubber banded dyed eggs. They came out like tie-dye!

We broke out some nail polish. That made the easiest dots. Crackle top coat polish made a white-wash looking on.

I haven’t dyed eggs in years and it was really fun. I’m glad we tried our hands at some different techniques.

Don’t forget: cooled eggs will dye better; white vinegar will make the dye more vibrant. Have fun!

Happy Christmas Eve! I love all eves! My birthday eve is exciting! My hometown celebrates Independence Day eve as to not outshine the big city’s fireworks on the real day. Thanksgiving eve was always a relief in school days.

I don’t have a real post for you. Maybeeee I’ll be back to it for Boxing day. If not, this’ll have to tide you over.

Here are my favorite gift-able foods in case you forgot anyone who has been nice.

Bacon Jam - Make a double batch. Trust me.

Grown Up Caramel Corn would look lovely gifted in a glass jar.

BBQ Peanuts again are addicting and would survive nicely in a cellophane bag tied with ribbon. No other wrapping needed!

Napkins with homemade napkin rings are a fun gift. You can buy the napkins and the craft is hugely simplified.

Or these coasters couldn’t be easier (or cheaper) and the supplies come from a hardwear store which won’t be overrun with holiday shoppers Use wrapping paper if you don’t have scrapbook paper on hand.

Any culinary gifts on your list to Santa this year?

Instead, I’ve decorated for the holidays (check out the tree we cut ourselves!)
I have travel posts coming up, soup, a potluck, some holiday foods, and a cookie swap. Stay tuned!

Are you still feeling full of thanks? I’m feeling ever so thankful lately. I love this season of thanks, kindness, and giving.

Mr. J and I spent some time last weekend handing out turkeys and Thanksgiving fixings with our local food pantry. It was a wonderful day and felt so good to know 130 deserving families in our area would have a meal to share with their families. They were so thankful. I was brought to tears when one woman I was helping to her car told me she hadn’t turned her heat on yet.

The food pantry had a great system in place and I was thrilled to see how much the recipients got. In addition to the turkey, they got to choose a pie, then they got a roasting pan for the turkey filled with sides. I was glad we could help since we’re so lucky ourselves. I’ve never been hungry and it breaks my heart to think about it.

My sis and I are signed up to deliver baskets to critically ill patients in a few weeks. My office has taken on filling these wish-list baskets before, and Mr. J and I did some last year. Community Servings delivers 395,000 meals to critically or chronically ill patients and their families annually. They offer nutrition counseling and hands-on job training. Their mission is inspiring. I love how much they fill gaps real people face and how genius they are in using what they already have to help others.

It is lovely to read facebook posts expressing gratitude rather than complaints. I have so much to be thankful for and I this season is a great reminder of how lucky many of us are.

I hosted a mini family dinner and was trying to come up with something easy that I could assemble and not spend the whole visit in the kitchen. All praise the crock pot! I decided I’d try my hand at white chicken chili.

I took a looksey at Flying on Jess Fuel’s chicken chili since her recipes are always healthier than other folks. (Seriously, check out her collection of fall foods!)

Hers was thickened by mashing up some of the beans which is genius I opted for a slightly easier approach. I wasn’t kidding when I said I wanted to dump stuff into the crock pot and walk away!

Ingredients:

3 large chicken breasts, pre-cooked & shredded)
29-oz can white beans
2 cans green chilies
1 ½ cup corn
2 cups chicken broth
1 jar light alfredo sauce
1 tbs cumin
1 tbs garlic
1 large head of kale, chopped
1 large onion chopped
1 medium tomato

Directions:

Boil and shred the chicken
Put everything into the crock pot.

Cook on low, stirring occasionally, for 3-4 hours.

So easy! This cooked away while we hung and chatted. I made some cornbread muffins the night before. I made them in my whoopie pie pan and they were the perfect size…smaller than my muffin top pan.

When it was time to eat I set up a bar of toppings and let everyone have at it! I had some salsa verde, black olives, sour cream, tortilla strips and the corn muffins.

I liked the consistency. I was soupy and only a bit creamy. It was so chock full of pieces of chicken, kale, corn, beans, etc that I think if it was thicker it would have been too much. I loved it, but thought I should have sweated out the onions a bit to soften them before dropping them in.

I have a 6 quart crockpot and it was full to the brim. Five of us ate it that night and I have about 4 more servings for lunches. I also think this counts towards my fall foods list. Check!

I can’t even describe how lovely our Portland, ME weekend was. Well, I’m nothing if not wordy so I’ll try. I fell in love. I’m in love with Mr. J and we LOVED celebrating our one year anniversary in Maine for the weekend. It was beautiful and the Old Port is just too cute. Why didn’t I know about this before?!?! It was so great to wander, eat, shop, gaze at light houses, and not run around like crazy tourists.

Check out Mr. J’s Portland pics here.

My mum suggested we check out The Holy Donut. What. A. Find. I didn’t know I liked donuts that much until I went here.

They make these amazing homemade potato donuts in incredible flavors (think sweet potato ginger, or pomegranate, or dark chocolate peanut butter glazed, or dark chocolate sea salt). Before you bail. Don’t think you’re “not into donuts” if you’re only thinking spongy sogged donuts of the legendary Dunkin. I’m not into those. I’m all about these Holy Donuts. Amazing. Life changing!

I don’t know if I want to admit how many we got…let’s call it a sampler.

I eased my way in falling hard core for the dark chocolate seasalt. The special of the day was apple with cider glaze. Ohh my fall-goodness.

This one was created for me and was hands down my favorite: bacon and cheddar donut. I was surprised that it was a filled donut. None of their others are filled but this one is warm and oozing salty bacon and melty cheddar inside a sweet donut. It is like a monte cristo. Mr. J didn’t love it as much. Muhahahaha. All the more for me!

The building was charming with some outside seating. Early Sunday morning folks made their way here to eat outside with the pup or on a leather couch with a newspaper. Nobody else seemed to have quite the spread we had, but hey, we were on vacation! The staff were great and enthusiastic. It reminded me of the family owned and run candy business I grew up working at. Although that business wasn’t my family, there was care in every item sold and consumed.

Now, to continue the important matters. Coffee. I ordered an ice coffee and then they filled my cup with coffee ice cubes. Love it!

Easy meal planning strategies to keep the menu diverse, manageable, and to minimize grocery trips during the week. Part 1 goes through how to come up with ideas and this Part II features my favorite grocery list ap! Continue reading →

I’ve been working in Santa Barbara for the last few days so on this long day of travel home, I have some more meal planning and organizational tips for you. Check out part 1 here! I get started by planning meals. I shoot for some diversity, balanced meals, and I try to be realistic on how long it might take. We like to pack up leftovers for lunch so I typically plan on a meal to serve 4 so the hubbie an I can have it twice.

After thinking about what is going on, what we’re in the mood for I peruse the pantry, fridge and freezer and then make a list.

Step two: grocery list
I keep a running grocery list as I use things up on an app for my phone called grocery IQ. It is one of my favorite apps since we can share the grocery list on both of our phones and I always have my phone when grocery shopping. This ap lets me scan barcodes but usually I’m not so specific as to which brand or size. It categorizes food automatically so you’ll see any produce items you added all together and not be crossing the store a million times. (Nope, Grocery IQ has no idea I exist and did not compensate me to endorse this ap. I just love it after trying a few others.)

I go through my meal plans and the pantry/fridge to see what I need each night for dinner and what might already be in stock. That helps me defrost since I loooove freezing things too. Maybe my freezing tips will be the next tip post!

Step three: implementing dinner plans
Not all plans always go as scheduled. Sometimes the meal is a bust or there’s not enough leftover for lunch. We often pack tomorrow’s lunch right when tonight’s dinner is over to grab and go in the morning. Salads are another typical lunch but get packed in the morning so that means fewer snoozes on the alarm. On an occasional act of preparation, I will get something going in the morning. It usually just means I had a few extra minutes.

Why it works for us:
It wasn’t fair that the dinner plans were always in my head. I’m happy to share them with Mr. J. It also means we’re not running to the store before even getting dinner going. It makes me more conscious about what I’m making and serving at any given time. He’s not asking what we’re having since he can see the week himself. Mr. J knows if he’s in charge of the meal or if I’m having him BBQ something etc. It also helps us figure out the timing if one of us is running and errand after work etc. There’s also something homey feeling to me that the week’s plan isn’t electronic.

When doesn’t it work:
Sometimes we’re still staring into the cabinets trying to think of something to eat that’s quick/easy. Usually we end up with pasta or breakfast item when that’s the case. It doesn’t mean that food is on the table awaiting our arrival. We rely on a commuter train so during a busy time at work, I don’t know when I’ll get home. None of my method is foolproof. I like when something spontaneous comes up since that just means I have the ingredients for a whole other night! I never want to say “no” to a fun plan because there’s chicken defrosting in my fridge.

I don’t usually plan out the weekend meals. Friday tends to be an unofficial take-out & DVR/movie night. I’m most often the shopper because my gym is in the same shopping plaza…what a suburbanite I am now!

I might jazz up the weekly schedule board itself. Our fridge isn’t magnetic so the menu board is also the home to reminders, coupons, save the dates, etc.

I think dinner would seem like a way more daunting task if I didn’t plan ahead and already have the ingredients. Grocery shopping at 7pm while being hungry is a recipe for disaster.

What works for you? Are you a planner? Do you dine spontaneously? Do you make something and eat it for a week?

I have a lot of catching up to do. I just got back from a wonderful anniversary weekend away and I have quite the backlog of posts for you. Here’s one from a few weeks ago, but not to worry. You can still catch it.

I was lucky to join Ms. L for the Langham Hotel‘s chocolate bar at Cafe Fleuri. It was delicious and I’ll let the pictures do most of the talking. There were so many amazing treats. Everything I had was great and I was sure to choose wisely since there was sooo much to chose from.

These macaroons were amazing…one of my favorite items of the day.

This was hands down my favorite item. There was something about Peanut Butter Bomb in the name. The tan part was soft peanut butter dough with a peanut butter center on some dark chocolate with a milk chocolate mousse.

Thankfully they had some salty treats to keep us going. They make their own potato chips!

I felt a bit wasteful since anything I deemed unworthy I didn’t go beyond the initial bite. There were too many good things to eat! We did a good job and left full without being sick, but it was overwhelming. I loved it for the price tag (free!) but I would be hesitant to pay $40 for one sitting of chocolate. The desserts were really great, and there was an impressive spread of choices, but I’d only spend $40 on a box of chocolates I could enjoy until empty. I worked a gourmet candy store in high school and college so it isn’t lost on me, but free was fantastic.

Full 3 Bite Rule Disclosure: Our invitation from Google+ Local to the chocolate bar was completely complimentary but my thoughts, opinions, and words are entirely my own.

Did I mention we’re in the midst of a room reno? Mr. J and I are painting our bedroom. We’ve been dining and dashing upstairs to paint a coat every night. Here’s what we’re going for. I’ll be sure to show you the finished product (so excuse my poorly crafted mood board in the meantime).

We painted the walls an icy gray and the trim a bright white.

We have our eye on a gray tufted headboard (that appears to be back ordered). We need to pick out a new mattress too. The chevron rug is on the way to help the wood floors feel homey. We will hack our ikea dressers at some point too. Momma R finally has our go-ahead to make our wedding quilt. We have closets the entire width of the room with bi fold doors. The doors are Mr. J’s nemesis so we’re going to try to change them up too. We’re toying with the idea of a gallery wall or photo canvases. The pup might get a smaller bed since he only spends about 50% of his night’s sleep there anyway.

Have a happy weekend and just wait till I tell you what I’m up to this weekend!
