Ingredients:

pizza dough
8 oz shredded mozzarella
4 oz fresh mozzarella, sliced
1 medium – large tomato, sliced
¼ cup bacon jam (recipe found here)
2 cups spinach or greens of your choice
1- 2 tbs ranch dressing (or dressing of choice)

Directions:

Top with shredded mozzarella then tomato slices, then fresh mozzarella. Add dollops of bacon jam.

I only had a little basil so I threw that on. If lettuce on your pizza isn’t your thing, throw on more fresh basil.

I used spinach but any greens would do, and spinach could have easily been cooked onto the pizza. I like the warm vs. cool and alternating textures.

Happy September! It is fall! We can eat fall-ish foods and still enjoy the summer veggies & BBQ fun. To kick off some inbetween season food I give you ricotta cheese. I have a love affair with ricotta. NOT cottage cheese…that I avoid. I can’t imagine when people don’t like ricotta, especially cooked into a dish. Like people who don’t like chocolate. Baffling.

I was itching for some this summer but thought it wasn’t the right time for lasagna or stuffed shells etc. I could eat it plain, by the spoonful, but that’s not a meal. My next thought was topping a pizza.

Ingredients:

1 chicken breast, marinated & grilled
1 cup ricotta
1 cup shredded mozzarella
½ red pepper, sliced
1/3 cup pesto

Directions:

Spread half of the pesto onto the crust, then top with shredded mozzarella, peppers, sliced chicken, and dollops of ricotta.

Drizzle the remaining pesto on top. Throw on any leftover shredded cheese.
Bake the topped pizza for another 10-15 minutes at 400 degrees.

I adored this pizza. The creamy ricotta was a perfect pairing with some powerful pesto. These flavors definitely made this a special pizza. The chicken seems quite optional but I think it was integral to keeping the pizza fresh & not wintery. I also only used 1 chicken breast. They tend to be so big so with any other topping, one is plenty.

This was definitely a good pizza! I would have liked the crust to crisp a bit more but I really feared I’d burn the edges. I would recommend being mindful of the thickness. I could have spread it out then squished the edges back in to form the edge/barrier. It also might work better to make individual ones! Smaller ones could be pan fried if potatoes, eggs, and bacon isn’t too much for you to manage at the same time.

Restaurant Recreation: Big Mac Pizza

Order Yellow Xanax I was sad to miss out on the Mac Daddy pizza at the Pizza Rumble so I knew I’d have to recreate it ASAP at home! I can’t eat red meat so I couldn’t partake in the beef one so I made it Emily-friendly at home. It was such a winner and one I’ll totally make again!
3 Bite Rule: Big Mac Pizza

Ingredients:

Pizza dough
¾ pound ground turkey/chicken/pork
1 white onion, chopped
8 oz shredded yellow cheddar
2 tbs sesame seeds
3 tbs ketchup
2 tbs mayo
1 tsp relish
1 cup shredded lettuce

Directions:

Preheat oven to 425-degrees and precook pizza dough until starting to get puffed and the bottom is getting crisp (about 15 minutes).
While dough is cooking, brown the ground meat and add onion after about 7 minutes of cooking. Continue cooking until meat is cooked through and onions are translucent.
Remove crust when semi-cooked and top with cheese. Add the onion and meat mixture on top of cheese. Sprinkle with ½ the sesame seeds and return pizza to the oven for about 10 more minutes.

The rumble was a taste-off amongst 4 pizza places hosted by Parlor Sports. We paid for the tickets and then got to taste all 4 and vote for our favorite. There wasn’t any criteria but we heard from each pizza joint about what they were serving us.

Emma’s Pizza in Kendall Square gave us what the kitchen staff most often make when they themselves are hungry. It had a paper thin crust topped with, in their words, “crispy smoked bacon/scallions/gorgonzola/house roasted tomatoes/garlic olive oil/light mozzarella”. Wow, right? Well, I was underwhelmed. The toppings weren’t evenly distributed. I was thankful that the toppings were sparse given that gorgonzola isn’t my fav.

Eat at Jumbo’s cracked me up. I lived across the street for years and don’t remember eating their pizza. Mr. J thinks we didn’t love the pizza…who knows. Their pizza seems MIA from the menu but from what I remember, it was Jamaican Jerk chicken, roma tomatoes, bacon?, and banana peppers. This one was really good. It had the right amount of cheese and was so flavorful.

Easy Pie served us Mac Daddy pizza. I could have this one because there was beef on it, but what a great idea?! Everyone loved this one! It was ground beef, special sauce, onions, pickles, and shredded lettuce. Spoiler alert: I recreated this one at home. Quite Tasty!

They gave us a dessert one which was welcomed after our savory pizzas. It had hazlenuts, banana puree, roasted plantains, chocolate covered bacon. I don’t know what happened after chocolate covered bacon. It was amazing. Ms. L and I both thought it was going to have too much banana but we loved it.

Directions:

Precook pizza dough for 15 minutes at 400 degrees.
Cook ground meat until cooked through and add taco seasoning and a splash of water when the meat is mostly cooked.
Remove pizza crust from oven and spread the beans on it (instead of tomato sauce)

BBQ Chicken Pizza

I’ll never tire of pizza toppings. This is actually an oldie-but-goodie. It was the first meal I made for Mr. J. It was kind of a go-to meal since it was easy regardless of grill access. I can’t believe I haven’t blogged it for you before!

Ingredients:

Pizza dough
4 chicken tenders (or 2 breasts)
1 cup barbecue sauce
2 cups shredded mozzarella
½ red onion
2 green onions

Directions:

Pre-bake pizza crust at 400-degrees for 15 minutes or until the edges start getting crisp.

Brush chicken tenders with ½ the barbecue sauce and grill until cooked through.

Shred the cooked chicken with 2 forks.
Top the pizza crust with a light layer of barbecue sauce, then cheese, then red onions.

I forgot how much I love this pizza. The sweet and tangy sauce with melty cheese…ohh so good. It is really good for leftovers too. Don’t let the 2 kinds of onions be intimidating. They are not overpowering. Topping this with a drizzle of sauce really makes it an impressive dinner.

Cheeseburger Pizza

Sometimes when I have a good thing going I don’t know why I change it up. I have pizza dough I love (Portland Pie Co) that I get at the grocery store. It comes in regular, beer, and basil but I especially love the garlic.

I’m not sure why I haaaad to try making biscuit dough crust. It was terrible. It tasted OK but looked quite sad. It was crumbly and never molded together. I made Cheeseburger Pizza which was phenomenal despite the crust being not so great.

Ingredients:

Pizza dough
1/3 pound ground meat (I used ground pork)
1/3 cup tomato sauce
1 ½ cups shredded cheddar cheese (or cheddar and mozzarella mixed)
1 tomato, chopped
1 onion, chopped
pickles, chopped
lettuce
ketchup and mayo to drizzle

Directions:

Prepare pizza dough and prebake until crisp at 400 degrees.

Cook the ground pork until cooked through and drain. Return to the pan and add onions for a few minutes until softened.
Assemble the pizza by topping the dough with sauce, meat, onions, and cheese.

This was a really good pizza. I liked the flavors and it was a great use of some basic ingredients. I had the pork leftover and frozen from another dinner so it was also a great use of frozen meat. Frozen ground meat isn’t great as a burger but as taco meat, or pizza toppings the lack of freshness isn’t apparent.

I’ll make it again I’m sure. Pizza is such a regular weeknight dinner because the leftovers are so good too. I ate leftovers even though the “biscuit” crust wasn’t great. Here’s the biscuit recipe if you want to give it a go but I recommend sticking to regular dough.

Fontina and Prosciutto Pizza with Arugula

Ahhhhrugula! I think I’ve decided that if I were going to eat one food for the rest of my life it’d be pizza. I love all sorts of crazy toppings and I have learned a thing or two.

I was partially inspired by the last pretty authentic neopolitan pizza I’ve had lately (Antico Forno) when I dreamed this one up. I also was feeling a salad-y topped pizza for a change too. It’s nicely springy and would even be a good vehicle for any leftover Easter ham you have kicking around!

Ingredients:

pizza dough
1 tbs chopped garlic
3 tbs olive oil
2 cups shredded fontina
4-6 slices of prosciutto
3 cups arugula
drizzle of truffle oil
¼ cup with shaved Parmesan

Directions:

Pre-bake the crust for 15 minutes at 425 degrees.

Top with cheese and garlic/olive oil mixture brushed on crust. Return to the oven until melted (about 5 minutes)

It was good, and different. I liked the few quality ingredients. The prosciutto was salty and the fontina was googy and nutty. By not cooking the prosciutto, it kept it really soft and bite-able.

I actually didn’t top the whole thing since obviously it was going to be lunch the next day. It reheated well too!

Homemade Pizza Techniques

Here’s a short bite for ya on this holiday…

As you either know, or as you can tell, I’m pizza obsessed. I don’t always order it but I love it in all forms and I’ve messed around with it a lot. It is still a work in progress but as I was adjusting to my oven, you saw this pizza go wayyy too far in the oven. Here’s my latest, greatest, tip for crunchy crust at home.

Prebake the dough a bit!

I put the dough onto my hot pizza stone and baked it a bit (5 minutes or so) before I topped it and put it back in! That’s how it came out looking like this:

neopolitan_pizza_2_590_390 The crust didn’t crisp enough and the cheese was starting to basically disintegrate. Forget about the basil, that was toast…literally.

So, my latest greatest technique proved itself and I was psyched. It probably needed a minute less to not look like the fake-n-bake bimbo of the pizza world.

It might not be like the true neopolitan pizza of Naples, it is by far my latest success!
