Somebody at work brought salt bagels and honey rosemary cream cheese from Bagelsaurus for a breakfast party and I couldn’t get over this signature combo. I loved the woodsy but sweet cream cheese with a salty bagel. I knew I had to have it again before I’d get to Bagelsaurus, so I made some for a sandwich! I wanted pretzel rolls but ended up with some quality sourdough. I used the rest of the honey rosemary cream cheese for breakfasts and will totally make some again.

Lettuce in the middle is tricky to photograph so I ventured to this BTL. Do as you wish. Does it matter to you? Don’t worry- I still like you even if you don’t care the order. 🙂

Ingredients:

2-3 sprigs of fresh rosemary
2 teaspoons honey
~2-3 strips of bacon per sandwich, cut in halves

Slice the tomato & chop the greens, if needed.

I really loved this combo. I almost added avocado but it wasn’t quite ready. Add a fried egg and serve on a bagel for a really magical experience! I liked the cream cheese here instead of any cheese on the BLT. How amazing would it be on a pretzel roll or salt bagel? That’ll be next for me!

The cream cheese was really easy and could easily be mixed up in advance. It would be a really fun to serve with local bagels for house guests or to bring as a hostess gift! I only made a bit but you could make a little or a ton!

This delicious dish skates the line of garlic bread or maybe even a flatbread. This is so good and so easy. Share with others – everyone will love this. We ate it for dinner with some salad but I can definitely see it being a fun app or side.

The garlic cooks in the bacon drippings and butter meaning the full flavor of the bacony-tidbits goes onto this. It mean the crunchy brown bits from the pan soak into the bread.

Bacon, Cheddar & Ranch Garlic Bread

Ingredients:

~6 strips of bacon
1 loaf Italian bread or baguette
4 tablespoons butter
2 cloves garlic
2 tablespoons dried Ranch seasoning
1 1/2 cups shredded cheddar cheese
1 teaspoon chopped chives or parsley (optional)

Directions:

Preheat the oven to 375-degrees. Slice the bread and pop it into the oven while the oven preheats- just to start to warm through.
Add the butter and garlic to the pan with the bacon drippings. Cook over medium-low heat for about 3 minutes.
Spoon over the bread and then top with ranch seasoning, cheese, and bacon.

Bake for 10 minutes, until cheese melts and the bread gets golden around the edge. Optional: Sprinkle chives over the top.

2 slices of bacon, sliced in half
2 teaspoons maple syrup
2 slices sourdough or oatmeal bread
2 slices of American cheese
~1/2 cup shredded cheddar cheese

I make my own or I’ve heard it is at every grocery store now. At first I gave the little one avocado instead of an egg but he ate so much of my egg that we made him his own and he ate it all. Eggs can be hit or miss so I love whenever he eats it up!

Bacon & Cheddar Risotto with Everything Bagel Seasoning & an Egg (for 3-4)

Ingredients:

3/4 cups water (or white wine)
6-8 strips of bacon
1 cup white cheddar, shredded

I added tons more Everything Bagel Seasoning and after I warmed the risotto (not the egg – ewww – weird) I dumped some grape tomatoes with a drizzle of Italian dressing on top of my leftovers too. The cool and acidic tomatoes with the warm decadent risotto were fantastic.

Risotto is the best, though tricky for a crowd. It seems like the perfect meal for 1 if you halve it!  Or you could turn leftover rice into this to revamp some leftovers! I’ve made the same general idea swapping arborio rice for other grains, like as a farro bowl.

1 tomato, chopped
2 cups fresh spinach, chopped
2 tablespoons cornmeal/wheat germ
2 cups shredded mozzarella

Layer on half the cheese, half the bacon, half the tomato, half the spinach. Repeat. Pull the other half of the dough over the filling and pinch to close. Cut a few slits in the top to vent.
Bake for about 30 minutes, until golden brown.

2 sprigs thyme
1/4 cup shredded swiss

In a large pan, fry the bacon. Then drain onto paper towel.
Assemble on top of one slice of bread with cheese, bacon, thyme, other cheese, and close with the bread.

More #grilledcheeseplease continues! I was inspired by a pear-picking-party back in October. My bestie made a grilled cheese with tellagio cheese, pancetta, pear, and truffle butter. Ohh yeah. I made a variation with what happened I had around: pancetta; 2 cheeses; and truffle oil into butter.

Pancetta & Cheddar Grilled Cheese in Truffle Butter

Ingredients:

2 slices of French bread
3 tablespoons diced pancetta
1-2 slices white cheddar
1-2 slices gouda (not smoked gouda)
2 tablespoons butter
1 teaspoon truffle oil

Directions:

Pan fry the diced pancetta until crisp, then drain on paper towel.
Slice the french bread into thick slices.
Assemble the grilled cheese with cheese, pancetta, and more cheese.

Whip the butter and truffle oil together and spread half onto the outside, and lay into a medium pan or a griddle on medium heat. Cook for 4 minutes.
Spread the rest of the truffle oil onto the top half.
Flip and cook for another 3-4 minutes.

This grilled cheese is a testament to a few ingredients packing tons of flavor. This isn’t as dainty a grilled cheese as it appears! I’ll be back after Thanksgiving with the opposite of turkey…in case you need that.

Farro Breakfast Bowl with Egg, Bacon & Everything Bagel Seasoning

My grocery store’s grain offerings are scant and uber expensive so amazon prime came to the rescue! I love texture and nuttiness of different grains and had leftover farro from a lunch I packed. The beauty of this breakfast bowl is the base could be any leftover grain.

Here’s by bowl formula:

grain: farro; cracked wheat; brown rice; lentils; bulgar, wheat berries, quinoa, cauliflower rice
greens: baby spinach; kale; chard
meat: bacon; sausage; ham
topper: fried egg; soft boiled egg; avocado; sauteed mushrooms; cheese

So much of this can be prepped in advance, which is perfect for breakfast, or dinner! I used leftover farro and made some everything bagel seasoning in advance. My spice drawer does not need one more jarred spice so I make my own seasoning, but I’ve seen this for sale.

Farro Breakfast Bowl with Egg, Bacon & Everything Bagel Seasoning

Ingredients:

~1 cup prepared farro (or other grain)
1 teaspoon minced onion
1/2 teaspoon poppy seeds
1/2 teaspoon sesame seeds
dash kosher salt & cracked pepper
3 strips of bacon
2 cups fresh baby spinach
1 egg

Directions:

Cook the grain or use leftovers.
Add minced onion, poppy seeds, sesame seeds, salt & pepper to a small dry pan to medium heat for 2-5 minutes. Then remove from the pan immediately (that minced onion goes from toasted to burnt quickly!)
Then pan fry the bacon until crisp and remove to drain on paper towel.
Drain the bacon grease from the pan and saute the greens for 3-5 minutes with a tiny bit remaining in the pan.

Assemble the bowl with the farro, greens, half of the bacon, and a teaspoon of the everything bagel seasoning all mixed together.
Fry or soft boil the egg and add on top, with a last sprinkle of everything bagel seasoning and remaining bacon.

I looooved this. It has some of my thinking of a bacon, egg and seasoning breakfast grain bowl, but was sooo much better because of the greens and the runny yolk. You are winning your day if you eat something green before 9am.

I’ll totally want to get a sausage, egg, and cheese with everything bagel seasoning variation going because that’s my go-to bfast sandwich choice.
